Homemade Yellow Cake Mix

cake flour

sugar

baking powder

salt

unsalted butter

In a large bowl whisk together the flour, sugar, baking powder and salt. Add in the butter and use a pastry cutter to blend the butter into the dry ingredients.

Store in a container with a tight fitting lid in the fridge for a couple weeks or in the freezer for two to 4 months.

Use in replace of store-bought yellow cake mix.

Gluten Free Flour Blend Recipe

(145 grams) white rice flour

(60 grams) tapioca starch

(70 grams) potato starch

(60 grams) sorghum flour

(5.5 grams) xanthan gum

Using a kitchen scale (see notes), add all ingredients to a large mixing bowl and whisk until combined.

Transfer to an airtight container like a mason jar or ziplock bag. Store the flour blend at room temperature in a cool dry place for up to 3 months. Whisk or mix the flour again before using to remove any clumping.
