Brunswick Stew (AKA BBQ Stew)

olive oil

onion

red bell pepper (diced)

celery (chopped)

garlic (finely minced)

chicken thighs (diced)

pork

smoked brisket (chopped)

chicken stock

tomatoes (with liquid)

corn

ketchup

BBQ sauce

Worcestershire sauce

salt and pepper

hot sauce

In a large Dutch oven, heat your olive oil over medium heat. Saute the onions, bell pepper, and celery until soft (about 10 minutes). Stir in the garlic and cook another 3-4 minutes.

Slowly stir in the chicken thighs, brisket, and pulled pork. Pour in the chicken stock, canned tomatoes, corn, ketchup, BBQ sauce, Worcestershire sauce, salt, pepper, and hot sauce.

Bring the stew to a boil and reduce the heat to a simmer. Place a lid on the pot and simmer, stirring occasionally, for 45 minutes or until thickened to desired consistency.

Serve warm with crusty bread.

Brunswick Stew - How To

Brunswick Stew is a classic southern dish full of delicious smoked pork, veggies, and a savory barbecue broth. It’s the perfect way to warm up on a chilly fall day, or just when you’re craving a taste of the south!

Brunswick Stew

Tablespoon butter

garlic, (minced)

yellow onion, (finely chopped)

(15 oz) can fire roasted tomatoes (undrained)

barbecue sauce ((I used Sweet Baby Ray's))

brown sugar

cayenne pepper

frozen corn

lima beans

Salt and pepper (to taste)

Melt butter in a large Dutch oven over medium-high heat. Once melted, add the garlic and onions and saute until soft, about 5 minutes.

Stir in the tomatoes, chicken stock, barbecue sauce, Worcestershire, brown sugar, cayenne, smoked pork, lima beans, corn and salt and pepper.

Bring the mixture to a boil, then reduce to a simmer and cook over medium-low heat for 1 1/2 hours, stirring occasionally.

A classic Southern barbecue side dish combining meat and a variety of vegetables.

Old Fashioned Brunswick Stew

14.5 oz canned diced tomatoes

19 oz canned whole kernel corn (drained (two cans))

catsup

Put the ham bone in a large cooking pot with the water. Bring to a boil, reduce the heat, cover and simmer for 1 hour.

Add the chicken to the pot along with the bay leaves, thyme, parsley, celery, onions and peppercorns.

Simmer, uncovered, until the chicken is cooked through and tender – approximately 1 1/2 hours. When tender, set the chicken aside until cool enough to handle.

Remove and discard the bones and skin from the chicken.

Finely shred the chicken meat and return to the broth.

Add the onion, butterbeans or baby lima beans, corn, potatoes, diced tomatoes, barbecue sauce, catsup, salt and red pepper flakes, if using. Add more water if needed to make a thick soupy stew.

Cook for 45 minutes to 1 hour or until the vegetables are tender

Add pulled pork, roasted chicken, frozen corn, frozen lima beans and adjust heat to bring stew back to a simmer. Continue to simmer for 30-45 minutes or until stew is nice and thick

(28 oz) can crushed tomatoes

(18 oz) bottle barbecue sauce

potatoes, (peeled and cubed)

(15 oz) can northern beans, (drained and rinsed)

In a large stock pot, brown and crumble ground beef along with diced onions over medium heat. When the ground beef is cooked, drain excess grease.

Put ground beef back into large pot.

Add in can of crushed tomatoes, pinto beans, drained northern beans and corn.

Next add 5 cups of beef broth along with diced potatoes and bottle of barbecue sauce.

Give it all a good stir.

Cover pot and simmer on medium heat for about 30 minutes (until your potatoes are fork tender).

Add shredded chicken, pulled pork, and shredded beef - or mixture thereof - to a large, heavy-bottomed stew pot over medium-low heat. Add beef stock, onion, potatoes, beans, corn, diced tomatoes, ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, Stone House seasoning and cayenne pepper to the meats.

Simmer over medium-low heat until thoroughly heated and all flavors have had time to combine, about 30 minutes.

Serve warm.

Rinse the fryer under cold running water.

Place fryer in large stock pot and cover with water about 6 inches over chicken.

Bring to a boil, reduce heat to medium and let chicken cook for one hour.

Remove cooked chicken from pot, set aside to cool.

Place the frozen baby lima beans and frozen corn in a colander.  Rinse well.

Add the beans and corn to a large stock pot.

Wash, peel and cut up the potatoes, add to the beans and corn.

Add enough water to cover the vegetables by about 2 inches.

Cook over medium heat, stirring often, until vegetables are tender.  About one hour.

While the vegetables cook, pull the chicken meat from the bones.  Discard bones and skin.

When vegetables are done, remove any excess liquid, leaving just enough to reach top of vegetables.

Return to stove top and simmer on medium, stirring often, until warm, prior to serving.

Stock or liquid from vegetables may be added if needed to obtain desired consistency.

Steve, this Brunswick stew was mighty tasty. I live in Maryland and don't have access to fine Carolina BBQ. But I do have a friend from Raleigh who always brings me a bottle or two of Carolina Treat. I made this about a month ago and my family and I LOVED it!  The only change that I made, was instead of using apple cider vinegar, I used some Eastern NC vinegar based bbq sauce, because I didn't have any apple cider  vinegar.  My family is from that area, so it really brought me back.  I am actually making it again today.  This is my go to recipe for Brunswick Stew.  Thank you so much!
