Instant Pot Dirty Rice

Set to Sauté: Set the Instant Pot to &#039;Sauté&#039;, use the &#039;Adjust&#039; button to set the heat level to &#039;More&#039;, and allow the pot to heat up.

Cook the Ground Pork &amp; Beef: As soon as the digital display reads &#039;Hot&#039;, add the ground pork to the pot and separate it into small pieces using a large spatula or spoon. Next, add the ground beef and cook both the pork and beef together, breaking them apart into smaller and smaller pieces as they cook. Continue until they are cooked through, about 8 to 10 minutes.

Add the Veggies, Herbs &amp; Spices: Add the onion, celery, bell pepper, jalapeno, garlic, Better than Bouillon, creole seasoning, and pepper. Mix the veggies and seasonings into the meat and cook until the onions and peppers are soft. About 2 to 3 minutes.

Cancel Sauté: Cancel out of the Sauté function.

Add the rice and chicken stock to the pot and give all the ingredients a good stir, mixing the rice into the meat and vegetables while fully deglazing the bottom of the pot. Finally, add the 2 bay leaves.

3-Minute Cook Time: Close the Instant Pot and set the pressure release valve to &#039;Sealing&#039; and then set the pot to cook on &#039;Manual&#039; / &#039;Pressure Cook&#039;, &#039;High Pressure&#039; for 3 minutes.

10-Minute NPR: Once the cook time has completed, allow for a 10 minute NPR (natural pressure release). Release any remaining pressure after the ten minute NPR has completed.

Easy Cajun Dirty Rice Recipe (One Pot!)

tsp Neutral Oil ((such as canola or vegetable))

Ground Pork Sausage ((or ground beef, chopped chicken livers or gizzards))

Andouille Smoked Sausage (– diced)

Bell

Yellow

Ribs Celery (– small dice (about ¾ cups))

Cloves Garlic (– peeled & minced)

½ tsp Cajun

Cayenne Pepper

Salt & Ground Black Pepper

Cups Uncooked Long-Grain White Rice (about 13 ounces)

Cups Unsalted Broth (– Beef or Chicken Broth)

Bay Leaf (- OPTIONAL)

Brown pork sausage

Brown pork sausage: In a Dutch oven or high-sided large skillet, heat the oil over medium-high heat. Add the pork sausage and cook, undisturbed for 2 minutes. Use a spatula to flip the pork over and season with salt and pepper. Continue to cook, undisturbed for an additional 2 minutes. Use a wooden spoon to stir and break the pork up into large crumbles. Cook the crumbled of pork 1 more minute undisturbed. Use a large, slotted spoon to remove the sausage to a paper towel-lined plate and set aside. (Note: Pork will continue to cook in next steps)

Brown andouille

Brown the andouille: Add the andouille sausage to the pan. Cook, undisturbed for 2 minutes. Stir and continue to cook, stirring occasionally, until the andouille is well caramelized about 2 additional minutes. Use a large, slotted spoon to remove the andouille sausage to a separate paper towel-lined plate and set aside. (Note: If you have a lot of fat in the pan, drain off or blot all but 1 tablespoon of fat from the pan before proceeding with the next step.)

Add vegetables

Add vegetables + seasonings: Reduce the heat to medium and add the bell peppers, onion and celery. Cook, stirring occasionally, until the vegetables are softened, about 6-8 minutes. Add the garlic, Cajun seasoning and cayenne. Season with ½ teaspoon of salt and ¼ teaspoon of pepper. Cook until fragrant, about 30 seconds to 1 minute.

Add rice and broth

Add the rice + broth: Return the pork sausage to the pan. Add the rice, broth and bay leaf (if using). Stir everything together, using the back of your spoon to gently scrape up any brown bits stuck to the bottom of the pan.

Cover and simmer

Boil, Simmer, Cover and Cook: Bring the mixture to a boil over medium-high heat and then immediately reduce the heat to maintain a simmer. Cover the pan and simmer for 20-22 minutes, or until the rice is cooked and tender.

Steam covered

Let steam off heat then add andouille: Remove the pan from the heat and let sit COVERED for 5 minutes. Remove the cover. Remove and discard bay leaf. Fluff the rice with a fork and stir in the andouille. Taste and adjust for seasoning with salt and pepper.

Serve

Serve: Garnish with green onions and parsley. Serve and enjoy!

Cajun Rice

Add the butter to a medium-sized saucepan over medium-high heat. Do not allow the butter to burn. As soon as the butter has melted, add the diced peppers and onion and stir to coat. Sauté for 5-7 minutes until softened.

Add the chicken broth, salt, garlic powder, thyme, paprika, pepper, and bay leaf to the saucepan and allow the mixture to come to a boil.

Add the rice, stir, and top with a lid. Reduce the heat as needed to maintain a simmer.

Simmer for 20-25 minutes, until the rice is cooked through and tender to your liking. Set aside for 10 minutes, covered.

After the resting time, fluff the rice with a fork, serve and enjoy!

Cajun Dirty Rice with Smoked Sausage

rice

Cook the rice in 2 cups of chicken stock until tender according to package instructions. Fluff the rice with a fork and set aside.

In a medium heavy-bottomed skillet over medium-high heat, melt butter with the olive oil. Add the smoked sausage to the skillet and cook until the sausage is browned, about 3-5 minutes.

Add the onion, bell pepper, and celery and cook until the veggies begin to soften, about 2-3 minutes. Add the garlic and cook until fragrant, about another minute.

Season the sausage and vegetables with garlic powder, onion powder, smoked paprika, dried thyme, dried oregano, salt, black pepper, and cayenne pepper and stir with a wooden spoon.

Add a little bit of chicken stock to the skillet to deglaze the pan, scraping up any brown bits with the wooden spoon. Add the cooked rice to the skillet and stir to combine the rice with the veggies and sausage. Continue to cook while stirring for another 2 to 3 minutes. Add a little more chicken stock if needed so that the rice isn't dry.

Remove the pan from the heat and transfer the rice to a serving dish. Garnish with fresh chopped parsley if desired. Enjoy!

This Instant Pot dirty rice is our version of a popular Creole dish with ground beef, bacon, onions, peppers and celery and a tasty mix of Cajun spices. It's a one-pot, family-friendly dish that can be served a with a side salad, coleslaw or steamed greens. We used a 6-quart Instant Pot for this recipe.

Worcestershire sauce

Turn the Instant Pot and press the Saute function key. Once hot, add the oil, onions, celery, peppers and bacon and cook for 2 minutes, stirring a couple of times.

Add garlic and beef and cook for 2 more minutes, breaking the meat apart with a spatula until its color turned from red/pink to greyish.

Add 1.25 cups of well-rinsed rice, about 2 tablespoons of Cajun spice mix (see notes), a tablespoon of Worcestershire sauce and 350 ml of veggie or chicken stock. Mix through and press Cancel to stop the Saute function.

Pop the lid on top, lock and make sure the top valve is pointing to Sealing. Press Manual/Pressure Cook and set the time to 4 minutes at HIGH pressure. The Instant Pot will take 5-8 minutes to build up the pressure first. Once the timer is finished, allow about 5 minutes for natural pressure release (NPR) but not much longer as the rice will keep cooking.

Use the quick release (point the valve to Venting) to let off the remaining pressure and open the lid. Stir through the rice and serve garnished with chopped scallions and parsley. We topped our rice with some fried shallots as well.

Tastes great! but way too spicy for my family’s and I only did 1 tbsp and 1 tsp. If your family isn’t a fan is spice I recommend cutting back on the Cajun seasoning quite a bit. We also swapped out the ground beef for smoked sausage.

I love this recipe! I’ve made it quite a few times now. We like spice in our house so I added more Cajun spice. The bacon is a great touch!!

Add ground beef, sausage and liver to a large saucepan over medium heat. Season with salt and pepper and cook, crumbling with a wooden spoon, until browned.

Add flour and stir. Add onion, bell pepper, and celery and sauté for 2 minutes. Add garlic, Cajun seasoning, cayenne, oregano, thyme and bay leaves and stir to combine.

Add rice and chicken broth. Bring to a boil, cover, reduce heat to low and simmer for 20 minutes. Remove from heat all allow to rest for 5 minutes. Remove lid, gently fluff rice with a fork, reapply lid and rest for 5 more minutes.

Garnish with green onion and parsley before serving.

Effortless One-Pan Cajun Rice

(370 grams) uncooked long-grain rice

bacon, (chopped)

onion, (diced)

(15 grams-20 grams) garlic, (minced)

(2 grams) fresh thyme

(226.8 grams) chicken liver, (chopped)

green small bell pepper, (chopped)

celery, (chopped (about 1/4 cup))

½ beef stock

(8 grams) Creole seasoning (or more to taste)

green onion scallions, (chopped)

½ - 1 cup (125 milliliters-250 milliliters) chicken or beef broth

(4 grams) parsley, (chopped)

pepper flakes or hot sauce (to taste)

Rinse rice well and transfer to a heavy-bottomed pot with a lid.

Add beef broth and bring to a boil. Reduce heat to medium-low, cover, and let it cook for 18 minutes. Set aside.

In a large, heavy sauté pan, sauté chopped bacon until cooked, about 4-5 minutes. Set aside.

Then add 2 tablespoons of the oil or more oil to the bacon pan.

Throw in the onions, thyme, bay leaf, and garlic, sauté for about 2-3 minutes.

Add the chicken liver and ground beef, Creole seasoning, and cook, stirring, for about 5-7 minutes.

Add bell peppers, celery, salt, and pepper. Cook, stirring, for 5 minutes. Pour in about 1 1/2 cup stock. 

Bring to a boil, then lower the heat and simmer for about 5 minutes. 

Finally, add the rice, mix thoroughly. Cook until the rice is heated through, about 5-7 minutes. If needed, add more stock, to prevent any burns. Do not overcook the rice. Remove from the heat and remove the bay leaf.

Stir in the cooked bacon, and green onions. Garnish with parsley, if desired.

Serve warm with pepper flakes for heat seekers and/or hot sauce. Enjoy!
