Balsamic Mushrooms with Basil is an easy side dish which comes together in 15 minutes! It&#039;s vegan and can be made gluten-free.

balsamic vinegar

soy sauce

sriracha (or to taste)

brown sugar

olive oil

garlic (sliced thin)

oz white mushrooms (sliced)

black pepper (or

basil

Balsamic Mushrooms with Basil

In a bowl mix together balsamic vinegar, soy sauce, sriracha and brown sugar. Mix well and set aside.

Heat olive oil in a cast iron skillet (or any other pan) on medium heat. Once the oil is hot, add the sliced garlic and let them cook until they start changing color, around 2 minutes.

Then add the sliced mushrooms and stir. Cook the mushrooms on medium heat for 6 to 7 minutes until they release all the moisture and start turning golden-ish in color.

Add in the prepared sauce to the pan. Mix well until sauce is well combined with the mushrooms.

Add the black pepper and stir well.

Cook for a minute and then turn off the heat. Stir in the basil.

Serve these balsamic mushrooms with more basil. These can be enjoyed with rice, noodles or even on a toast!

600 g button mushrooms

tbsp balsamic vinegar

garlic

tbsp honey

parsley (chopped)

Pre-heat

Roasted Portabello Mushrooms Recipe (with Balsamic and Thyme)

oz small (2" diameter) portobello mushrooms

parmigiano cheese

fresh thyme, chopped,

fresh rosemary, chopped,

pepper,

Salt,

fresh parsley, chopped (garnish)

Clean the mushroom caps by removing any visible dirt with a damp paper towel, then remove the stems. Discard stems, or use them in a soup or stir-fry. 

Mix olive oil, balsamic vinegar, garlic, and herbs in a small bowl.

Arrange the mushroom caps in a deep baking dish or rimmed baking sheet in a single layer. Pour the sauce over each one. Pour the marinade over the top of the mushroom and coat evenly. Sprinkle the parmigiano cheese over the top of all the mushrooms. 

Roast at 425 degrees F. for 10-15 minutes until the desired doneness is achieved. I like fork tender. 

Garnish with fresh chopped parsley. Serve warm on top of crusty bread!
