Marinated and then baked, these portobello mushrooms are simply the best, whether as a side accompanying another entrée or as a vegetarian main dish.

Baked Portobello Mushrooms (THE Best!)

Preheat oven to 400° F (205° C).

Find a baking dish that will fit both mushroom caps (tightly line dish in foil to make clean up easier if desired). Add all ingredients except mushroom caps and stir to create marinade.

Add mushrooms and rub sauce onto them. Let sit for 15 minutes, stem side down.

Once 15 minutes is up, rub mushrooms again with sauce before placing dish in the oven.

Bake for 15 minutes. Remove and turn mushrooms over. If there is any sauce left in the pan, spoon it over the mushrooms. Continue baking another 5-15 minutes (exact cooking time will vary based on mushroom size).

Remove mushrooms and let sit for 5 minutes before slicing and serving.

Stuffed Portobello Mushrooms (Best Ever!)

Preheat the oven to 450 degrees Fahrenheit. 

Bake the portobello mushrooms

Clean the portobello mushrooms and remove the stems. Place them on a parchment paper-lined baking sheet gill side up. Drizzle the tops with the olive oil and use your hands to rub on the bottoms. Sprinkle with about 1/2 teaspoon kosher salt divided among the mushroom caps. Place the baking sheet in the oven and roast for 15 minutes until tender. Once baked, drain the caps of the excess liquid.

Meanwhile, make the filling

Meanwhile, thaw the spinach. Use a strainer to squeeze out as much moisture as possible. Mince the shallot. Thinly slice the green onions. Roughly chop the artichokes. In a medium bowl, mix together the spinach, shallot, green onions, and artichokes with the Greek yogurt, mayonnaise, Parmesan cheese, dried dill, garlic powder, kosher salt and several grinds black pepper.

Stuff the mushrooms: Turn down the oven heat to 425 degrees Fahrenheit. Spread the filling into the roasted mushrooms caps (there may be a little left over). Top with a little more Parmesan cheese on each cap, then sprinkle with the Italian panko. If desired, sprinkle with a little paprika or smoked paprika for color.

Bake the stuffed mushrooms

Bake 10 minutes until the breadcrumbs are golden. Serve immediately.

Vegan Stuffed Portobello Mushrooms

tbsp fresh parsley (finely chopped)

Italian seasoning

Preheat oven to 350.  Prepare rimmed baking sheet with parchment and then add a wire rack.

Clean mushrooms. Use a damp (not wet) paper towel to brush off any dirt/debris. Twist the stem out and set aside to add to veggie mix.

Use a spoon to scoop out and then discard the gills.

Place mushrooms on rack with the inside(where the stem was) facing down. Drizzle the cap with olive oil and sprinkle with a pinch of salt and pepper (reserve the rest of the seasoning for the filling).

Bake for 12 minutes, to soften.

Prep Mushrooms to stuff:

Place pine nuts, nutritional yeast, Italian seasoning and salt into a spice grinder and pulse until it resembles ground parmesan cheese. You can also use a coffee grinder or small food processor for this.

Make the &quot;cheese&quot;

Dice the onion, bell pepper and mushroom stems. Heat a heavy skillet over medium heat. Swirl in olive oil and cook veggies, stirring often. Sprinkle iwth salt and pepper. Continue to saute until veggies begin to soften, about 5 minutes. Add garlic and stir constantly for about a minute, until fragrant. Stir in cauliflower rice and mix until fully incorporated. Turn off heat.

Stir in spinach and parsley until wilted. Then add all but 1 tbsp of the &quot;cheese&quot; to the mixture.

Make the Filling

After 12 minutes, remove mushrooms from oven and flip over. Scoop filling into the cavities, sprinkle with the set aside 1 tbsp of the cheese and any remaining salt and pepper.

Bake for 20 minutes until mushrooms are tender and topping is golden brown.

Remove the stems from the portobello mushrooms and peel the skin from the caps. Slice the mushrooms into ⅓-inch-thick strips.

Make the seasoning mix.

Place all of the seasoning ingredients together (oil, chipotle in Adobo, garlic powder, paprika, and salt) and stir well.

Season the mushrooms.

Place the mushroom slices onto a parchment paper-lined baking sheet and brush them with the seasoning mix on both sides.

Bake

Bake them for about 15 minutes at 450°F. Serve on top of your sandwich, make tacos, burritos, or on the side of your favorite dishes.
