This Slow Cooker Texas Chili may be a little different than you&#039;re used to! We&#039;ve added beans and tomatoes for a filling and delicious soup. You can&#039;t go wrong with chili on a cold day!

Slow Cooker Texas Chili Recipe

beef

green bell peppers (diced)

(4 ounce) can diced green chili peppers ((drained))

(15 ounce) can pinto beans

(14 ounce) can diced tomatoes ((do not drain))

garlic

Tablespoons chili powder

cheddar cheese

sour cream

green onions (sliced)

(9.25 ounce) bag Frito corn chips

In a large saucepan, brown ground beef and diced onion.

Drain the grease from the meat and add meat to slow cooker.

Pour remaining ingredients on top and cook on LOW for 4-6 hours or HIGH for 2-3 hours.

Serve with shredded cheese, sour cream, green onions, and a bag of Fritos corn chips - or any of your other favorite chili toppings.

This vegetarian sweet potato chili recipe is all star and a family favorite! It's a delicious healthy dinner recipe where you won't miss the meat.

Best Sweet Potato Chili

Dice the onion. Dice the green pepper. Dice the sweet potatoes into a small dice (cubes about 1/2-inch thick). Make sure to cut the sweet potatoes as directed so they cook quickly and to obtain the correct chili consistency. Mince the garlic.

In a large Dutch oven or stockpot (at least 5 quarts), heat the olive oil. Sauté onion, peppers and sweet potatoes on medium-high heat for 8 minutes, stirring frequently. Then turn down the heat to medium low.

Add the garlic, tomatoes and their liquid, beans, corn, vegetable broth, chili powder, cumin, cayenne pepper, cocoa powder, kosher salt, and black pepper. Stir, then cover and cook for 25 minutes, stirring occasionally.

After the 25 minutes, mix the masa harina with ½ cup water and stir it together in a small bowl. Add the mixture to the chili to thicken, and cook 10 minutes more. Stir in the balsamic vinegar.

Season with additional kosher salt and pepper to taste.

Thinly slice the green onions. Divide the chili into individual bowls and garnish with hot sauce, sour cream, green onions, and sour cream. Store leftovers refrigerated or freeze for up to 3 months.

Instant Pot Ground Turkey and Pumpkin Chili Recipe

Press SAUTE button on Instant Pot and let it heat up. Add in olive oil.

Add in ground turkey, onions, and bell peppers, cooking and breaking up turkey as it cooks. Cook for about 5 minutes or until turkey is no longer pink and onions and peppers are tender.

Add in garlic powder, chili powder, cumin, oregano, salt, pepper, beans, tomatoes, pumpkin, and green chilies. Mix together. Pour chicken broth on top.

Place lid on top of Instant Pot. Move the valve to SEALING (not venting).

Press the MANUAL button and set timer for 15 minutes.

When the timer is done, allow the Instant Pot to do a natural release for at least 10 minutes (you can go longer if desired or let it stay on the “KEEP WARM” setting for hours).

Move the valve to VENTING and release remaining pressure.

Remove the lid, stir the chili, and serve topped with sour cream, shredded cheese, and sliced green onions. Add more salt and pepper as needed.

Texas-Style Beef &amp; Beer Chili

Masa Harina (depending on thickness preference)

Set an 8 quart pressure cooker to sauté/brown function. To the bottom of the pan add the chopped bacon. Cook for a few minutes each side until crispy. Remove from the pan and place on paper towels. Add in the meat a little at a time as you do not want to layer or crowd the pan. Cook for 3-5 minutes or until browned on all sides. Repeat until all the meat is sautéed. If necessary, add the 2 tablespoon of oil. When the meat is all browned add in the chopped onion and cook for 5 minutes, carefully moving around. Add in the garlic, stir and sauté for 2 minutes.

Pour in the beer and, using a wooden spoon, carefully scrape up the brown bits at the bottom of the pan. The pan should be smooth and no bits remaining on the bottom before adding the ingredients. This should take ~2 minutes.

To the beer add in the browned meat, bacon, onions/garlic, spices, stock, tomato paste and entire can of Redpack Tomatoes Diced Tomatoes. Do not stir. Place the lid on, seal and set the pressure cooker to High, 30 minutes. Once the 30 minutes is done, allow the pressure to do release naturally for 15 minutes.

Carefully remove the lid and spoon out 1/2 cup of the chili liquid to a bowl and add the Masa Harina. Whisk to combine. Add the mixture to the chili and carefully stir to help thicken. *Note if you started with a 12 ounce bottle of beer you can totally use the 4 ounces of beer with 4 ounces of chili liquid here.

Plate the chili and top with favorite toppings. Store in the fridge in an airtight container for 5-7 days or freeze for up to 2 months.

Made it last night, and very good as always.

Was the adobo that you used the plain sauce, or the chipotles in adobo sauce?  I assumed the former, and didn't taste a lot of heat (not really a problem).
