Candied yams are an old-fashioned African-American recipe. A sweet potato soul food side dish cooked to perfection in a cinnamon-brown sugar glaze.

Black Folks Southern Candied Yams

sweet potatoes (3 -3 ½ pounds)

water (cool water)

water

butter (unsalted butter,

brown sugar

½ cup sugar (granulated)

cinnamon (of ground)

nutmeg

maple syrup

ginger (ground

(ground)

vanilla extract

Wash the sweet potatoes. (I like to use this vegetable scrubber HERE.)

Peel and cut the sweet potatoes into thick round wedges.

Then set them aside to soak in a bowl of cool water to prevent browning while you’re preparing the candied yams syrup.

Melt the butter in a medium-sized bowl in the microwave.

Add the brown sugar, granulated sugar, cinnamon, nutmeg, maple syrup, ginger, ground clove, and vanilla extract to the melted butter.

Mix the ingredients well to create the syrup glaze for the candied yams.

Next, Drain the sweet potato rounds in a colander.

Open the Instant Pot lid and add ½ a cup of water and the sweet potato rounds to the stainless-steel inner pot.

Pour the syrup glaze over the sweet potatoes.

Close the Instant Pot lid (make sure the valve is up – in the position for sealing) and pressure cook on high for 5 minutes.

When the cooking time is finished, allow a natural pressure release for at least 5 minutes.

To open the Instant Pot lid, move the valve to ‘venting’ and manually release any remaining pressure, if applicable.

Optional – Open the Instant Pot lid and sprinkle the miniature marshmallows over the cooked, candied yams.

With the lid placed not entirely on the Instant Pot (in a resting position, so it doesn’t lock back into position on the pot) continue with the setting on ‘keep warm.’

After about 5 minutes, check to see if the marshmallows have melted.

Once the marshmallows are melted, turn off the Instant Pot and transfer your Black folks’ Southern candied yams recipe to a serving dish.

Serve right away and enjoy!

Soul food baked mac and cheese is made with a rich &amp; creamy homemade cheese sauce &amp; yummy Southern spices. Southern comfort food the Black folks way!

Black Folks Soul Food Baked Macaroni And Cheese

unsalted butter (divided – 1 tablespoon & 3 tablespoons)

flour

heavy cream

cheddar cheese (shredded)

Colby-jack cheese (shredded)

salt

black pepper

garlic powder

onion powder

mustard (dried)

paprika

milk (divided – 1 ¼ cups & 3 cups)

macaroni noodles (uncooked)

Turn the Instant Pot on the sauté setting for 25 minutes (although you may not need this entire amount of time).

Fill the Instant Pot stainless steel inner pot with 3 cups of milk, 3 cups of water and 1 tablespoon of butter.

Once the liquid begins to simmer, add the macaroni and cook according to the package directions, stirring occasionally to make sure the macaroni does not clump &amp; stick.

Drain the macaroni and set it aside.

Add the 3 tablespoons of butter to the empty inner pot and turn it back on the sauté setting.

When the butter is melted, add the flour, 1 ¼ cups of milk, and seasonings (salt, pepper, garlic powder, onion powder, dried mustard and paprika) and whisk until smooth.

Change the Instant Pot cook setting from sauté to slow cook for 1-hour (although you will not need this entire amount of time).

While the cook setting changes from sauté to slow cook, allow the ingredients to simmer for about 3 minutes until the mixture thickens slightly.

Stir in the cheeses (reserve some for topping when baking).

Close the Instant Pot with the lid and let slow cook for 5-10 minutes until the cheeses are blended.

Open the lid to add the cooked pasta and the heavy cream to the inner pot, stirring the mixture to blend evenly.

Transfer the pasta mixture into an 8-inch cast iron skillet or baking pan.

Top with the remaining shredded cheese.

Bake in the Instant Pot Omni Plus oven at 350 degrees F for 20 minutes or until golden and bubbly. Or bake in the conventional oven for 25 minutes or until mac and cheese is golden and bubbly.

Optionally, garnish with a sprinkle of dry thyme or 4-5 fresh thyme sprigs.

Serve and enjoy!

Pro tip: For baked mac and cheese the Black way, use milk to coat the macaroni and give it a smooth, silky texture. Perfect for layering on cheese!

The secret ingredient to Black folks shrimp and grits is the Southern Creole sauce! Typical to soul food and Black folks cooking, the seasonings make each recipe like none other. It&#039;s all about the spices and the special sauce.

Black Folks Southern Shrimp And Grits Recipe

shrimp (jumbo, frozen or thawed, peeled and deveined)

avocado oil (or cooking spray)

butter (unsalted)

garlic (minced)

corn grits (white)

chicken broth

heavy whipping cream (and another ½ a cup on reserve in case it’s needed at the end)

butter

mascarpone cheese

heavy whipping cream

smoked paprika

chili powder

cayenne pepper

chicken bouillon (granulated)

parsley (finely chopped)

Remove the Instant Pot lid and turn on the sauté setting for 5 minutes. (Although you will not use all of this time. I like to have the extra minutes for the time it takes for the sauté to become active.)

With the lid off the pot, heat the water, avocado oil, and butter in the stainless-steel inner pot for up to 1 minute.

Add the shrimp, garlic, salt, and pepper.

Cancel the sauté setting and close the Instant Pot lid.

Close the Instant Pot lid (make sure the valve is up – in the position for sealing) and pressure cook on high for 1 minute.

When the cooking time is finished, allow a natural pressure release for at least 2 minutes.

Use a colander to drain the liquid from the cooked shrimp and set the shrimp aside to add to the grits later.

*To prepare shrimp on the stovetop – Heat the butter and oil in a large skillet over medium-high heat and sauté the shrimp with the seasoning ingredients for about 4 minutes until they turn pink.

Instructions for the shrimp

Open the Instant Pot lid and add the chicken broth, grits, salt, and butter to the stainless-steel inner pot.

Close the Instant Pot lid (make sure the valve is up – in the position for sealing) and pressure cook on high for 10 minutes.

Pour in the heavy whipping cream.

Stir the grits to combine the ingredients.

Add the mascarpone cheese and continue stirring.

Remove the stainless-steel inner pot with the grits inside so they don’t dry out.

Cover the Instant Pot stainless steel inner pot with the Instant Pot lid to keep the grits warm while off of the Instant Pot burner.

*To prepare the grits on the stovetop – In a large saucepan, bring the whipping cream and salt to a boil, then stir in the grits. Reduce the heat to medium-low and cover, stirring occasionally. After 5 minutes, fold in the mascarpone cheese.

Instructions for the grits

(You may need to transfer the grits to the skillet at this point if you only have one Instant Pot because you will need to use the stainless-steel inner pot for the sauce.)

Add the heavy whipping cream, smoked paprika, chili powder, garlic powder, cayenne pepper, and chicken bouillon to the empty Instant Pot stainless steel inner pot.

Turn on the sauté setting for 10 minutes. (Although you will not use all of this time. I like to have the extra minutes for the time it takes for the sauté to become active.)

All the sauté to come to a boil and let boil for about 3-5 minutes.

Cancel the sauté setting and stir in the parsley.

Remove the shrimp and grits sauce in the stainless-steel inner pot from the Instant Pot burner.

While the sauce is boiling, keep watch of it and occasionally stir to avoid overcooking and burning.

*Preparing the sauce on the stovetop – In a medium-sized saucepan, stir together the whipping cream and spices and bring to a boil. Reduce the heat to medium and simmer for 15 minutes.

Instructions for the Southern shrimp and grits sauce

Add the grits to a 10-inch cast-iron skillet.

Optional: you can mix in 1/4 – 1/2 a cup of heavy whipping cream to loosen the grits if needed.

Place the cooked shrimp on the grits.

Then pour the sauce over the shrimp and grits.

Heat the skillet with the shrimp and grits in the Instant Pot Omni Plus oven on the ‘warm’ setting for 5-7 minutes or 5 minutes in the conventional oven on the ‘warm’ setting or 150 degrees F.

Remove the skillet from the oven, serve Black folks’ shrimp and grits right away, and enjoy!

½ teaspoon Old Bay seasoning (or Cajun or Creole seasoning)

Clean the collard greens and cut off the stems.

Then roughly chop the leaves in half through the midline and then into bite-sized pieces.

Open the Instant Pot lid and add the wet ingredients (chicken stock, vinegar, Worcestershire sauce, honey, and hot sauce to the stainless-steel inner pot.

Next, add the onion, tomatoes, garlic, Old Bay or Cajun seasoning, red pepper flakes, salt, pepper, and stir to combine the ingredients.

Finally, add the collard greens, followed by the cooked turkey leg.

Press down to sink the greens as much as you can into the liquid broth.

Close the Instant Pot lid (make sure the valve is up – in the position for sealing) and pressure cook on high for 15 minutes.

When the cooking time is finished, allow a natural pressure release for at least 15 minutes.

Serve Black folks’ soul food collard greens right away and enjoy!
