Step 1
Preheat oven to 350 degrees, and prepare a baking sheet with a metal cooling rack on top.
Step 2
Spray cooling rack with cooking spray.
Step 3
Line bottom of baking sheet with foil or parchment paper for easy cleanup.
Step 4
Cut chicken breasts into thin strips, about 2-3" long and 1" thick.
Step 5
In a small bowl, toss chicken with salt, pepper, garlic powder, sugar (optional, see notes), and chili powder.
Step 6
Cut bacon strips in half, and wrap around seasoned chicken strips.
Step 7
Arrange bacon chicken bites on wire rack and place in oven.
Step 8
Bake 15 minutes and flip to other side.
Step 9
Continue to bake until bacon is crispy and chicken has reached 175 degrees internal temperature.
Step 10
If desired, add bacon chicken bites into pan and crisp bacon even more just before serving.
Step 11
Serve hot with your favorite dipping sauce, and enjoy!
