This simple and satisfying, melt in your mouth almond cookies recipe you&#x27;ll quite likely find irresistible!

Almond Cookies

all-purpose flour (120 grams)

almond flour (60 grams)

cornstarch

tsp sea salt

tsp baking powder

unsalted butter (unsalted butter,

almond extract

confectioners' sugar (+3tbsp)

almonds

sugar

water

Sift the flour, corn starch, salt, baking powder, and almond flour into a bowl then whisk together and set aside.

In a stand mixer fitted with a paddle attachment, beat butter and almond extract until creamed.

Add confectioners sugar; mix until combined.

Scrape bowl down and add flour mixture while beating on low. Scrape bowl once more and mix until combined.

Wrap in plastic and chill for 20-30 minutes.

Preheat to 400 degrees.

Use an cookie scoop to portion out 2 tablespoon sized dollops. Roll in your clean hands, place on parchment or silicon lined baking sheet then press down slightly and top with two almond slivers.

Bake for about 8 minutes, the cookies will have just begun to brown at the edge when ready.

Allow to cool completely on the baking sheet.

Add about 2/3 cup of powdered sugar to a bowl then drizzle in 1 tbsp water and one and a half teaspoons of almond extract. whisk together and add a few drops of water if needed for a thinner consistency.

Drizzle over the cooled cookies and enjoy!

Preheat oven to 400 degrees. In a bowl, with a mixer cream the butter, sugar, and almond extract. In a separate bowl mix the flour, baking powder, and salt. Add the flour mixture 2 Tablespoons at a time to the butter mixture until completely combined (important!!)

Roll into small 1-inch balls and flatten slightly. They should look like a thick checker. Cook for 7 minutes (they will not look done) at 400 degrees on a parchment lined pan. Cool cookies until they are just warm and place sliced almonds on top of each cookie.

For the glaze: Combine powdered sugar, almond extract, and water. Drizzle a spoonful of glaze on top of the almonds and cookie.

My Almond Cookies are crisp on the edges and soft and chewy in the center. They are loaded with almond flavor and definitely remind me of sugar cookies. 

Soft and Chewy Almond Cookies

cup (226 grams) unsalted butter,

cups (380 grams) granulated sugar

eggs

(5 milliliters) almond extract

cups (420 grams) all-purpose flour

½ teaspoon (2 grams) baking soda

½ teaspoon (2 grams) cream of tartar

¼ teaspoon (1.2 grams) salt (optional-see notes)

Sliced Almonds

Combine the butter and sugar and beat on medium speed until well creamed together.

Add the eggs and almond extract. Mix into butter and sugar until the eggs are well beaten.

In a separate bowl, combine flour, baking soda and cream of tartar. Slowly add into batter and beat on medium low speed until well combined and dough forms.

Use a large cookie scoop (3 tbsp) and scoop cookie dough onto a parchment paper lined baking sheet. Place 5-6 sliced almonds on top of the cookies. Refrigerate the dough for a minimum of 30 minutes, but the longer the better.

Preheat the oven to 350° F. Place about 2 inches apart and bake at 350° F for 11-13 minutes. Allow cookie to cool on the baking sheet for several minutes and then transfer to a wire rack to cool completely

Just made these with my daughter. Easy, straightforward recipe. Simple prep and baking. Delicious cookies.

I added about 1/2 a cup of almond paste I had in the fridge and baked for 13 mins. They came out pretty darn good and the almond flavor shone through, but I was thinking they could have baked at a higher temp so the tops got a little golden and edges crunchier.  It was tough to try to figure out when they were done because the tops didn't brown.
