Bacon Jam Recipe

Cook bacon on medium heat in large skillet until lightly browned. Transfer cooked bacon to paper towel lined plate to drain. Set aside.

Pour off bacon fat, leaving 1 1/2 tablespoons in skillet. Place garlic and onions in skillet and cook over medium heat until onions are tender and clear. Add brown sugar, cumin, cayenne, coffee, vinegar, and maple syrup to onion / garlic mixture. Bring to boil. Stir in bacon pieces and remove from heat. Pour mixture into slow cooker and cook, uncovered, on high setting for 6 1/2 hours or until liquid forms a syrup. Transfer to food processor or blender and pulse until it reaches the desired consistency. Let cool completely and store in an airtight container for up to four weeks in the refrigerator.

Slow Cooker Bacon Jam

Start by cutting up a pound of bacon into 1 inch pieces and frying it all up in a large skillet over medium high heat.&nbsp; Cook the bacon until it is done, not crispy but browned.&nbsp;&nbsp;

Remove the bacon from the pan with a slotted spoon and drain off most of the grease, leaving only about 1 tablespoon of grease in the skillet.  Add in the diced onions and cook for 3-4 minutes and then stir in the maple syrup, brown sugar, coffee, apple cider vinegar and spices and bring all of that to a boil.&nbsp;

Add the bacon back into the jam and boil for 1-2 minutes and then transfer the to a slow cooker. Cook on High for 4 hours UNCOVERED, stirring occasionally.&nbsp;

Serve immediately or let cool to room temperature and refrigerate in an air tight container for up to 2 - 4 weeks.

Bourbon Bacon Cheeseburgers

white American cheese ((or your favorite cheese))

mayo ((optional))

brioche hamburger buns ((or your favorite buns))

To a large skillet, saute bacon pieces over MED heat until crispy, about 8-12 minutes. &nbsp;I used center cut bacon, so there wasn't too much bacon grease, but if yours is particularly greasy, drain about half the grease. &nbsp;Add onion and garlic, cooking until soft and tender, about 3-5 minutes.

Add cider vinegar, brown sugar, bourbon, water, cayenne, and black pepper.  Stir to combine. &nbsp;Bring to a boil, then simmer, stirring occasionally, until liquid is mostly cooked off, about 10-15 minutes.  Mixture will be thick and syrupy.

Use immediately, or place into airtight container and refrigerate for 2-4 weeks.

BOURBON BACON JAM:

Add a drizzle of olive oil to a large skillet and heat over MED-HIGH heat. &nbsp;Add hamburger buns, cut side down, and toast until golden brown. &nbsp;Turn off heat and remove to a plate to cool.

In a large mixing bowl, add ground beef, heavy cream, salt and pepper. &nbsp;Peel the onion and grate (using a hand grater or even a box grater) about 2 Tbsp of onion into the meat. Use the fine side of the grater, so you're getting very small pieces of onion. You'll get onion juice too, and that's good.

Use your hands to mix gently until just combined. &nbsp;Form into 4 patties (for 1/3 lb burgers, make 6 patties, and for a 1/4 lb burger, make 8 patties). &nbsp;Make an indentation in the center of each burger with your thumbs to ensure even cooking.

Heat a drizzle of oil in the same skillet over MED heat and cook burgers about 5 minutes per side, or until cooked to desired doneness.

The last minute of cooking, place cheese slices on patties and cover pan with aluminum foil. &nbsp;Serve hamburgers on toasted buns with lettuce and bourbon bacon jam.

Bacon Jam is the perfect condiment for burgers, steak, eggs, and just about every other dish really! The recipe combines sugar free maple syrup and bacon flavors to make a delicious low carb jam!

Cook the bacon

Over medium - high heat, cook bacon in a large skillet until crispy. Remove cooked bacon from skillet using a slotted spoon and transfer to a paper towel lined dish to set aside. Leave remaining bacon grease in the skillet. 

Caramelized onions and garlic

Lower heat to medium and add onion and garlic to the skillet with the bacon grease. Cook until onion is translucent (about 5 minutes).

Make it candy bacon 

Add the crispy bacon back to the skillet with the onions and garlic. Add apple cider vinegar, sugar free maple syrup, smoked paprika and black pepper. Lower heat to low. Cook for another 30-60 minutes or until mixture is thickened. 

Puree

Once mixture has thickened, remove from the skillet and transfer bacon mixture and bacon fat to a food processor or blender. Pulse or blend until a thick jam texture forms.

Preheat oven to 425.

Place cooling racks on a rimmed baking sheet and layer bacon over top.

Cook bacon for 15-20 minutes or until crispy.

Remove from oven and set aside to cool, once cool crumble.

Taking about 1-2 Tbs of the bacon grease add to large pot.

Cook onions in bacon grease until tender.

Add in the garlic and cook for about 1 minute.

Add crumbled bacon and remaining ingredients and heat on medium-low until the liquid has reduced some and thickened about 1-2 hours.

At this point you can add your bacon mix to a food processor to break it down to smaller chunks or you can leave it chunkier.

Place into 2 1/2 pint jars or 4 4 oz jars, seal and refrigerate!

You must try this stuff(even if you add an extra shot of bourbon as finish it it the food processor, like I do.

Bacon Bourbon Jam

sherry vinegar

In a medium skillet, cook the cut 3/4 pound bacon, stirring occasionally, until done and on the verge of crispy, approximately 10 minutes. Remove the bacon to a paper towel-lined plate to drain off fat, reserving about 1 tablespoon of the fat in the pan. Discard the rest and reduce to low heat.

Add the minced or pressed 2 garlic cloves and minced 1 large shallot directly to the same skillet with rendered bacon fat. Soften for approximately 4-5 minutes. Stir in the 1/2 cup light brown sugar, 1/4 cup sherry vinegar, 1/4 cup water, 1/4 cup maple syrup, 1/4 cup bourbon  and 1 teaspoon yellow mustard. Simmer on low heat for 10-15 minutes, stirring occasionally, ir until it starts to thicken and liquids are reduced by about 25%. It will not fully thicken until it starts to cool off-heat.

Return the cooked bacon to the pan. Remove from the heat and stir well.

This bacon jam is delectable on everything. Such a great smoky sweet flavor!

enjoyed making this recipe. when I finished I split the jam into two halves and added 2 tbs. orange marmalade and one chopped jalapeno to it.  So glad I did. It's delicious. I highly recommend it. If you like a little heat add one or two chopped jalapenos or any pepper you like. Next time I'm adding ghost peppers!

Just made it for the first time and it is so good! However, if I wanted to counteract a little of the sweetness, what would you suggest?

I made this, I've made a similar recipe in the past but I couldn't find it, so I tried this one.
It wasn't getting thick so I turned it up and it burned. When we decided to pour it into another pan to try and cool it down we noticed a TON of bacon grease. So if you make this, I suggest pouring off most of the bacon fat. I'm so sad.
