Agua de Lim&oacute;n&nbsp;con Chia

limes, juiced (0.90)

tbsp sweetener (cane sugar, piloncillo, agave, etc.) (0.02)

chia seeds (0.13)

First, add the water to a large mason jar or pitcher. Squeeze in the lime juice, and add sweetener of choice (cane sugar, agave, piloncillo, etc).

While stirring vigorously, add in the chia seeds slowly to avoid clumping. Taste and add more sweetener or chia seeds to your preferences. Stir constantly for another minute or so, then transfer the jar to your fridge for a few hours.

Serve over ice with more lime wheels or mint garnishes. Happy drinking!

I just discovered agua fresca and made my first batch last weekend. I made a kitbashed version with mango, cucumber, strawberries, and chia seeds. So VERY refreshing!
This is a nice looking recipe.
I think, however, I'll take a page from the cocktail world and substitute rich simple syrup instead of sugar. Rich simple syrup is affordable and simple to make.
A question: Can Lemon juice be subbed in for the lime juice?

Agua de Lim&oacute;n&nbsp;con Chia (Lime & Chia Fresca)

This bright and tangy agua de limón (lime agua fresca) is one of Mexico&#39;s most beloveddrinks. It is simple, hydrating, and bursting with fresh citrus flavor made with a fewingredients (limes, sugar, water, and ice).

First, roll the limes on the counter to soften them, then cut them in half and juice them until you have about ½ cup of fresh lime juice.

If desired, remove seeds and pulp with a colander, or keep the pulp for texture.

In a large pitcher, a 62 to 72-ounce pitcher works perfectly combine the lime juice with the sugar. Stir well until the sugar fully dissolves. Take your time here so it’s nice and smooth.

Pour in the 4 cups of water, add the ice, and give everything a good stir. Taste and adjust it before serving. Add more lime juice for extra tartness, more sugar for sweetness, or a splash more water if it’s too strong. Refrigerate to keep it cold.

Serve immediately over more ice in tall glasses.
