Prepare ingredients

Homemade V8 Juice (Original Copycat)

lbs roma tomatoes (about 8-10), quartered

Simmer the Tomatoes

Place the quartered tomatoes in a medium saucepan with 1/2 cup of the water. Bring to a gentle simmer over medium heat. Cook for 5-7 minutes, stirring occasionally, until the tomatoes have softened and started to break down. This quick cook is crucial for developing a deep, less acidic flavor. Remove from heat and let it cool for a few minutes.

Prepare the Blender

To your high-powered blender, add the cooled simmered tomatoes (and any liquid from the pan), the remaining 1/2 cup of cold water, chopped carrots, celery, beets, parsley, and spinach.

Blend Until Smooth

Secure the lid and start blending on low, gradually increasing to high speed. Blend for 60-90 seconds, or until the mixture is completely smooth and liquified. If your blender is small, you may need to do this in two batches.

First Taste & Season

Pour a small amount into a glass to taste. Now, add the fresh lemon juice, kosher salt, black pepper, and garlic powder (if using). Blend again for 10-15 seconds to fully incorporate the seasonings.

Strain for a Silky Texture

Place a fine-mesh sieve or a nut milk bag over a large bowl or pitcher. Pour the blended juice through the strainer. Use the back of a spoon or a spatula to press the pulp against the mesh, extracting as much liquid as possible. This step is non-negotiable for achieving that authentic, smooth V8 texture. Discard the pulp (or save it for soups or stocks).

Chill and Serve

Taste the strained juice one last time and adjust salt or lemon juice if needed. For the best flavor, transfer the juice to a sealed glass jar or pitcher and chill in the refrigerator for at least 1 hour before serving. Serve cold.
