Step 1
Thinly slice potatoes using a mandoline. You want the potatoes as thin as you can get them.
Step 2
Soak the potatoes in cold water for 30 minutes changing out the water once.
Step 3
Pat the potatoes dry with a paper towel.
Step 4
Line a microwave safe plate with parchment paper.
Step 5
Place potato slices in a single layer on top of the parchment paper and spray with cooking spray.
Step 6
Heat on high heat in the microwave for 6 minutes or until slightly browned in the center and crisp. Different microwaves may require slightly different cooking times so start checking at 5 minutes.
Step 7
Combine the remaining ingredients in a small bowl and whisk together.
Step 8
Place microwaved chips in a ziploc or paper bag and sprinkle with the BBQ seasoning mix. Shake to coat.
Step 9
Serve and enjoy!
