Asian-marinated baked salmon

lemongrass stems (pale part only), chopped

(125 milliliters) dark soy sauce

coriander, leaves thinly sliced, stalks finely chopped

ginger,

garlic cloves, finely grated

salmon fillet, pin-boned

(115 grams) honey, warmed

spring onions, finely shredded

limes, halved

A tasty recipe for Szechuan Salmon with Scallion Green Beans baked in the oven that can be made in 30 minutes. A delicious healthy weeknight dinner!

Szechuan Salmon With Scallion Green Beans 

Szechuan Sauce, without cornstarch (divided)

salmon (2 thick pieces)

green beans (or asparagus)

scallions, split in half lengthwise then cut to the length of green beans

shiitake mushrooms (optional) or sub another mushroom

cornstarch

sesame seeds

Stir together the Szechuan Sauce ingredients (leaving the cornstarch out)

Place green beans and scallions mix these together), mushrooms and salmon on a parchment-lined sheet pan. Spoon half of the Szechuan sauce over the salmon and veggies and toss the veggies in the sauce.

Place the sheet pan in the oven and bake, checking at 10-15 minutes ( depending on how thick your salmon is) give the veggies a toss, and checking the salmon. Continue baking until salmon is cooked through and broil if you want for the last couple minutes to give color.

In the meantime, heat up the remaining Szechuan sauce on the stove and whisk in a teaspoon of cornstarch to thicken. Pour this over the cooked salmon.

Sprinkle with toasted sesame seeds, and divide the veggies and salmon among two bowls.

Recipe was a big hit however I found the sodium level of the Szechuan sauce to be way out of control.  Next time I intend to use low sodium soy and also add a small amount of water to the recipe.

Cut salmon in to 4 pieces and place in a bowl. Lightly coat with olive oil,  season with salt and pepper and zest from one lemon. Add the garlic and thyme, gently tossing to coat.

Cut the lemon in half and place on the grill, open side down.

Place salmon on the grill, skin-side down first, and grill 4-6 minutes, covering. The skin should release itself naturally from the grill. Flip and cook for 2 more minutes or until your desired &#8220;doneness&#8221;. Keep in mind thinker pieces may take longer, and thin pieces may take less time.

Serve salmon immediately or refrigerate for mid-week meals for up to 3 days.
