15 Minute Chickpea Scramble

onion

diced bell pepper

yeast

chili powder

turmeric

1/8th teaspoon smoked paprika

tomato, chopped

Heat the oil in a skillet over medium heat. Add in the onion and bell pepper. Sauté until tender, about 3-5 minutes.

Add in the nutritional yeast, chili powder, turmeric, paprika, and salt. Sauté for another minute until the spices are fragrant.

Add the chickpeas, tomato and broth into the skillet. Bring the mixture up to a simmer and cook, until the chickpeas are creamy, about 3-5 minutes. Enjoy!

Open the can of garbanzo beans and reserve 2 Tbsp. aquafaba.* Then rinse and drain garbanzo beans.

Add all ingredients to a high-speed blender or food processor. (Start with 1 Tbsp. aquafaba and add more as desired for a thinner hummus.) Blend until creamy, about 20-30 seconds. Taste and adjust flavors if desired. Add a pinch more salt if the flavors don&#39;t quite pop.

Store leftovers in a sealed container in the refrigerator.

Add the softened cream cheese, green onion, Italian seasonings, garlic powder, onion powder, and pepper in a medium-sized mixing bowl.

Using an electric hand mixer, mix until smooth and combined.

Spread 2 teaspoons of the cream cheese mixture on the bottom half of a slice of salami.

Roll up the salami and secure it with a toothpick.

Repeat the steps until all of the salami rolls are formed. Enjoy!

Preheat the air fryer to 350 F for 3 minutes.

Add a spoonful of the butter mixture into the peaches.

Air fry for an additional 5-6 mins, until the peaches are caramelized on top.

Excellent. I didn't have cilantro, so I just used spinach, and tweaked the ingredients at the end. I toasted the walnuts. I've made pesto with chicken stock before, but I think the lemon juice is better.

These things WORK. I’ve been doing three a day for like a week now. I don’t strain mine so they’re thicker, even though I dilute the whole batch with 2 cups instead of 1/2 a cup of water. And then I mix each shot individually with even more water when I take them. But I’ll tell you what, I don’t think I’ll ever stop taking these! First of all, taking one of these feels like doing a line of cocaine. Lol. It’s like an instant hit of alertness. And secondly, of course, the myriad of health benefits associated with turmeric and ginger intake. Inflammation, cancer, Alzheimer’s, muscle soreness, PMS, menstrual pain, allergies, digestion, anxiety. I mean the list goes on and on. Thank you for sharing this recipe! I just made this but did not strain it. I was just thinking the fiber is an added benefit if I don’t strain. It was like a thick smoothie texture out of my bullet. I did peel the turmeric and ginger because I was going to be consuming it all. I think it would also be good topped with seltzer as a refreshing drink/mocktail. .

Lunch Box: 10-Minute Smoky Harissa Creamy Butter Beans

Cherry Tomatoes

Garlic Clove

Add the cherry tomatoes to a pan with a drizzle of olive oil and a pinch of salt. Set it over a medium-high heat and cook for about 5 mins until starting to soften and burst open. Add a splash of water if they’re catching on the bottom of the pan. 

Mince the garlic and add it to the tomatoes in the pan along with the tomato paste, ¾ of the harissa and the smoked paprika.

Add the tinned butterbeans and ½ their liquid to the pan then stir in the vegan cream cheese. Bring the mixture to a boil then turn down the heat and simmer for 5-10 mins until the beans have softened and the broth has thickened (it should be creamy).

Meanwhile, toast the bread and finely chop the herbs.

Ladle the beans into bowls or meal-prep boxes. Drizzle over the tahini and some remaining harissa. Finish with the chopped herbs and flaked almonds. It will keep in the fridge for 3 days.

With all the flavours, I was looking forward to this but it just tasted meh to me. Maybe because it’s not cooked for very long, the flavours just don’t permeate the dish.

Mediterranean black bean salad is light, refreshing and comes together in 10 minutes. Simple, flavorful and nutritious. 

Mediterranean Black Bean Salad

arugula

14 oz can black beans,

artichoke hearts, chopped (in oil

½ cup tomatoes, chopped

⅓ cup olives, chopped (*see notes)

red peppers, chopped

Gather and prepare all the ingredients. Chop the herbs, green onions, artichoke, roasted red peppers and tomatoes. Chop the olive if you aren’t using tapenade.

Add all the ingredients to a large salad bowl, add salt, pepper, oil, and balsamic. Top with feta and serve.
