Creamy Broccoli Pasta

oz pasta ((e.g. tagliatelle

olive oil

broccoli ((frozen is fine too))

onion

garlic

vegetable broth

oz cream cheese

tsp honey

lemon juice

salt and pepper

tsp chili flakes

black olives ((pitted))

feta cheese ((crumbled))

sunflower seeds ((pan fried))

Bring water to a boil and cook the pasta according to the package instructions.

If you're using frozen broccoli, throw it in a pan right away with 3 tbsp of olive oil and cover with a lid - the broccoli thaws more quickly.

If using fresh, wash and cut the fresh broccoli into small florets. Next, peel and dice the onion; same with the cloves of garlic.

Heat up the olive oil in a pan, then add the broccoli, onion and garlic. On medium heat let everything simmer for 5 minutes.

Now it’s time to add the cream cheese.

Now slowly pour in the vegetable broth. NOTE: If you think the mixture is getting watery, stop pouring!

Once ready, drain the pasta in a sieve. Now add them to the broccoli cream mix. Cook on medium heat for another 5 minutes

Add salt, pepper and a few chili flakes to taste. To give it another kick, give a few splashes of lemon juice and a tsp of honey to the mix.

Serve! :-)

Broccoli and Penne Pasta Recipe

onion (finely chopped)

olive oil (extra virgin)

tomato sauce (low sodium)

stock

tbsp balsamic vinegar

tbsp rosemary (fresh

tsp thyme (dried)

tsp salt

tsp black pepper (ground)

hot pepper flakes

penne pasta (uncooked)

broccoli florets

3 oz Mozzarella cheese, shredded

parsley/basil (finely chopped)

Preheat large deep skillet on medium heat and add olive oil, onion and garlic. Saute until translucent, stirring occasionally.

Add tomato sauce, stock, balsamic vinegar, rosemary, thyme, salt, pepper and hot pepper flakes. Stir and bring to a boil.

Add pasta and stir again.

Bring to a boil, cover, reduce heat to low and cook for 15 minutes, stirring every 5 minutes.

Add broccoli, cover and cook for 3 minutes for crispy broccoli and 5 - 6 minutes for softer vegetables.

Turn off heat, add cheese and stir until melted.

Garnish with parsley or basil and serve hot.

Cook the angel hair pasta according to the directions on the box. Drain and set aside.

Take the broccoli and chop the florets off the stalk. Then, slice the stalks lengthwise into small sticks and finely dice them.

In a large cooking pot, add the olive oil, butter, red pepper flake, and garlic. Stir the ingredients together as the butter melts, and then pour in the vegetable broth.

Add the broccoli florets and stalks, and then the salt. Make sure the broccoli is fully submerged in the liquid. Cook on the stove top for 20 minutes, until it’s tender.

Add the cream, Parmesan cheese, and angel hair pasta. Stir everything together and then let it rest for 10 minutes.

Using tongs, give the pasta another stir. Then, sprinkle Parmesan cheese on top. Serve immediately with another sprinkle of Parmesan.

Stovetop Broccoli & Cheese Chicken Pasta

egg noodles

unsalted butter

all purpose flour

tsp kosher salt

tsp black pepper

chicken broth

cheddar cheese

chicken breast (cooked)

broccoli florets (steamed)

milk

Prepare egg noodles according to package directions, drain and run under cool water to stop cooking.

Melt butter into a medium saucepan over medium heat. Whisk in flour, salt and pepper, whisking until thick and combined. Slowly whisk in chicken broth until combined. Increase heat to high and whisk until thick and bubbly. Reduce heat to low and stir in cheese until melted.

Transfer cooked noodles to a large dutch oven or pot over low-medium heat. Add chicken, broccoli and cheese sauce, stirring; will be thick. Stir in milk to loosen sauce to your liking. Serve immediately. This dish does best when served as soon as possible. If needed to be prepared ahead of time, add additional milk or chicken broth to loosen sauce.

Broccoli Pasta Bake

350 g pasta, penne or rigatoni (3 1/2 cups)

broccoli

onion (finely sliced)

g butter (3 tbsp)

g flour flour

semi-skimmed milk

thyme leaves

tbsp wholegrain mustard

g panko breadcrumbs

tsp sea salt

tbsp finely chopped parsley (optional)

Preheat the oven to 190C/374F.

Heat the butter in a saucepan. Add the chopped onion and cook over a low heat until the onion is soft, about 20 minutes should do the trick.

Add the flour to the onion and stir well, until you have a smooth paste.Switch from using a wooden spoon to a whisk then start adding the milk slowly, whisking continuously.Once all the milk has been added leave the sauce to simmer for a minute or two then whisk in 1 tbsp of wholegrain mustard, 2 cloves of minced garlic and 1 tbsp of thyme leaves. Simmer again for a few minutes, the sauce should now be silky smooth.Whisk in 2-3 tbsp of water from the cooking pasta.

Turn off the heat then add 70g of grated cheddar and 30g of finely grated parmesan. Stir well and season with salt and black pepper. Set aside until you&#039;re ready to use it.

Make The Sauce

Cook the pasta according to the packet instructions minus 5 minutes.About 5 minutes before it is due to be drained add the broccoli florets and cook them both together for about 5 minutes.Drain the pasta and broccoli then tip it all into a large casserole dish.

Cook The Pasta

Pour the sauce over the pasta and broccoli and gently mix it all together.In a small bowl mix together the panko breadcrumbs and the remaining cheddar and parmesan.Sprinkle the cheese and breadcrumb mixture over the pasta then cover the dish loosely with kitchen foil. Place the dish in the oven and cook for 20 minutes. Remove the foil then transfer the dish to under the grill and cook for about 10 minutes or until the topping is golden brown and crispy and the cheese has melted.Leave it to cool slightly then serve. If you want you can sprinkle some finely chopped parsley over the finished dish.

Make The Pasta Bake

Would make this again but next time would double the sauce.  Ours was dry but could taste the sauce that had soaked into the pasta.  Quite good!

This tasted totally delicious. I looked up at least 10 recipes before I settled on this one. The only thing was, it took one and a half hours to wash and chop everything, and peel the leaves off the thyme branches and chop them, and grate the cheeses. So, I wouldn't call this quick and easy, though it was very delicious. I have one person in my household who loves pine nuts, so I also toasted some pine nuts for her to sprinkle over.
