Cajun Shrimp and Sausage Pasta is a hearty dish that will satisfy a crowd! Spicy Andouille Sausage, and Cajun Shrimp on top of a creamy bed of noodles and fresh veggies, for a filling weeknight meal that will impress even the pickiest eaters!

Cajun Shrimp Sausage Pasta

box (10 ounces) fettucini noodles

shrimp, (peeled and deveined and tail removed)

kosher salt, (to taste)

black pepper, (to taste)

cajun seasoning

oregano

olive oil

andouille sausage

zucchini, (halved lengthwise and sliced thin)

yellow onion, (diced)

red peppers,

brown sugar

garlic, (minced)

tomatoes

chicken broth

heavy cream

parmesan

fresh chopped parsley, (optional)

Add pasta to a large pot of boiling water that has been salted. (Anywhere from 1-2 tablespoons of salt.) Cook to al dente, 8-10 minutes.

Remove pasta from water and drain.  Set aside (if you are worried about the noodles sticking together you can toss them in a little bit of oil or butter).

In a bowl, toss shrimp with salt, pepper, and cajun seasoning and make sure it is well coated.

Heat a large skillet (12-inches) over medium-high heat and drizzle olive oil in pan.

Add shrimp and cook for about 2 minutes. Flip shrimp over and cook another minute, or until pink and firm.

Remove shrimp from pan to a plate, set aside.

Add the cut-up sausage to the pan you just removed the shrimp from. Cook sausage until lightly browned, about 3-4  minutes each side. Remove from pan to a plate, set aside.

In the same pan you cooked the sausage in, lower the leat to medium.

Add 3 tablespoons olive oil and then the chopped zucchini, onion, red pepper, cajun seasoning, and brown sugar.  Toss everything together to evenly coat.  Cook until the veggies are soft, about 3-5 minutes.

Add minced garlic and cook and stir until fragrant, about 30 seconds.

Add the crushed tomatoes, chicken broth, and heavy cream. Bring to a simmer, stirring and scraping the pan with tongs to get up any brown bits from the bottom. Simmer for about 5 minutes.

Add in parmesan, cooked pasta, shrimp, and sausage. Stir (toss all ingredients together and continue simmering until heated through (about 2-3 minutes).

Serve in skillet and garnish with chopped parsley. (optional)

Bring a large pot of salted water to a boil; add the pasta and cook according to package directions.

While the pasta is cooking, melt 1 tablespoon of the butter in a large pan over medium heat.

Add the onions and peppers and cook for 4-6 minutes or until softened. Season with 1 teaspoon of the Cajun seasoning.

Add the sausage and cook for 2-3 minutes, stirring frequently.

Season the shrimp with the remaining teaspoon of Cajun seasoning and add them to the pan, cooking for 2-3 minutes or until pink and opaque.

Drain the pasta and return to the pot it cooked in. Turn the heat on medium high and add the cream and butter along with salt and pepper to taste. Cook for 3-4 minutes or until sauce has started to thicken. Stir in parmesan cheese.

Place the shrimp and sausage mixture on top of the pasta and sprinkle with parsley. Serve immediately.

This easy family friendly fettuccine pasta combines  pan seared garlic shrimp with a creamy Cajun seasoned pasta sauce.

Cajun Shrimp Pasta

fettuccine noodles

lb jumbo gulf shrimp, peeled and deveined

creole seasoning

butter

shallots

garlic

heavy whipping cream

Parmesan cheese

Cook noodles according to package instructions and drain well.

Pat shrimp dry with paper towels and sprinkle them with 1 1/2 tablespoons creole seasoning turning halfway through.

In a large skillet melt butter over medium high heat.  Add shallots and cook for 5 minutes. Add shrimp and cook for 2-3 minutes flipping halfway through. Add the garlic to the skillet with the shrimp in the last 30 seconds of cooking and stir constantly.  Do not crowd the pan with shrimp.  If necessary plate the shallots, shrimp and garlic then add a little butter to the skillet and cook the remaining shrimp. Remove mixture to a plate and set aside.

Add the chicken broth to the skillet and cook to reduce by half while scraping the bottom of the skillet to remove any brown bits. Reduce heat to low, add the cream and cook to reduce by half; stirring often.  Slowly whisk in Parmesan cheese. Season to taste with creole seasoning. Add the shrimp and shallot mixture back to the pan with the sauce. Add the cooked fettuccine noodles back to the pan and toss to coat.  Top with a sprinkle of chopped parsley.

My wife and I had great fun making this dish.  We substituted unsweetened coconut milk for the heavy cream.  it worked great.  I also added sautéed mushrooms to my plate which enhanced the flavor and texture for me.

Creamy Cajun Mushroom Pasta

lb. dried spaghetti pasta

unsalted butter

mushrooms (sliced)

red bell pepper (rinsed, seeded, and chopped)

garlic (minced)

Salt and black pepper (to taste)

onion powder

garlic powder

Italian seasoning

paprika

cayenne pepper

Cook spaghetti pasta until al dente in salted water according to package instructions. Drain the pasta, reserving about a cup of pasta water, and set it aside.

Melt butter in a large, deep skillet or Dutch oven over medium-high heat. Add mushrooms, onion, and bell pepper and cook until the vegetables have softened, about 5-7 minutes. Add the garlic and cook for another minute.

Season the veggies with salt, pepper, garlic powder, onion powder, Italian seasoning, paprika, cayenne, and crushed red pepper. Add Worcestershire sauce and give everything a good stir with a wooden spoon to combine all of the ingredients.

Add half and half to the mushroom mixture and stir to combine. Reduce heat to medium and simmer the sauce until it thickens slightly, about 5-7 minutes.

Add cooked spaghetti to the pan with the sauce and add about 1/4 cup of the reserved pasta water. Toss everything with silicone tongs to combine, ensuring all of the spaghetti noodles get coated with the sauce.

Simmer pasta while continuing to toss with tongs, until the sauce thickens a bit more, about 2-3 minutes. If the pasta seems a little dry, add more pasta water until a creamy consistency is reached. I ended up adding about 1/2 cup.

Add in grated and shredded parmesan, season with more salt and pepper to taste,  and give the pasta one final toss. Serve pasta immediately, topping each serving with more grated parmesan. Enjoy!

Bring a large pot of salted water to a rolling boil. Stir in the pasta, and cook according to the package directions.

Drain the pasta in a large strainer, and run it under cold water (gently stirring) to stop all of the pasta from continued cooking. Continue until all the pasta&#039;s cooled to the touch. Set it aside to drain completely.

In a large mixing bowl, whisk together the remaining ingredients, except for the celery and onions. Whisk until smooth. If the mixture&#039;s too thick, add a tablespoon or two of water.

Season the sauce as needed with additional salt &amp; pepper. Add the pasta, onion, and celery to the pot and toss gently to coat.

In a large skillet or Dutch oven pot (you will need a lid to cover the pot later), heat the olive oil and butter over medium-high heat.

Once the butter is melted, add the chicken to the pan. Sprinkle salt and pepper over the chicken, then add the onion and bell peppers to the pan. Cook, stirring often, until the chicken is lightly browned and the veggies start to soften, about 6 minutes.

Add the garlic and Cajun seasoning and cook, stirring, for 1 minute.

Pour in the chicken broth and water. Stir, and scrape up any bits that are stuck to the bottom of the pan.

Stir in the pasta and bring to a simmer. Reduce the heat to a medium simmer and cover. Cook, stirring occasionally, until the pasta is cooked to al dente, about 15-18 minutes. Almost all of the liquid should be absorbed by the pasta.

Once the pasta is cooked, uncover the pan and turn the heat down to low. Stir in the Parmesan cheese, cream cheese and chopped spinach. Stir until the cream cheese melts and then remove from the heat. Serve.
