Healthy Banana Oatmeal Pancakes (made in the blender!)

bananas

eggs

almond milk

vanilla extract

½ cups old fashioned rolled oats, gluten free if desired

baking powder

cinnamon

salt

Olive oil,

Add all of the ingredients to a blender and blend on high until completely smooth, about 30 seconds to 1 minute. Let the batter sit in your blender while you heat your pan up.

Lightly coat a griddle with coconut oil, vegan butter or olive oil and place over medium heat. Once pan is hot, add 1/3 cup of the batter to the griddle for each pancake and cook for 2-4 minutes until pancakes slightly puff up and you see a few bubbles along the edges.

Flip cakes and cook until golden brown on underside. If you find that pancakes are browning too quickly then you need to lower the heat. I normally start on medium heat, then decrease to medium low later so that my pancakes don't burn. If at any point your griddle starts smoking, it means your pan is too hot.

Wipe skillet clean and repeat with more oil and remaining batter. Makes 9 pancakes total. Serves 3, 3 pancakes each.

Banana oatmeal pancakes are naturally gluten-free, sugar-free and made with real, simple ingredients. These fluffy pancakes are healthy and easy to make in the blender.

Banana Oatmeal Pancakes

bananas ((about 10 ounces))

egg whites (or 2 eggs)

gluten-free rolled oats

kosher salt

walnuts

coconut oil

Combine banana, egg whites, oatmeal, cinnamon, baking powder, and salt in the blender and blend until you have a nice thick batter.

Stir in walnuts or any other add-ins you like. Blueberries, pecans, and chocolate chips are some of my other favorites.

Heat a large non-stick skillet over a medium heat and lightly coat with coconut oil.

Pour pancake batter in the pan to form small-medium sized pancakes. Cook for two minutes or until small bubbles begin to form on the top. Flip and cook for another two minutes or until golden brown and set through.

Repeat until you have used all the batter. You should end up with 9 pancakes.

Serve with your favorite pancake toppings and enjoy!

These deliciously easy banana oatmeal pancakes are made in a blender using oats and bananas: no flour! They're delicious with a healthy spin. NOTE: Recipe updated 5/26/2021 to address reader comments.

Banana Oatmeal Pancakes (Flourless!)

Old Fashioned rolled oats

milk of choice

salted butter, melted (or grapeseed or olive oil)

brown sugar (or maple syrup)

bananas (about 2 medium)

Place the oats, Greek yogurt, eggs, milk, melted butter, brown sugar, vanilla, baking powder and kosher salt in a blender. Blend on high until a smooth batter forms.

Mash the bananas, then stir them into the blender with a spatula.

Lightly grease a skillet with butter and wipe off extra grease with a paper towel. Heat the skillet over low heat. Add a few more tablespoons milk to the batter until it is still thick but can pour out of the blender. Pour the batter into small circles. Cook the pancakes until the bubbles pop on the top and the bottoms are golden: low and slow is the key! Then flip them and cook until golden on the other side.

Add another tablespoon or two of milk to the remaining batter and stir so that it is pourable. Cook the remaining batter, adjusting the heat as necessary (the skillet can get very hot on the second batch). Place the cooked pancakes under an inverted bowl to keep them warm. Serve immediately with maple syrup.

Made these today without the sugar and they are great. Thanks for the recipe. Easy to make.

Oh my! These are delicious! Low and slow is definitely key. Served them with homemade yoghurt and a drizzle of maple syrup.

These pancakes were so yummy! I loved how the batter was made in the blender. No bowls required!! I will definitely make these again.
