My Mom makes the BEST stuffing, it&#39;s the one thing I crave every Thanksgiving! This recipe has been remade like Mom&#39;s, only just a bit healthier!

Mom's Stuffing, Lightened Up

center cut bacon (minced)

butter

onion

celery (minced)

sage leaves (minced)

parsley

salt and fresh pepper (to taste)

Bell's Turkey Seasoning (or poultry seasoning)

chicken broth

water

cooking spray

If your bread is fresh, preheat the oven and bake the bread cubes on 2 baking sheets at 250°F for about 30 minutes, stirring half way until the bread is completely firm.

Increase the oven to 350°F.

In a large saute pan over medium heat cook bacon for about 2 minutes. Add butter; when melted add onions, celery, parsley, sage, Bell&#039;s seasoning, salt and pepper and saute on medium low until soft, about 5-10 minutes. Remove from heat and let cool a few minutes.

In  a medium bowl, combine chicken broth and egg.

In a large bowl add bread and combine with sauteed vegetables. Add chicken broth and egg mixture and combine well. If stuffing is too dry, add a little more broth or water until you have the right consistency.

Spray a casserole with cooking spray, add stuffing. (If making ahead cover with foil and refrigerate).

If making alongside a turkey, pour some of the pan juices from the cooked turkey over the stuffing. Bake uncovered 40 to 45 minutes, or until golden.

After years of cooking, I can confidently say this mushroom, walnut, apricot, and cranberry stuffing is my family’s Thanksgiving favorite — perfectly balanced, warm, and full of flavor. It’s the perfect companion to your turkey dinner, always earning seconds and rave reviews!

Our Favorite Bread Stuffing with Mushrooms, Walnuts, & Apricots

white bread

mushrooms (chopped)

celery

walnut pieces

apricots (roughly chopped)

cranberries

poultry seasoning

EACH: salt and pepper

chicken broth (see notes)

mix all ingredients

Preheat your oven to 350 degrees Fahrenheit. In a large bowl, mix the bread, mushrooms, onion, celery, walnuts, apricots, cranberries, poultry seasoning, salt, and pepper.

Pour 1 cup of chicken broth over the stuffing and mix well. If you enjoy a very soft stuffing, add an additional ½ cup of broth.

Transfer the stuffing to a casserole dish and cover tightly with aluminum foil.

Bake the stuffing for 40 minutes, until it is hot and the veggies are tender. Remove the foil and bake for another 5 minutes to lightly brown the top.

I just made this recipe and it turned out great.  We made a couple modifications since we have a nut allergy we used pumpkin and sunflower seeds.  The last modification was that, since I cooked it ahead, I added about a cup and a half of chicken broth to give it additional moisture.
