An easy and delicious dinner, made with roast, potatoes and carrots, Perfect sliced and served, or sliced thin for roast beef sandwiches.

Prepare the roast, by lightly coating it with olive oil, and sprinkling the salt and pepper to coat both sides.

Preheat the oven to 400 degrees Fahrenheit.

Place the roast in the  basket, and cook at 400 degrees. Cook for 25-28 minutes.

While the roast is cooking, toss the carrots and potatoes in olive oil, salt and pepper. Let sit until the top of the roast is done cooking.

Once the roast has cooked the first 25-28 minutes, turn the roast over, baste with the beef broth, and add the prepared the carrots and potatoes. Return basket to air fryer and cook at 400 degrees for an additional 18-20 minutes.

Potatoes and carrots should be soft, and the internal temperature of the roast is 145 degrees. Allow the roast to rest for 5-10 minutes before serving.

This easy recipe makes an entree that&#x27;s both weeknight-friendly and dinner party-worthy. Crispy slices of breaded eggplant are topped with your favorite marinara and a pinch of non-dairy cheese. It comes together quickly in the air fryer. And the leftovers are terrific too! For a gluten-free option, use gluten free panko breadcrumbs.One medium-sized eggplant makes about 16 slices of eggplant parmesan.

mayonnaise ((I use Vegenaise))

Start by making a breading work station with two plates. Put the vegan mayonnaise on one plate. On the other plate, combine panko breadcrumbs, dried oregano, dried basil, granulated onion, grated vegan parmesan, a pinch of salt, and dash of pepper.

Coat each eggplant slice with mayo. It should be the thinnest of coatings. You don&#x27;t want any mayonnaise dollops. It&#x27;s just a sheer coating, so that the breadcrumb mixture can stick to the slices.

Then dip each slice into the breadcrumb mixture. Make sure to coat it with breadcrumbs on every side.

Put an even layer of slices into the air fryer basket. For best browning, don&#x27;t overcrowd the basket with slices on top of each other. You want room for air to flow all around each slice. Depending on the basket size &amp; eggplant slice size, you&#x27;ll probably be able to fit 4 to 6 slices. Spritz the top of the eggplant slices with oil spray.

Put the basket into the air fryer. Set it to 400 degrees for 12 minutes. Stop halfway through to flip the slices (or when they are nice &amp; brown on top). Spritz the slices with oil spray again. Then continue air frying for four more minutes, or when the other side of the slices are nutty brown. At 10 minutes, add a spoonful of marinara sauce and a pinch of vegan mozzarella cheese to each slice. Then cook for the remaining 2 minutes.  Remove the eggplant slices from the air fryer.

Continue air frying the eggplant in batches until all of the eggplant has been air fried. Keep in mind that the air fryer cooks faster when it&#x27;s hot. So the subsequent batches may need to be flipped earlier or cooked for a slightly shorter time. Keep an eye on them for burning, and trust your judgement when it&#x27;s looking brown enough.

Easy Air Fryer Chicken Tenderloins

Cherry 7-Up ((3/4 cup))

soy sauce (we use low-sodium)

vegetable oil

chicken tenderloins

In a gallon-sized ziplock, combine the Cherry 7-Up, soy sauce, vegetable oil, and chicken. Marinate for 4 to 8 hours, turning midway through (if possible).

Select Air Fry and preheat the air fryer to 375°F. When hot, place the chicken tenderloins in a single layer on the Crisper Plate on the bottom of the air fryer basket. (Do not crowd the chicken; if you’re making the full 2 pounds, you’ll need to cook the chicken in batches.)

Air fry for 6 to 8 minutes, depending on the thickness of the chicken tenderloins you’re using. The chicken is done when the outside is caramelized around the edges and your instant read thermometer reaches 165°F. We recommend checking at 6 minutes and then going another minute or two as needed.

Remove from the air fryer basket and serve immediately.

These pizza burgers are a family favorite! Mindlessly easy, loved by my kids, and just fun to make. Great for meal prep, too!

Pizza Burgers

olive oil oil

lb. ground turkey, chicken, sausage

onion powder

garlic powder

Italian seasoning

marinara sauce (I use Rao’s)

pepperoncini (optional)

6-8 English muffin halves

salted butter, melted

garlic, garlic

Mozzarella cheese

Parmesan

Prepare the filling

Heat oil in a large skillet. Brown the meat. Add garlic powder, onion powder, Italian seasoning, and salt. Add the tomato sauce; stir to combine. Remove from heat and stir in the cheese.

Prepare the English Muffins

Mix the melted butter and garlic. Place English muffins face-up on a sheet pan. Brush with the garlic butter mixture.

Arrange the Pizza Burgers

Put a few spoonfuls of the meat mixture on top of the English muffins. Cover each one with shredded Mozzarella, then a pinch of grated Parmesan.

For cooking immediately

Place on a baking sheet and bake at 350 for 5-7 minutes, and then broil as needed to get the cheese melted and browned. You can also air fry at 350 for 4-5 minutes, until golden brown and slightly crisped.

For freezing

Place individual pizza burgers on a plate or small baking sheet lined with parchment and tuck it into the freezer. When they are solid, you can put them into a bag or container together. To reheat, I prefer to air fry at 350 for 6-8 minutes to get them warmed and crispy.

So easy &amp; delish! I used ground turkey…added sliced green olives to mine &amp; pepperoni to my son’s. Love that I could make a batch to freeze for him to take to college!

These are so flippin good. Very satisfying. We used spicy Italian sausage and added mushrooms.  Served with broccolini.

These are ridiculously easy and so delicious! My whole family loved them, and I can totally  see myself cranking out a double batch of these to take to a new mom or a family in need - because they’re delicious AND they freeze well! Definitely recommend!

These were delicious and so easy! The only thing I did differently was toasting the English muffins a bit before adding the meat and toppings. Then I gave it a little bake and broil. Yummy!

These are SO good. My almost 4 year old said he was "obsessed."

I made these last night (used 1 lb Italian seasoned ground turkey), and they were amazing. however I needed to use 10 English muffin halves (5 whole muffins) to use up the meat topping mixture. also, I questioned using an entire stick of butter for even 10 English muffin halves and found a half stick (1/4 cup) to work perfectly. especially melted and brushed on, it was easy to distribute and cover each half

English Muffin Pizza’s!!!!  My grandmother always made these (New Yorker) and I made them for my daughters.  We toast the muffins prior to topping and baking.  Gives them a little “crunch”.  I’m a pizza snob (due to having lived in Italy) but these are always a go to.  My daughters loved making their own and easy for little hands.
