Apple Cinnamon Quick Bread

(67 grams) packed light or dark brown sugar

nutmeg

teaspoon baking powder

baking soda

teaspoon salt

(115 grams; 1 stick) unsalted butter, softened to room temperature

cup (150 grams) granulated sugar

2 large eggs,

cup (80 grams) unsweetened applesauce,

(120 milliliters) whole milk,

Adjust the oven rack to the lower third position (just below center) and preheat the oven to 350°F (177°C). Spray a 9×5 inch loaf pan with nonstick spray.

Apples

Stir the apples, brown sugar, and cinnamon together. Set aside.

Batter

Whisk the flour, cinnamon, nutmeg, baking powder, baking soda, and salt together in a large bowl. Set aside. Using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the butter and granulated sugar together on high speed until smooth and creamy, about 2 minutes. Add the eggs and then beat on medium speed until combined. Scrape down the sides and up the bottom of the bowl as needed. Beat in the applesauce and vanilla extract on medium speed until combined. Mixture will look chunky and curdled– this is normal and expected. Pour the dry ingredients into the wet ingredients, turn the mixer on low speed and with the mixer running, slowly pour in the milk. Beat just until combined and do not overmix. You may need to whisk it all by hand to make sure there are no lumps at the bottom of the bowl. The batter will be sticky and slightly thick. You’ll have about 3 cups of batter.

Pour and spread about 1/2 of the batter into the bottom of the prepared loaf pan. Spoon apples and any cinnamon/brown sugar juices leftover in the bowl evenly on top. Pour and spread remaining batter on top, making sure to scrape out every last drop of batter. Using a knife, swirl the batter down the center of the loaf pan.

Bake for 60-75 minutes, loosely covering the bread with aluminum foil at the 30 minute mark to help prevent the top and sides from getting too brown. This is a large heavy loaf, so if your bread is taking longer, that’s completely fine. A toothpick inserted in the center of the loaf will come out clean when the bread is done. Begin checking at 60 minutes. Mine takes 70 minutes. Remove from the oven and allow the bread to cool completely in the pan set on a wire rack.

Once cooled or nearly cooled, cut into slices and serve. (Bread falls apart if you try to slice it when it’s warm.)

Cover and store bread at room temperature for up to 2 days or in the refrigerator for up to 1 week.

Absolutely fantastic. Thank you very much for your perseverence through those fourteen (or so) less amazing cakes. I'll be making this weekly with my spare (now treasured) apples. 6/5 stars

Just made this today! Absolutely delicious! I followed the recipe exactly and it turned out perfect. My son, the picky eater asked for a topping. This recipe does not need anything but next round I'll try the recommended brown sugar icing and salted caramel drizzle.

My apples were quite sweet, so I drizzled a little lemon juice on them. Otherwise, followed the recipe to a “t”. Delicious! Pro tip: A good serrated knife can slice this neatly while still quite warm. Ask me how I know…

Moist, almost candied edges on the cake, a keeper recipe. Your recipes are consistently dependable, so thank you for your passion and perseverance.

Apple Cinnamon Bread

Apple Cinnamon Bread Recipe is moist, sweet and packed with fresh apples and cinnamon for perfect fall treat. Taste delicious and it’s like a cake just baked in a loaf pan.

Apple Cinnamon Bread Recipe

Tablespoons light brown sugar

Tablespoons sugar

unsalted butter room temperature

eggs-room temperature

Tablespoons milk

Grease 9 x 5-inch loaf pan with baking spray, line with parchment paper leaving large overhang the sides so you could easily lift the bread from the pan. Adjust the oven rack just below the center (to the lower third position) and preheat the oven to 350 F.

Mix ground cinnamon and brown sugar, and set aside.

Peel and dice apples in small 1/2 inch chunks, set aside, too.

Beat room temperature butter with sugar and vanilla extract. Add eggs and mix to combine. Add mixture of dry ingredients (flour, salt and baking powder) and mix to combine. Slowly pour in milk and mix just to combine. Scrape down the bowl with rubber spatula to make sure there’s no lumps remain.

Toss apples with cinnamon and 2 Tablespoon granulated sugar sugar, set aside.

Spread half of the batter in prepared pan, scatter half of the apple mixture and sprinkle with one half of cinnamon sugar mixture. Spoon remaining batter and gently smooth the top. Scatter remaining apples and sprinkle with cinnamon-sugar mixture.

Bake in preheated oven about 55-70 minutes, or until the toothpick inserted in the center comes out clean. This is a heavy loaf full of apples, so if your bread takes longer, that’s OK. Just tent it with aluminium foil after 30-40 minutes to prevent the top from browning too much.

Remove from the oven and cool 20-30 minutes in the pan set on a cooling rack. Then using the paper overhang lift the bread from the pan.

To make the glaze stir powdered sugar, milk and vanilla. Drizzle over cooled bread.

This Healthy Apple Bread is delicious for breakfast or even dessert! Greek yogurt in the batter keeps this apple quick bread incredibly moist, and you will love the crumble topping.

white whole wheat flour*

plain Greek yogurt

honey

unsalted butter (melted)

oats

white whole wheat flour

unsalted butter

walnuts* (chopped)

Preheat oven to 350 degrees F. Generously spray bottom and sides of a 9x5-inch loaf pan with nonstick cooking spray.

In a small bowl, stir together the chopped apple, 2 tablespoons brown sugar, and 2 teaspoons cinnamon. Set aside.

In a medium bowl, whisk together white whole wheat flour, baking powder, baking soda, and salt.

In the bowl of a stand mixer (or you can mix the batter by hand), combine the Greek yogurt, applesauce, and honey, eggs and vanilla. Beat on medium speed until combined. Scrape down the sides of the bowl with a rubber spatula. Reduce mixer speed to low and slowly mix in the melted butter.

With the mixer still running on low, gradually incorporate the dry ingredients until barely combined, being careful not to over-mix. (The batter will be thick.) Use a rubber spatula to gently fold in the apples and any cinnamon-sugar left in the bowl. Transfer batter to the prepared loaf pan.

Make the bread:

In a medium bowl, stir together oats, white whole wheat flour, brown sugar, and cinnamon. Use your fingertips to work the cold butter into the oat mixture. Stir in the walnuts. Sprinkle the streusel over the batter in the pan and gently press it down with your hand.

Bake bread for 55-65 minutes, until a tester inserted down into the loaf comes out with just a few moist crumbs attached. Check bread after 45 minutes and cover with foil as needed to prevent over-browning of the topping. Let bread cool in the pan on a wire rack for 15 minutes before carefully removing to the rack to cool completely before slicing and serving.
