Oregano leaves (Main)

Grated parmesan cheese (Main)

Olive oil (Main)

Tbsp Olive oil,

Red onions, sliced

Garlic cloves, crushed

Tbsp Balsamic vinegar

Chicken stock

Chicken thighs, boneless and skinless (Main)

Place the oregano leaves, parsley, parmesan and first measure of olive oil into a kitchen processor. Pulse until all are well combined. Season with salt and pepper.

Heat the tablespoonful of oil in a frying pan. Add the red onions and garlic, cooking slowly for 10 minutes to soften. Add the balsamic and chicken stock, stirring through.

Spread the onion mixture into an ovenproof baking dish. Place the chicken thighs on top, snuggling them among the onions. Place a spoonful of the oregano mixture on to each thigh.

Drizzle over a little extra olive oil, cover and place into the oven for 40 minutes, removing the cover after 20 minutes. Serve hot with rice or mashed potatoes.

Slow cooked beef casserole

½ kgs Shin beef,

Tbsp Oil

Garlic,

Onion, finely chopped

Carrots, diced

Celery,

Bay leaves

Thyme

Red wine

Balsamic vinegar

Beef stock

tin Tomatoes

Potato, diced

Preheat oven to 160C. Dry beef with paper towels and dust lightly with flour. Heat an ovenproof dish on a high heat. Add 2 Tbsp oil and brown the beef bones on all sides. Remove from the pan and set aside.

Reduce the heat to medium and add the rest of the oil. Add the garlic, onion, carrots, celery, bay leaves, thyme and season with salt and pepper. Cook for 8 minutes or until the vegetables soften but not brown. Increase the heat and add the balsamic vinegar. Cook off for 2 minutes making sure to scrape the bottom of the dish to release all of the flavour stuck to the bottom. Add the wine, bring to a simmer and cook till reduced by half. Add the stock and bring to a simmer. Add the meat back into the dish and add tomatoes and potato, bring to a simmer. Cover with tinfoil and place in the oven.

Cook for an hour. Remove the tinfoil and cook for another hour.

Remove from the oven and allow to rest for 10 minutes. Garnish with parsley and serve with a fresh green salad.

Roasted salmon with avocado dressing

Red onions, peeled and cut into 8 wedges

Tbsp Olive oil

kg Salmon, pin bones removed (Main)

Lemon juice

Avocado, peeled, stoned and mashed (Main)

Mayonnaise

Basil,

Lemon, finely grated rind and juice

Combine the onions with the olive oil, vinegar and pepper in a large baking pan. Roast for about 30 minutes, stirring often, until the onions just start to brown.

Place the salmon on top, skin-side down, and brush with the combined olive oil and lemon juice. Reduce the heat to 180C. Bake for about 15 minutes or until the salmon is cooked.

Combine all the ingredients for the Avocado Mayonnaise. Serve drizzled or piped over the salmon.

pepper,

tbsp pecorino romano cheese

Creamy Gorgonzola Sauce:

tbsp butter

tbsp flour

milk

oz crumbled gorgonzola cheese
