Preheat your oven to 180 Celsius / 350 Fahrenheit

Beat the 2 eggs and the 2 additional egg whites. (You can reserve the 2 leftover yolks for mayonnaise)

In a small microwave-safe bowl, heat the coconut oil in 15-second bursts, just until it melts. Set aside to cool to room temperature.

Place a rack in the center of your oven and preheat the oven to 350 degrees F. Coat a 9x5-inch baking pan with nonstick spray. Line the pan with parchment paper so that the paper overhangs both sides, then lightly coat with spray again.

In a large mixing bowl, whisk together the almond flour, flaxseed meal, baking soda, cinnamon (if using), and salt. In a separate bowl, whisk together the eggs, egg white, honey, apple cider vinegar, and cooled coconut oil until smooth. And the wet ingredients to the dry ingredients and, with a whisk or rubber spatula, stir until well combined. The batter will be thick and wet, like a muffin batter. Transfer to the prepared loaf pan and smooth the top.

Bake until the top is toasty golden brown and a toothpick inserted in the center of the loaf comes out clean, about 35 to 40 minutes. Place the pan on a cooling rack and let cool in the pan for 10 minutes. Transfer from the pan to the rack (use the parchment overhang) and let cool completely. Slice and serve.

Tried it today and it turned out great!  I also made keto sausage soup with onions, celery, kale, squash, chicken broth and heavy cream for the main dish.  At meal time I toasted the bread (twice) until it was crunchy, sliced it into french-fry-sized pieces, then dipped the pieces in olive oil, grated cheese and garlic & herb sprinkles.  Hit the spot.

I tried this recipe for the first time tonight. 
I made a couple changes. I added a little extra baking powder, no cream of tartar, and I 
added a 1/2 cup of shredded cheddar cheese. 
Yes, it is a little “eggy” tasting But the texture is 
really good.

This bread is not yummy with just butter... it’s like the bread is flavorless so you have to put something on it

Easy Keto Almond Flour Bread

This grain-free blueberry almond flour bread has the perfect touch of lemon. It&#039;s naturally sweetened and drizzled with a powdered coconut sugar glaze. This bread is a must.

Almond Flour Bread with Blueberry and Lemon

Preheat oven to 350.

Lightly grease an 8x4 loaf pan. Then line the bottom and short sides of pan with parchment paper (this will make it easy to remove the bread when done).

In a large mixing bowl, combine the almond flour, coconut flour, flaxseed, baking soda, and salt. Make a well in the center of the dry ingredients and add in the remaining ingredients, with the exception of the blueberries.

After the dry and wet ingredients are mixed, fold in the blueberries.

Pour the batter into the prepared loaf pan. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean. Tent the bread with some tin foil about 35 minutes into baking to prevent top from burning.

Remove bread from oven and allow to cool for about 15-20 minutes. Using the parchment paper, remove bread from pan. Place on a cooling rack or plate. Allow to fully cool before adding the glaze and slicing.

Instructions for the Bread

Add the powdered coconut sugar to a small bowl. Start by adding 1 tsp. water (or lemon juice) and whisk well. Most likely it will be too thick, so continue to slowly add water/lemon juice while whisking. You want the glaze to be thin enough to drizzle, but not too thin that it will soak into the bread.

Drizzle finished glaze on top of bread before slicing.

Slice and enjoy!

Add Eggs

Add the beaten eggs and whisk well until you get a homogeneous yellow mixture.

Prepare Batter

Add the unsweetened shredded coconut, almond flour, salt and baking powder, whisking well until you get a liquid batter (don&#8217;t worry if the batter seems too liquid, it&#8217;s meant to be that way).

Transfer Batter to Pan and Bake

Pour batter into the prepared loaf pan, and bake for 40 to 45 minutes, until golden brown on top and a toothpick inserted in the middle comes out clean.

Let Cool

Allow the almond flour bread to cool for at least 10 to 15 minutes in the pan, before running a butter knife or a spatula around the edges and removing the loaf from the pan.

You know how I have always loved eating bread whether on its own or with a rich spread of different variety of bread spreads.

This low-carb almond quick bread is just perfect for me for a change from the normal yeasted bread where I have to provide time for its rising.  With almond in flavour and honey to sweeten, makes this a wonderful treat to eat this bread on its own.  I love it and am planning to do another loaf this week.

Due to health issues, my  niece is GF with dairy restrictions so I'm always searching for ways to bake and cook recipes that the entire family will enjoy without making her feel "different" all the time. Family style IS family style with recipes like this one. Thank you so sharing. I forgot to get the coconut so toyed with substitutions I had in my pantry...cassava? tapioca? oat? I ended up using 2/3 additional almond flour. I tasted it 15 minutes out of the oven and thought it was too much oil, HOWEVER by dinner time it was magically wonderful! Cinnamon Almond Flour Bread Recipe

Tablespoons (15-16 grams) coconut flour, whisked or sifted

flaxseed

eggs and 1 egg white, room temp and whisked

Preheat oven to 350 degrees F. Grease an 8×4-inch bread pan, and place a piece of parchment paper on the bottom.

In a large mixing bowl, whisk together the almond flour, coconut flour, salt, baking soda, and ground flaxseed. Add ½ Tablespoon cinnamon, and whisk again, removing any clumps in the flour mixture.

In a medium-sized mixing bowl, whisk together the eggs and egg white. Stir in the apple cider vinegar, maple syrup, and 2 Tablespoons coconut oil.

Working in batches, gently mix the wet ingredients into the dry ingredients. Pour batter into the greased loaf pan.

Bake for 30-35 minutes or until a toothpick inserted into the center of the loaf comes out clean. If the center is not set, cover with aluminum foil, rotate pan, and bake for an additional 5-10 minutes.

Remove the bread from the oven and set aside while preparing the cinnamon glaze.

Whisk together the other 1 Tablespoon of melted butter (or oil) with 1/2 Tablespoon of cinnamon. Brush on top of the bread while warm.

Store in an airtight container in the fridge for up to 1 week.

Was looking for a low-carb bread to make in small loaves and include with jams in a Christmas gift basket. This was PERFECT. Moist with comforting spiciness. I did add a little Splenda to both the bread and the topping - forgive me, but I do like things a bit sweeter than what the small amount of maple syrup could provide. Will definitely make again!

This came out perfect and everyone loved it. I had to reduce the backing time a bit because I have a convection oven and I added chopped dates, cranberries and pecans. Thanks for a great recipe.

Thank you for the recipe! I used 1/2 coconut flour and 1/2 almond since I didn't have enough almond flour-- it is VERY dry. Is that why?? Can coconut flour not be substituted for almond?

Also I omitted the honey since I am not eating sugar right now. It smells amazing but a little hard to eat. Maybe I shouldn't have omitted the honey and/or substituted the flours. Thoughts!?! I'm mad because it smells amazing!

This was a delicious recipe to try for my first time making bread! I didn’t have coconut flour so I just added a little bit more almond flour and it worked great! I also used vegan butter and honey which didn’t alter the taste at all. I also added a swirl of cinnamon in the middle, which my family thought was cute. I would rate this a 10/10, and would definitely make it again.

It came out GREAT!  I made it with the subtractions I mentioned earlier, but with the addition of Everything Bagel seasoning, plus some minced chives and lemon zest.  It was really delicious and satisfying!  I just toasted a slice and am now eating it with a schmear of chive cream cheese, some ribbons of smoked salmon and topped off with some capers and shaved red onion!  Thanks for a great recipe!!

I made this bread for my 16 month old son and he loves it! I spread either almond butter or peanut butter on it for him and he gobbles it up. We don’t feed him gluten and so this was a great way to use up all the almond flour I have and didn’t know what to do with. I love that the bread is savory with a hint of sweetness. I froze half the loaf for later use since it’s for my toddler and he still eats small portions. I did use a bigger loaf pan and it still turned out great. I also used less cinnamon in mine and olive oil instead of butter or coconut oil as that’s all I had on hand. It was great! This will be a future staple for us. Thank you.

I just made this recipe and it is AMAZING! I switched out gf flour for the coconut flour, because I didn’t have any and accidentally added a little of the melted butter to the batter before I realized it was for the topping, BUT it was still delicious!

Delicious! I deviated a lot from the recipe but it turned out great! I only had 2 eggs and no chia or flax...so I just used all almond flour, a 2 eggs, a cup of cottage cheese, vanilla instead of apple cider vinegar, more cinnamon, and topped with a little brown sugar and sliced almonds. It rose enough to be bread (hah) and is a good consistency, nice and moist! Thought I'd share for those that don't have all the ingredients but want to give it a-go.
