Add chopped chicken to a large bowl along with celery, grapes, dried cherries, chopped pecans, mayonnaise, salt and pepper. If using chopped celery leaves, add these as well. Stir together until just combined.

Healthy Chicken Salad Recipe

2lb. boneless skinless chicken breasts,

red grapes

green onions

plain greek yogurt

mayo

dijon mustard

sage

smoked paprika

garlic powder

lemon juice

salt & pepper

To a large bowl add shredded chicken, red grapes, pecans, and green onions.

In a small bowl add yogurt, mayo, mustard, sage, smoked paprika, garlic powder, lemon juice, salt, and pepper. Whisk together.

Add the liquid mixture to the chicken dish.

Stir everything together until it is completely combined.

Serve on a slice of bread or in a cup of bibb lettuce.

I substituted chive cream cheese for sour cream and chives, used chopped Costco rotisserie chicken and pico de gallo for our company  picnic.  It was well received.

3 instead of 4 stars only because per previous reviews, it really does need some additions or it would be bland.  But I really, really like it with my fixes & it will be on my permanent rotation!  I added 1/2 tsp each salt & cumin, 1/4 tsp each garlic powder & pepper, & a couple shakes Cayenne.  To reviewer Red Butterfly--the chicken is cooked before shredding.  Raw chicken won't shred.

Preheat oven to 350F. On a rimmed sheet pan, combine sliced fennel bulb, 1 Tbsp olive oil, and salt and pepper to taste. Toss to coat and into an even layer on one side of the pan.

Pat chicken breasts dry. Drizzle with remaining 1 Tbsp olive oil. Sprinkle with salt and pepper to taste then rub to coat. Transfer to empty half of baking sheet with fennel. Bake 30-35 minutes, tossing fennel halfway through, until chicken is cooked through and fennel is golden. Remove from oven and rest chicken 5 minutes then slice.

In a bowl, whisk together the yogurt, lemon juice and zest, fennel fronds, garlic and 2 Tbsp of olive oil until combined.

Divide arugula between 2 shallow bowls. Top with caramelized fennel and
