Step 1
Shave the fennel using a mandoline. Add approximately 2 heaping cups to a mixing bowl. If there are any fennel fronds remaining add those to the bowl also.
Step 2
Roughly chop the parsley and it to the mixing bowl, and set aside.
Step 3
In a small bowl whisk together the olive oil, vinegar, salt and pepper until the salt has dissolved.
Step 4
Then pour the vinaigrette over the fennel and herbs. Toss until well-combined. Eat the slaw as is or spoon it over veggie burgers and tacos.
