This Rosemary &amp; Garlic Whole30 Roast Beef is a fancy but easy holiday main dish, and the leftovers are just as amazing as when it&#x27;s fresh out of the oven!

Rosemary & Garlic Whole30 Roast Beef (Paleo, Keto, AIP)

lb beef top round roast* (or eye of round roast or bottom round roast)

tbsp extra virgin olive oil

garlic

rosemary

tsp sea salt

Remove the beef from the fridge 45 minutes before cooking to let it come to a a room temperature. This will ensure even cooking.

Preheat the oven to 375 degrees F.

Use a twine to tie the meat at 2 inch intervals.

Combine the olive oil and the rest of the ingredients in a bowl so a thick paste forms, and coat the meat with this mixture.

Place on a roasting rack over a pan and roast in the oven for about 1 hour, or until a thermometer inserted into the center reads 130 degrees for medium rare.

Remove from the oven, tent with a foil, and let it rest for 15-20 minutes. The temperature will rise about 5 degrees.

Slice thinly and enjoy!

AIP Frosting (paleo, vegan, gluten free)

cup coconut butter, melted

TBSP honey (or maple syrup

2-4 TBSP full fat coconut milk, warmed

cup tapioca starch

1/4 cup maple syrup

additive-free coconut cream,

In a small bowl, combine melted coconut butter, honey or maple syrup, vanilla extract and sea salt. Add warm coconut milk to desired consistency. Depending on the recipe, feel free to add a dash of your favorite spices to the frosting as well. Cinnamon is a great addition!

Place sweet potato on a parchment-lined baking sheet and bake until tender ~ 45 mins.*

Remove flesh from the skins and place sweet potato into food processor with 1/4 cup of the carob powder, maple syrup and sea salt. Add remaining carob powder by the TBSP until you achieve your desired consistency.

In a stand mixer or food processor, combine palm shortening with tapioca starch, maple syrup, vanilla extract and pinch of sea salt. Whisk or pulse until combined.**

Chill can of coconut cream in the fridge overnight.&nbsp;

Before whipping the cream, chill the bowl of a stand mixer or mixing bowl (if using handheld mixer) for 15-30 minutes in the fridge.&nbsp;

Open can of chilled coconut cream and scrape out the hardened/ thickened cream into your chilled mixing bowl. Discard any remaining liquid or reserve for another use. &nbsp;

To the bowl, add powdered maple sugar, vanilla extract and sea salt.

Mix on medium speed for 30-45 seconds until soft peaks form. Do not over mix/whip or the coconut cream can separate.&nbsp;
