(15 oz) kidney beans (rinsed and drained)

Place all the beans, corn, onion, spices, salt, and pepper in a large bowl. Toss well to combine.

Add the bell pepper, jalapeño pepper, minced garlic, tomatoes, avocado, and cilantro. Squeeze in the lime juice. Stir well to combine.

Taste and adjust seasoning as needed. Add a pinch more salt or another squeeze of lime juice.

Eat immediately or cover the bowl and set it in the fridge to let the flavors meld for about 20 to 30 minutes.

Serve with tortilla chips.

This layered buffalo chicken bean dip is a mash up of the classic bean dip and buffalo chicken dip! It's loaded with spicy-tangy flavor and has something for everyone. Perfect for your next party or tailgate!

Layered Buffalo Chicken Bean Dip

¼ cup buffalo hot sauce

(8-oz) block of cream cheese, softened

ranch dressing

½ cup buffalo hot sauce

cherry tomatoes, halved

Preheat the oven to 375°F and spray a large baking dish with nonstick spray.

Mix together the beans and hot sauce until well combined. Spread evenly over the bottom of the baking dish.

For the Bean Layer:

Wipe out the bowl used for the beans and add the cream cheese and ranch dressing. Stir well to combine. Season with a little salt.

Spread in an even layer on top of the bean layer in the baking dish.

For the Ranch Cream Cheese Layer:

Wipe out the same bowl again (if a little ranchy cream cheese is left in the bow, it won;t hurt anything). Add the chicken and buffalo sauce and toss to combine.

Spread the chicken out in an even layer on top of the cream cheese layer in the baking dish.

For the Buffalo Chicken Layer:

Top the buffalo chicken layer with the shredded cheese and crispy bacon.

Bake the dip in the preheated oven for 15-20 minutes or until everything is warm and gooey and the cheese is thoroughly melted.

For the Cheese Layer:

Top the hot dip with the diced avocado, scallions, tomatoes, and blue cheese.

Drizzle the ranch and buffalo sauce over top, as you like.

For the Cold Toppings:

One of our favorite dishes. I have to avoid making  it too much! So easy, even when making the refried beans fresh (this family doesn’t like canned refrieds). I’ve served this as a dip with tortillas and as a dinner entree with bowls or tortillas.

Easy to make, and always a crowd favorite, this Bean Dip is the perfect appetizer or party food. Serve with tortilla chips, and watch it disappear!

sour cream

(16 oz each) cans refried beans

oz diced green chiles

taco seasoning

hot pepper sauce

oz shredded cheddar cheese

oz shredded Monterey Jack cheese

Toppings: green onions, tomatoes, cotija, cilantro

Preheat

Combine

In a bowl, blend together the cream cheese and the sour cream. Add the beans, green chiles, taco seasoning, hot pepper sauce and lime juice. Stir in half of the cheddar cheese and half of the Monterey Jack cheese.

Transfer

Transfer the mixture to an oven proof dish. (I used a 12-inch cast iron pan, but a 9x13-inch baking dish will work, as well.) Top with the remaining cheddar and Monterey Jack cheese.

Bake

Bake in the preheated oven until the cheese is melted and the edges are bubbling, about 30 minutes.

Serve

Serve warm, topped with any desired toppings.

I love making this homemade bean dip recipe because it’s incredibly easy and tastes just like restaurant-style dip. I can use dried or canned beans and prepare it on the stove or in the Instant Pot, and it always turns out creamy, smooth, and perfect for scooping. It’s one of my favorite simple appetizers to make when I want something flavorful and satisfying.

Homemade Bean Dip Recipe

To make on the stovetop, soak the beans in cold water overnight.

Then pour off the water and place the soaked beans in a large 6 quart sauce pot. Pour fresh water into the pot, covering the beans by 3-4 inches.

Turn the heat to medium. Add the onion, garlic, and salt. Cover and simmer for 2-4 hours. *The older the dried beans are, the longer they will take to cook.

Stovetop Method:

You do not have to soak the beans if pressure cooking them. Place them in the Instant Pot, with the onions, garlic, salt, and 5 cups water.

Set on Pressure Cook High for 35 minutes. Then preform a Natural Release. Once the steam button has dropped it is safe to open the lid. *If the beans are too firm, pressure cook for 5-10 more minutes, then perform a quick release.

Instant Pot Method:

Once the beans are very soft, drain off the liquid and reserve for later use.

Pour the beans into a large food processor. Add the pico de gallo and 1 cup of reserved liquid. Pulse until mostly smooth. Then add the shredded cheese and pulse a few more times to melt the cheese into the beans. If you like your bean dip to be looser, add another ¼ to ¾ cups of cooking liquid.

Top with a fresh scoop of pico de gallo on top, and serve with tortilla chips or veggies.

Bean Dip Prep:

this is my go to recipe.  I make the instapot version and a food processor.  ant kind of salsa I have around, even just a can of  drained diced tomatoes with more spices works too. reminds me of the beans and cheese cups at taco bell when their food was real.  1960-1970s versus the 'mix with water' beans they serve today.  I'm making some right noow!

Great dip!  I would like to freeze some for a later date.  Any thoughts or advice on freezing the bean dip? 

That amount of raw garlic was overwhelming. I ended up cooking the mash to moderate the garlic flavor and added lots more cheese. It's not bad, but in the future I'll either sauté the garlic in some bacon fat before adding or use garlic powder.
