Season the rice and peas. In a large pot, add the rice, peas, milk, salt, pimento, pepper sauce (if desired), and water. Stir well to combine.

Add the aromatics. Place the onion, scallion, thyme, and scotch bonnet pepper on top of the rice mixture (to be easily removed after cooking).

Cook it. Cover the pot with a lid...

Cook it. Cover the pot with a lid and bring the mixture to a rolling boil. Next, reduce the heat to a slow boil and cook for 8 minutes. Lastly, reduce the heat to low, allowing the rice to steam for an additional 12 minutes, until tender. Turn off the heat and leave the rice on the stove, covered, to continue steaming for about 10 minutes. (If the rice is not yet tender, add a little more water and continue steaming until the desired texture is achieved).

Thai Lemongrass Rice is a quick and easy-to-make, so flavorful and delicious rice recipe that I could eat every day. This dish can be prepared in less than 20 minutes and under 500 calories per serving. The combined flavor of lemongrass, lemon zest, ginger, and garlic cloves gives an additional kick to this dish.

Best Thai Lemongrass Fried Rice

Rice ((3 cups cooked rice))

tbsp Butter (use Oil

Vegetable oil

tbsp Lemongrass (finely chopped)

Garlic (finely chopped)

tsp Ginger (grated)

Lemon

Onion (finely chopped)

Green chilies (finely chopped/slit)

tsp Soy sauce

Worcestershire sauce ((use vegan-certified if need))

tbsp Cilantro (for garnish)

tbsp Spring onions (for garnish)

cook rice

Cook the rice according to package instructions. I use 1 ½ cup of water for 1 cup of rice. Add salt and butter while cooking.

Bring it to boil, cover with lid and simmer for 10 minutes. Leave it undisturbed.

If you are using leftover rice, then ignore Step 1.

Step 1

crush garlic

Meanwhile, in mortar and pestle finely crush the garlic cloves and green chilies.

saute lemongrass

Heat oil in a pan. Add finely chopped lemon grass and saute for a minute on low flame.

add aromatics

Add onions, ginger, lemon zest, finely crushed garlic and green chilies, and saute till it becomes translucent. Add a pinch of salt if desired.

add sauces

Add soya sauce and Worcestershire sauce and mix well.

Step 2

Add cooked rice and mix

Add the cooked rice and mix it well combined with the sauteed ingredients.

garnish

Garnish it with cilantro/coriander leaves and spring onions.

Dish is ready. Serve.

Flavored Thai lemongrass fried rice is now ready. Serve hot with crispy potatoes and enjoy.

I love lemongrass flavoured rice. This recipe is so cool . I make a similar rice but cook the rice with coconut milk....and lemongrass infused....
