Celeriac and apple soup with bacon and parsley

500 grams/1lb 2 ounces (roughly 3) eating apples

butter

sunflower oil

onions, chopped

celeriac (roughly 750 grams/1lb 10 ounces), cut into roughly 2cm/¾in chunks

carrot (roughly 120 grams/4½oz),

garlic cloves, crushed

potatoes

thyme (3-4 sprigs)

bay leaf

1.3 litres/2¼ pints vegetable or chicken stock,

sea salt and black pepper

rashers rindless smoked streaky bacon

tbsp crème fraîche

tbsp milk

leaf parsley, leaves roughly torn
