This homemade canned tomato soup recipe is for those who love my previous tomato soup recipe but also wanted a recipe they can preserve.

Homemade Canned Tomato Soup Recipe

lbs tomatoes ((Romas work well))

onion

filtered water

tomato paste

Tbsp brown sugar

oregano

basil

bay leaves

garlic

salt

tsp celery seed

½ tsp black pepper

lemon juice

Cook

Quarter tomatoes and dice the onion. Place them in a large soup pot along with ½ cup of water. Cook, uncovered, for 30 min - 1 hour, stirring occasionally, until tomatoes are very soft.

Puree

Remove tomatoes from the heat and let them cool slightly. Working in batches, transfer the warm tomatoes to a food processor, blender, or food mill to puree. If desired, press the tomato puree through a fine-mesh sieve to remove any seeds and skins.

Return

Pour the smooth tomato puree back into the large soup pot. (Using a very wide-bottomed pot will give you more surface area as you reduce tomatoes, making the process take less time.)

Flavor

Add the tomato paste, sugar, herbs, and spices. (Everything EXCEPT the lemon juice or citric acid.)

Reduce

Bring seasoned tomato puree to a simmer. Cook tomato soup until it has reduced to the thickness you desire. (Mine took 1 hour of simmering.)

Clean

While the soup is simmering, wash canning jars and keep them warm. Prepare the water bath canner.

Taste

When the soup has reached the desired thickness, taste it and adjust salt as desired.

Preserve

Add 1 Tbsp of lemon juice to each pint jar or 2 Tbsp lemon juice to each quart jar. (Or ¼ tsp citric acid to each pint and ½ tsp citric acid to each quart.)

Fill

Fill jars with the soup, leaving ½ inch of headspace. (I like to use a canning funnel to reduce spills and messes.)

Lids

Wipe the rims clean of any spilled soup. Then cover the jars with fresh lids and rings.

Process

Process your canned tomato soup in a boiling water bath canner for 40 minutes for pints or quarts. (Adjust the processing time as needed for your altitude.)

Cool

After processing, carefully remove the jars from the water and set them on a cooling rack.

Finish

Once the jars and soup have cooled, remove the rings and check that your lids have sealed.

Store

Finally, store the sealed jars in a cool place for up to a year. If any jars didn’t seal properly, refrigerate them immediately and eat within a week.

Middle-of-Winter Creamy Tomato Soup (Canned Tomatoes)

olive oil

yellow onion, diced

carrots,

garlic,

red pepper flakes

basil leaves

thyme leaves (or generous pinch dried thyme)

tomatoes

vegetable stock

dry, unoaked white wine (see Recipe Notes)

heavy cream, milk,

salt black pepper, to season

Cook the aromatics

Heat the olive oil in a heavy-bottomed pot with a lid (such as a Dutch oven) over medium heat. Once the oil is hot, add the onion and carrots. Season with 1 teaspoon kosher salt and ground black pepper to taste. Cook, stirring occasionally, until the vegetables soften slightly, 5-6 minutes. Stir in the garlic, tomato paste, and crushed red pepper flakes (if using). Cook for another 1-2 minutes, until the tomato paste browns and the garlic becomes fragrant.

Build and simmer

Add the basil, thyme, crushed tomatoes, vegetable broth, and wine to the pot, stirring to combine well. Bring the mixture to a boil, then reduce heat to maintain a gentle simmer. Partially cover the pot and simmer for 15 minutes, until the vegetables are completely tender.

Blend

Carefully transfer the soup to a stand blender. Work in batches, filling the blender no more than ⅔ full. Remove the center cap from the lid and cover the hole with a thick kitchen towel while blending. Once smooth and creamy, return the soup to the pot. Alternatively, you can use an immersion blender to blend the soup directly in the pot.

Finish the creamy tomato soup

Stir in the cream (or milk of choice) and cook over medium-low heat, stirring occasionally, until warmed through. Adjust seasoning to taste.

Serve: 

Ladle the soup into individual bowls and top with cracked black pepper, crushed red pepper flakes, and fresh basil leaves as desired. Serve with a piece of crusty bread or a Gooey Mozzarella Grilled Cheese Sandwich. Enjoy!

I’m a big fan of soup season and of cooking in general. Not to be dramatic, but this might be the best soup I’ve ever made in my life. Wow! So good. I used heavy cream which was phenomenal and gave a bit of a buttery flavor to it. I used fresh basil from my windowsill garden and subbed the garlic cloves with jarred minced garlic (but like, a lot. lol!) 
It is so good, especially with a nice toasty grilled cheese dipped! I will be making this every year!
