Hamburger Soup

This vegetable beef soup is made with tender chunks of beef, plenty of vegetables and potatoes, all simmered in a tomato broth. A hearty one pot meal that's perfect for a cold night!

Vegetable Beef Soup

olive oil

beef stew meat

salt and pepper

onion (chopped)

carrots (peeled, halved and sliced)

celery (sliced)

garlic

can diced tomatoes (do not drain)

Italian seasoning

bay leaf

beef broth

potato

corn

peas

frozen cut green beans

parsley

Heat the olive oil in a large pan over medium high heat. Season the stew meat with salt and pepper to taste.

Place half of the meat in the pan in a single layer. Cook for 3-4 minutes per side or until browned.

Repeat the process with the remaining beef. Place the meat on a plate and cover to keep warm.

Add the onion, carrot and celery to the pan. Cook for 4-5 minutes or until softened. Add the garlic and cook for 30 seconds.

Add the beef back to the pot along with the tomatoes, Italian seasoning, bay leaf and beef broth. Bring to a low simmer.

Simmer for 60 minutes or until beef is tender.

Add the potatoes to the pot and cook for an additional 20 minutes or until tender.

Stir in the corn, peas and green beans. Cook for 5 minutes. Season the soup to taste with salt and pepper.

Discard bay leaf. Sprinkle with parsley and serve.

When done, press Cancel and use the quick release method to release the pressure.

This Instant Pot vegetable beef soup is incredibly simple to make! But the final product still delivers in richness and depth of flavor.

Instant Pot Vegetable Beef Soup

2.5 lbs. stew beef (near room temperature)

Tbsp. sea salt

olive oil (separated)

yellow onions (large dice)

carrots (roughly chopped)

celery (diced)

mushrooms (roughly chopped)

thyme

Worcestershire sauce

bay leaves

chicken broth

tomatoes

1.5 lbs. new potatoes (quartered)

Season beef with salt and pepper. Then, using sauté setting – once hot add 2 tablespoons of oil and thoroughly brown beef. Do this in two batches and do not stir too frequently. After the first batch, add 1 tablespoon of oil.&nbsp;Do not wipe or rinse bottom of pot! There’s so much flavor in there!

Continuing on sauté setting – add onions, carrots, garlic, celery, mushrooms, thyme, Worcestershire sauce, and bay leaves.&nbsp;Cook for about 5 minutes, stirring frequently, making sure to scrape up any bits on bottom.

Then, return beef to pot and add all remaining ingredients (you can really add whatever vegetables you prefer) and mix well. Lock lid and cook for 10 minutes at high pressure.

Once cook time is complete, allow pressure to release naturally (will take about 25 minutes). Remove thyme bundle and bay leaves. Serve and enjoy!

In a large frying pan over high heat, fry beef in oil just until browned on all sides. Add beef to a 6 quart crockpot.

To the same frying pan, add carrots, celery and onion to the pan and cook until onions are softened. Stir in tomato paste, garlic, salt, parsley, thyme, paprika and pepper and cook for 1 minute.

Add the vegetables in the pan to the slow cooker with the broth, potatoes, tomatoes, green beans, tomato sauce, corn and bay leaf.

Cover and cook on low for 8 hours, until beef and vegetables are tender. Serve immediately or keep on warm until ready to serve.

Mom's Old Fashioned Vegetable Beef Soup

Hearty, filling, and delicious, this classic beef barley soup is a keeper!

Homemade Beef &amp; Barley Soup

beef

tsp salt (divided)

tsp pepper

olive oil (divided)

Season the stewing beef with a good pinch of salt and pepper then brown it in a skillet in 1 tbsp oil over medium-high heat. Set aside.

 In the same skillet, heat the remaining tbsp of oil and sautee the carrot, celery, garlic and onions until the onion is translucent, about 6 minutes.

Add the broth, browned beef, and sauteed veggies to a large pot. Cover and simmer for 30 minutes or until the beef is tender.

Meanwhile, add two cups of water and 1/2 tsp of salt to another pot. Simmer the barley for about 20 minutes or until it is tender but still firm. Drain and set aside.

When the soup has been simmering for 30 minutes (or until the beef is tender), add the drained barley and remaining veggies. Bring to a boil and simmer uncovered for an additional10 minutes.

Season with the salt and pepper to taste, then serve and enjoy!

Stovetop method:

Set the Instant Pot to sautee and add the oil. Brown the seasoned beef on all sides, about 3 minutes, then remove the beef chunks with a slotted spoon.

Add the diced onions, carrots, and celery. Sautee for 5-6 minutes or until the onions are translucent. Add the chopped garlic and sautee an additional minute or until fragrant.

Add about 1/4 cup of beef broth to the Instant Pot and scrape up all the bits. Turn sautee off.

Add the remaining beef broth, and put the beef chunks and barley into the pot. Seal it and set it to Soup/Stew (or High Pressure) for 25 minutes.Natural release for 5 minutes, then manual release.

Add the frozen peas to the still boiling liquid. Season and serve!
