Spicy Onion Bhaji Slaw Sandwich

wholemeal bread

rocket (also known as arugula)

onion bhajis

tbsp coronation coleslaw

mango chutney

Spread one slice of bread with the mayo and top with a layer of rocket.

Top with onion bhajis in one layer, you may fit more than two on depending on the size.

Add a layer of coronation coleslaw.

Spread the other slice of bread with mango chutney, top your sandwich and cut in half.

I make these fairly regularly for lunch or when we’re going on long car journeys, as well as for light lunches.



Although I’ve used wholemeal bread rolls in these photos, this lovely sandwich filling works just as well in crusty white bread rolls.



This recipe is also fabulous when made in a baguette - 1 standard baguette will yield 4 portions. 



These sandwiches have all the elements of a ploughman’s lunch, but in a roll, which all my family really enjoys. 



I used a popular supermarket sweet pickle last time I made these, but homemade pickle or chutney works, and of course, my husband’s favourite, Branston Pickle is a winner.



I always use an extra mature or vintage cheddar cheese in these rolls, as you need a cheese with a bit of attitude, and which isn’t overwhelmed by the other ingredients. 



Use a good salted butter too, for that extra layer of flavour, and a little sea salt on the tomato. 



We are a family of smoked ham lovers, however, do add your favourite ham - home-cooked ham is sublime in these sandwiches. 



Iceberg lettuce has a bad rap, and I must admit it’s not my favourite lettuce in a salad; but it’s perfect in this loaded bread roll, as its retains its crispness and adds a bit of a crunch.

Ploughman's Lunch Rolls

x bread rolls,

Salted butter

Iceberg lettuce, finely shredded

x red onion,

x tomatoes, thinly sliced, or 8 x cherry tomatoes halved

salt

extra mature or vintage Cheddar cheese, sliced

Sweet pickle, Branston pickle or chutney to taste

Butter both halves of the bread rolls.

Layer the sandwich as in the list of...

Layer the sandwich as in the list of ingredients, except the pickle, on one half of the bread roll - lettuce, onion slices, sliced tomatoes with a little sea salt, cheese and ham.

Spread or spoon the pickle on the other...

Spread or spoon the pickle on the other bread roll half and place on top of the filling. 

Cut in half and serve with potato salad, ...

Cut in half and serve with potato salad,  crisps and other pickles such as gherkins, or pickled onions.

Makes 4 x Ploughman’s Lunch rolls.
