In a medium saucepan over medium heat, combine the butter, sugar, cocoa powder, salt, and milk. Bring to a boil, stirring constantly. Once boiling, cook for 2 minutes. Remove from the heat and stir in the peanut butter, oatmeal, vanilla, pecans, and coconut. Stir until combined.

Drop by heaping teaspoonfuls onto wax paper and allow to set and harden. Store in an airtight container.

Classic Southern Potato Salad

sweet onion, minced (about 1/4 cup chopped)

Wash, peel, and cut the potatoes into about 3/4-inch cubes.

Place the potatoes in a large pot and cover with water. Add the salt. Bring to a boil then reduce the heat to simmer and cook until the potatoes are tender, but still firm.

Drain the potatoes and immediately sprinkle them with the vinegar.

In a small bowl, whisk together the mustard, mayonnaise, and pickle relish to make the dressing.

In a large bowl combine potatoes, eggs, onion, and dressing and lightly toss to coat. Add salt and pepper to taste. Enjoy warm or allow the flavors to dvelop further in the refrigerator for several hours. Adjust seasoning to taste after refrigeration before serving.

Boiled Cake (aka Depression Cake, War Cake, Poor Man's Cake)

vegetable shortening

In a saucepan combine shortening, water, raisins, cinnamon, nutmeg, allspice, cloves and sugar. Bring to boil, reduce heat, simmer for 10 minutes. Remove from heat and let stand until COMPLETELY cool.

Preheat oven to 350 F degrees. Grease and flour a 9 x 13-inch baking pan, a Bundt pan, or 9 x 5-inch 2 loaf pans.  Set aside.

Stir the flour and baking soda into the cooled raisin mixture and mix until just combined and flour is mostly incorporated.

Pour batter into prepared pan. Bake 30 minutes for a 9 x 13-inch pan or until the top of the cake is just firm to the touch.  Remove from oven and allow to cool.

Traditionally served un-frosted.

We made the simplest and best dish one can make with super duper fresh octopus: Boiled Fresh Octopus 白灼新鮮八爪魚 served simply with a soy sauce and wasabi dip.  So fresh and yummilicious!

Separate the head from the tentacles.  Remove the eyes, teeth, cartilage spine and whatever else that is in the octopus head.  Rinse your octopus in running water for a minute.  DO NOT cut up the octopus now. 

In a large pot, heat enough water to cover the octopus by an inch or so.  When the water boils add the octopus.  When the water reboils, cover and cook 5-15 minutes according to your preference.

Remove from water immediately and let cool completely.

Slice tentacles at an angle into 1/4 inch thick slices and the head meat into neat strips.

Serve with a dip of soy sauce with a dash of wasabi!

Forget everything you think you know about boiled cabbage – I&#39;ve found a way how to cook cabbage that keeps plenty of flavors and makes a mean side dish for any occasion.

Quick Boiled Cabbage Recipe

53 oz cabbage (1 large head)

oz butter (1/4 cup melted (1/2 stick))

tsp black pepper

Rinse the cabbage thoroughly and, if needed, remove a few of the outer leaves along with the core.

Slice the cabbage into six wedges – first in half, then each half into three.

Add the water and salt to a large pot or dutch oven. Bring to a boil over medium-high heat then add the cabbage (the pot should be about ¼ full). 

Simmer for 8 to 10 minutes. Then, carefully turn the cabbage and simmer for an additional 8 minutes or until tender (the thickest part should be knife/fork tender). 

While the cabbage is boiling, melt your butter – you can microwave it or do it in a saucepan over low heat. Make sure it doesn&#39;t brown. 

Once the cabbage is done, carefully remove it with a slotted spoon and drain the water from the pan. Place the pan on low heat and allow the moisture to evaporate – the pan should run dry. 

Add the cabbage back into the pan and add the melted butter so it completely coats the wedges. Season to taste with salt and pepper.

Store: Allow the cabbage to cool completely before transferring it into a shallow, airtight container or wrapped in aluminum foil. Stored properly, the boiled cabbage will last between 3-5 days, though is best enjoyed fresh or within a day or two of cooking. Freeze: Allow to cool then transfer it to an airtight container or in freezer-safe bags. Keep in the freezer for up to 10 months.
