Pasta with Asparagus; a simple dish but a wonderful way to enjoy asparagus which is in season right now.

Pasta with Asparagus

asparagus

oz pasta

tbsp extra virgin olive oil

garlic (crushed)

salt and fresh cracked pepper

Parmigiano-Reggiano cheese

In a large pot boil 4 cups water with salt.

When boiling, add asparagus and cook 3-5 minutes, until tender crisp.

Drain asparagus in colander reserving 1 cup liquid before draining.

Fill pot with salted water, cover and boil for pasta.

When water boils cook pasta according to package directions for al dente.

Meanwhile, in a sauté pan heat olive oil.

Add garlic and cook until golden, add asparagus, salt and pepper and sauté about 1-2 minutes, tossing with oil and garlic.

In a small bowl combine egg yolk, Parmigiano-Reggiano cheese, 1/4 cup reserved asparagus liquid, salt and pepper.

Mix well.

After pasta is drained return to pot and mix with egg mixture.

Cook on medium-low about 2 minutes, until sauce thickens and sticks to pasta.

Toss in asparagus and mix well.

Adjust salt and pepper to taste.

If pasta seems too dry add more reserved liquid a tablespoon at a time.

Serve with additional grated cheese.

Asparagus Pasta with White Beans 

hazelnuts,

linguine

butter

garlic clove, minced

white beans

lemon juice

lemon zest

cheese

basil

sea salt

Black Pepper, for topping

First, place the hazelnuts in the oven and let roast until it is fragrant and golden; 12 to 15 minutes or so.

Start the water and bring it to a boil and a separate skillet to make the pasta on the stovetop.

Place a stalk of asparagus against a flat handle or spatula. Place the tip downward and your thumb securing the asparagus in place. Shave, down towards the counter. Repeat and flip the stalk as needed then repeat with remaining asparagus.

Once the asparagus is good to go, add the pasta to the boiling water and start cooking. Cook according to the package directions.

As the pasta is cooking, heat the skillet over medium heat and add the butter. Let melt then add the garlic. Cook until fragrant and just golden, about 2 minutes. Stir in the beans with their liquid and cook until the bean the liquid begins to thicken.

Once this happens, transfer the cooked pasta to the pan, reserving some of the pasta water. Add the shaved asparagus now as well. Cook over low until the pasta combines with the beans and the asparagus is heated. Add a splash or two of water as needed to thin the sauce. Taste and add salt as needed.

Turn off the heat and add the lemon juice, parmesan, and basil. Taste again and adjust the flavors if needed (more lemon, parmesan, or basil). Serve the black pepper, the toasted hazelnuts, and more cheese.

Charred Asparagus Kale Pasta with a creamy Cannellini Bean Leek Sauce.  This healthy, spring, vegan pasta recipe comes together quickly and easily!

Charred Asparagus Kale Pasta with Lemony Cannellini Beans

dry pasta

asparagus,

leeks, chopped thinly in 1/2 rounds

garlic, chopped small

cannellini beans

tablespoons extra virgin olive oil, divided

lemon lemon

pasta water

lemon thyme leaves

salt

pepper

Aleppo or red pepper flakes (optional)

Vegan Cheesy Sprinkle (optional)

Set oven to 450F if roasting the veggies in the oven. (Instructions included for both oven roasting and pan sautéing below.)

Cook the Pasta

Place 2 quarts of water with 1 tablespoon salt to boil on the stove, cooking pasta according to directions. Drain and reserve 1/3 cup of the hot pasta water.

Char in OVEN: 

On a parchment-lined sheet pan (for easy clean up), place cut asparagus tossed with a little olive oil and a sprinkle of salt, on one side of the pan.  Rub kale with about a teaspoon of olive oil and a sprinkle of salt (I use my hands to rub the oil into the kale to get it to absorb and tenderize).  Place kale on the other side of the sheet pan and place in the preheated oven for 4-5 minutes, until kale is wilted and starting to lightly char. If you want more char broil for 1-2 minutes.

OR Char in SKILLET

 In a hot cast iron skillet, start with asparagus dry frying, stirring constantly for 3-4 minutes, when it begins to sear remove from heat adding a sprinkle of salt and a drizzle of olive oil.  Repeat the same process with kale.

Make the Sauce: 

Saute leeks with 2 tablespoons of olive oil on medium heat until soft and just beginning to brown for about 3-4 minutes, add garlic sautéing 1 min more.  Remove from heat.  Add about half of the beans into the pan with the leeks and garlic along with 3 tablespoons olive oil, lemon zest, lemon juice, thyme, salt, pepper and 1/3 cup reserved pasta water.  Mash together with a fork making a creamy blend.  Heat up to warm.

Assemble:  

Mix the cooked pasta into the creamy bean sauce, adding the remaining whole beans, charred asparagus and kale.

Top with Aleppo (if desired), fresh chives and lots of vegan Cheesy Sprinkle!  Also good with goat cheese or Parmesan.

Delicious! I’ve made this recipe twice. First time I followed the recipe, tonight I added preserved lemon. Yumm! I can’t quite get this together in 30 minutes, but it easy and fast. I plan to adapt the main recipe and use other veggies.

This is excellent! Given the massive size of the kale bunch at my grocery and being unsure of your intention for the amount of kale, I instead opted for around 4-4.5 ounces of salad -grade baby kale, which worked fine. But it would be helpful to indicate the weight of the kale as with the asparagus. A “bunch” is highly variable based on the store and the variety of kale.

Spring pesto pasta with asparagus and chives is light and made with simple ingredients in under 20 minutes. Serve it hot for dinner or cold as pasta salad.

Spring Pesto Pasta with Asparagus

lb. asparagus, ends trimmed and cut into 1-inch pieces

pasta

basil pesto, store-bought

chives, finely chopped

lemon

mozzarella cheese, cubed

Parmesan cheese, grated

Bring a large pot of salted water to a boil and add asparagus. Cook for 3 minutes, then remove with a slotted spoon and place in a bowl of ice water. Let cool, then drain.

Bring the same pot of water back up to a boil. Add pasta and cook for 11 minutes, or until al dente. Then drain, reserving about 1/4 cup of cooking water.

In a large bowl, combine pasta, asparagus, and basil pesto. Toss until pasta is evenly coated with pesto. If the sauce is too thick, begin pouring in some reserved pasta water (about 2 tablespoons at a time) until the sauce reaches desired consistency. Add chives, lemon zest, and mozzarella, and stir until just combined.

Divide pasta into bowls and top with Parmesan cheese. If eating immediately, serve hot. You can also serve it cold or at room temperature as a delicious vegetarian pasta salad.

Creamy Asparagus Pasta

lbs Pasta, penne

Cup Green Peas, frozen

lbs Asparagus, hard stem trimmed and rest cut to 3 inch pieces

Cup Cream Cheese, 8 ounce cream cheese or boursin cheese

Cup Parmesan Cheese, grated

Bunch Basil, leaves

tbsp Lemon, juice

Salt and Black Pepper, adjust to taste

tbsp All-Purpose Flour

tbsp Olive Oil

tbsp Sun-dried Tomatoes, 2 tomatoes, small diced

Cup Milk

Cup Chicken Stock

Cook Asparagus

In a bowl, add water with ice. Set aside. Bring a pot of water to rolling boil. Add trimmed and cut asparagus. Cook for 2-3 minutes or until asparagus is dark green in color. Drain water. Add asparagus to water with ice. Set aside. 

Cook Pasta

Cook penne pasta according to package direction. Once cooked, drain pasta reserving 1/2 cup of liquid.

Make Pasta Sauce

To cook Pasta Sauce, while pasta cooks, heat a deep large sauté pan or skillet on medium heat. Add olive oil and shallot. Cook until onions are soft. Now add diced sun-dried tomatoes and garlic. Cook for 30 seconds to flavor the oil. Sprinkle flour on top and cook stirring often for 1 minute. Add lukewarm milk. Stir often until milk thickens and there are no lumps. Mix in 1/2 tsp salt, chicken stock, cream cheese and half of parmesan cheese. Stir until fully combined.

Assemble Asparagus Pasta

To assemble Asparagus Pasta, add green peas, cooked asparagus, lemon juice, cooked and drained penne pasta, half of chopped basil to the skillet with 1/2 cup of reserved pasta liquid. Toss the pasta with sauce sitting at the bottom of pan until pasta looks creamy and everything is well distributed. Taste and adjust seasoning with salt and black pepper. 

Garnish and Serve

Transfer hot and creamy Asparagus Pasta to serving bowls, sprinkle remaining parmesan cheese on the top. Garnish with remaining chopped basil leaves. Serve and enjoy.

Lemon Asparagus Pasta with Grilled Chicken

Lemon parsley

Cook the pasta in salted water according to package instructions. Add the asparagus to the pot during the last 3 minutes of cooking time.

Reserve 1/4 cup of pasta cooking liquid.

In small pot, combine the heavy cream, butter and 1/2 teaspoon salt and 1/4 teaspoon pepper over medium-high heat. Bring to a simmer and cook, stirring, until thick enough to coat a spoon, about 4 minutes. Remove from the heat and stir in the lemon zest and juice.

Place the pasta and asparagus back into the pot you cooked it in along with the chicken.

Pour the cream sauce over the pasta mixture and toss to coat evenly, adding pasta water if needed to thin the sauce. Stir in the parmesan cheese. Alternatively, you can toss just the pasta with the sauce and arrange the chicken and asparagus over the top of the pasta.

Add more salt and pepper to taste if needed. Garnish with chopped parsley and lemon slices if desired.

This lemon asparagus pasta combines tender asparagus and grilled chicken in a creamy sauce.

Lemon Asparagus Pasta

This pasta is wrapped in a dreamy creamy sauce and loaded with asparagus, crispy bacon and mushrooms. Better still, it&#039;s all made in one pot!!

Creamy One Pot Pasta with Asparagus, Bacon &amp; Mushrooms

/ 240 milliliters Heavy/Double Cream, (at room temp)

Bacon, (diced)

tbsp Unsalted Butter

Garlic, (finely diced)

tbsp finely diced Fresh Parsley

Onion, (finely diced)

Salt & Pepper, (to taste)

In a large pot over medium heat add the bacon and fry until the fat fully renders and the bacon is nice and crispy. Don&#39;t be tempted to crank up the heat, you want it fairly low and slow to render down the fat. Remove the bacon from the pot and place in a bowl to one side, leaving the bacon fat behind.

Melt in 2 tbsp butter, then add asparagus, mushrooms and onion. Fry until they begin to soften/pick up colour, then add garlic and fry for a minute or so longer.

Pour in the chicken stock and cream (important the cream is at room temp and the stock isn&#39;t too hot or the cream may curdle). Give it a stir, then add the uncooked pasta.

Bring to a simmer, reduce heat to low-medium, then cook until the penne is al dente, stirring frequently as you go. If the sauce soaks up before the pasta is cooked just add another dash of stock, water or milk to cook to help cook it through. You&#39;re looking for it to be al dente though (still a teeny bit hard).

Once the sauce has thickened and the pasta is cooked, add back in the bacon with the parsley and parmesan. Season to taste then give it a final stir and serve up!

Our favorite garlic asparagus pasta recipe made with fresh asparagus, garlic, olive oil, and Parmesan cheese. A delicious dinner in less than an hour!

Garlic Asparagus Pasta Recipe

short pasta (We used Campanelle.)

asparagus (ends trimmed then cut into bite-sized pieces)

olive oil

garlic

unsalted butter

Parmesan cheese (shredded off the block)

Cook the pasta according to the package directions. Drain, and set aside.

Heat a large skillet over medium heat. Add the olive oil, asparagus, and salt.

Sauté for 5 to 7 minutes, then add the garlic. Cook for an additional minute, and remove from heat.

Add the butter and cooked pasta. Toss to combine, then add the Parmesan cheese. Give everything a good stir.

Serve hot with extra Parmesan cheese, and freshly squeezed lemon juice if desired.

Garlic Asparagus Pasta

This asparagus pasta recipe showcases fresh spring asparagus in all its glory! Pasta coated with butter and basil pesto envelope pieces of tender asparagus, onions, and garlic. A dusting of toasted breadcrumbs, a sprinkle of parmesan cheese, fresh lemon zest, and pop of red pepper flakes complete this simple and satisfying vegetarian pasta dinner!

Asparagus Pasta Recipe

spaghetti noodles (or other pasta of choice)

TBSP salted butter (divided)

onion

garlic (minced)

red pepper flakes

basil pesto sauce

Lemon zest (for serving)

parmesan cheese (for serving)

breadcrumbs (for serving)

Kosher salt (to taste)

Cook the pasta according to package instructions in a large pot of heavily salted water. (It should be so salty it tastes like the ocean.)

In a large skillet, heat the olive oil and 2 TBSP of the butter over medium heat. Add the onion and a sprinkle of kosher salt, to taste, stirring to coat. Cook the onion, stirring occasionally, until it softens and begins to become translucent, about 3 minutes. Stir in the garlic and cook until fragrant, about 1 minute more. Stir in the asparagus, red pepper flakes, and a pinch more kosher salt. Cook until asparagus pieces are tender, about 3 minutes more.

While the asparagus is cooking, drain the pasta, reserving 1 cup of the pasta water. Once the asparagus is tender, add the cooked pasta to the skillet.

Add the pesto and 4 – 6 more TBSP of butter (or to your preference) to the skillet, tossing everything until pesto has coated the pasta and butter is melted. Add a splash of the reserved pasta water to thin the sauce, if desired.

Garnish the pasta with fresh lemon zest, parmesan cheese, and toasted breadcrumbs to serve.

This was a perfect (and easy) weeknight recipe! Definitely adding this to the rotation for the rest of asparagus season.
