Basic Beer Mop

beer

cider vinegar

½ cup oil, preferably canola or corn

½ medium onion, chopped

Tbsp. Brisket Seasoning

Whisk ingredients together in a saucepan.

Bring to a boil and lower heat until reduced.

Mop over brisket every hour until it is cooked.

Texas-Style Chili

lbs. Ground Beef, (90% lean)

vegetable oil

onion,

green bell pepper, chopped

jalapeño pepper, ribs and seeds removed, chopped

Tbsp. chili powder

paprika

Tbsp. cumin

oregano

½ tsp. black pepper

Kosher salt

(8 oz.) tomato sauce

(10 oz.) diced tomatoes & green chilies, undrained

½ cup (2 oz.) shredded reduced-fat sharp cheddar cheese

Sour cream

Sliced green onions

Heat a large Dutch oven over MEDIUM-HIGH heat; add oil. Lower heat to MEDIUM; add onion, bell pepper and jalapeño pepper stirring occasionally until tender, approximately 4-7 minutes. Add garlic and cook for an additional 1 minute.

Add Ground Beef. Cook for 8-10 minutes, breaking beef into small crumbles and stirring occasionally. Pour off drippings, as necessary.

Add chili powder, paprika, cumin, oregano, black pepper and salt; cook 1 minute.

Add tomato sauce, diced tomatoes &amp; green chilies, and beer; bring to a boil.  Reduce heat to low, cover and cook 30 minutes. Add shredded cheese. Serve with your favorite toppings.

How to Make Texas-Style Chili

Taco Shepherd's Pie

lb Ground Beef 90 lean

lbs russet potatoes 2 large potatoes peeled and cut into chunks

salt

butter

1/3cup milk

cheddar cheese divided use

tsp black pepper

tsp garlic salt

garlic

package 1 oz taco seasoning

salsa hot medium

15 oz black beans

Roma tomatoes diced

avocado

cilantro

lime

Salt and pepper

Place potatoes in a large saucepan and cover with 1-inch water. Stir in 1 tsp. salt and bring to a boil over HIGH heat. Reduce heat to a simmer, cover and cook until potatoes are tender when pierced with a fork.

While potatoes are cooking, heat a separate large non-stick skillet over MEDIUM heat until hot. Add Ground Beef and cook 8-10 minutes, breaking beef into small crumbles and stirring occasionally. Add garlic and continue cooking for 1 minute. Drain, sprinkle in the taco seasoning, add salsa and stir to combine. Cook for a few minutes, stirring frequently, until the mixture comes to a simmer and thickens. Remove from heat and gently stir in black beans.

Drain potatoes and return to pot. Mash potatoes until smooth. Add butter, milk, green chilies and 2/3 cup of cheese. Stir until well combined, cover and set aside.&nbsp;

Transfer meat mixture to a 2-quart baking dish and spread out evenly. Top with the mashed potatoes, spreading to an even layer all the way to the edges; sprinkle with the remaining cheese and bake for 30-40 minutes until beginning to turn brown.

While pie is baking, place the diced tomatoes, avocado, cilantro and lime juice in a medium bowl, season with salt and pepper, stir to combine. Top each serving with a big scoop of avocado and tomato mixture.

Beef and Blue Cheese-Stuffed Mushrooms

Ground Beef

button mushrooms

blue cheese

bread crumbs

green onions

steak seasoning blend

chives

Preheat oven to 375°F. Remove and reserve stems from mushrooms. Season mushroom caps with salt; set aside. Mince stems to yield 1/2 cup; discard remaining stems. 

Combine Ground Beef, minced stems, blue cheese, bread crumbs, 3 tablespoons chives and steak seasoning. Spoon beef mixture evenly into mushrooms. 

Place stuffed mushrooms on rack in broiler pan. Bake in 375°F oven 15 to 20 minutes. Sprinkle with additional chives, if desired. 

Ground Beef Gorditas

lb. Ground Beef

Tbsp. oil

½ medium yellow onion, diced

roma tomato, diced

serrano chile, stem removes and finely minced

black pepper

chili powder

cumin

masa harina

Lettuce

Tomato

Salsa

In a skillet, heat oil over MEDIUM- HIGH heat. Add onions and sauté until light and translucent, about 3 minutes. Add tomatoes, garlic, and serrano chiles. Continue cooking for an additional 3 minutes, stirring occasionally. 

Add Ground Beef, breaking into crumbles with a spoon. Cook until beef is no longer pink and fully cooked. Reduce heat to LOW. Add salt, pepper, chili powder, cumin, and oregano. Stir to combine and simmer for 5 minutes.

In a bowl, add masa harina and salt. Slowly add warm water, begin mixing with your hands to create a dough. If the dough feels dry, add more warm water and mix with your hands until the dough comes together. 

Divide the dough evenly and hand shape into 8 balls. Place on a baking sheet and cover with a moist kitchen towel or moist paper towels, this helps prevent the dough from becoming dry. 

Heat a comal or large skillet over MEDIUM-HIGH heat. Line a tortilla press or large glass with plastic film. Place one masa ball in a tortilla press. Gently press to form your gordita or press down with a  glass to form a gordita. The gordita should be thicker than a corn tortilla, and about 3-4 inches in diameter. Return the gordita to the baking sheet, cover with a moist towel and continue shaping remaining masa balls into gorditas. 

Drizzle comal or skillet with 1 Tbsp. oil and place gorditas on hot comal or skillet a few at a time. Cook about 2 minutes, flip, and continue cooking an additional 3 minutes, until light brown spots appear on the gordita surface. 

Remove gorditas, place on a plate, and cover with a towel. Continue cooking remaining gorditas and add remaining oil if needed. 

With a knife, carefully cut a slit down each warm gordita to create a pocket to add filling. Fill with ground beef, lettuce, and tomato. Serve with salsa.
