Preheat the waffle iron to the high heat setting.

In a medium bowl, mix the all-purpose flour, whole wheat flour, baking powder, cinnamon, and kosher salt until thoroughly combined. In another bowl, whisk the egg. Then stir in the melted butter, milk, vanilla, and maple syrup. Pour the wet ingredients into the dry ingredients and mix gently until just combined. Stir in the blueberries.

Immediately, add the batter into the center of the waffle iron and let it spread it to within 1/2-inch of the sides, then cook according to the waffle iron’s instructions. Remove the cooked waffles and place them on a baking sheet without stacking. Make the waffles to order, or place cooked waffles in a 300°F oven to keep warm. Serve with Quick Blueberry Sauce. (As a note, these blueberry waffles stick to the waffle iron a bit more than a standard waffle, so make sure to clean it afterwards.)

Cooked waffles can be frozen; place them in a plastic bag and remove the remaining air with a straw before sealing. To reheat, remove from the freezer and lightly toast in a toaster.

These fluffy Blueberry Waffles are one of the easiest ways to get you out of bed in the morning and they are super easy to make too.

Blueberry Waffles

flour

Sugar

tsp Baking soda

250 ml Skimmed milk

tsp Vanilla extract

g Butter (melted)

g Blueberries (for the batter)

Put 130 g Plain flour, 2 tbsp Sugar and 1 tsp Baking soda into a large bowl and mix.

In a smaller bowl, whisk 1 Egg and add 250 ml Skimmed milk, 1 tsp Vanilla extract and 25 g Butter (melted) and mix well.

Pour the wet mixture into the flour mixture and gently stir to form a batter. Gently fold in 100 g Blueberries.

Oil your waffle iron and pour half the mixture into it and close the lid. Cook according to your waffle iron instructions. Ours took around 3-4 minutes to cook. Repeat with the rest of the batter mixture.

Serve with yoghurt or cream and extra blueberries on top.

the waffles look delicious! I tried to make them immediately, and they are really delicious. They are very easy to make and quick to finish, another plus point. They are very airy and crunchy, even the berries are a perfect combination. At home they all loved it, even the ones who don't like sweets or who are on a diet! I'm going to recommend this recipe to everyone who likes healthy candy.
