This home canned salsa recipe rates an "Awesome" from friends and family alike. Hot or mild - you choose how spicy you like it.

Salsa Recipe for Canning

tomatoes

onions, finely chopped

garlic,

cilantro

¼ cup celery, finely diced

assorted mild peppers, finely chopped

Tablespoon sea salt

oregano leaf

black pepper

cumin (optional)

chili powder (optional)

5% apple cider vinegar

tomato paste (optional)

Clear Gel (optional)

To blanch tomatoes, place them in boiling water for 30 to 60 seconds, until the skins start to split. As soon as the skins start splitting, remove the tomatoes and place them in a cold water/ice water bath. This stops the cooking so they don’t get mushy, and makes them cool enough to handle for peeling. Slip off skins.

If you are working alone, put the tomatoes to drain in a colander while you prepare the rest of the ingredients. In our kitchen, the boys chop tomatoes while I prep the rest of the ingredients.

To finish the tomato prep, dice the tomatoes into small chunks and place in colander to drain off excess juice. We prefer to scrape out most of the seeds and squeeze out excess juice for a thicker salsa.

Finely chop onions, garlic, cilantro (parsley), sweet and hot peppers.

Caution: Use gloves when handling and chopping hot peppers. I leave the hot peppers until last to minimize risk of spreading the hot pepper juice around my work area.

Prepare canning jars, two piece canning lids and water bath canner.

Place all salsa ingredients except vinegar and Clear Gel in a large stockpot. Dissolve Clear Gel (if desired) in vinegar, add vinegar mix to stockpot. Mix salsa thoroughly.

Heat the salsa to a gentle simmer. There is no need to cook it; you just want to get hot enough for canning.

Fill the jars with salsa, allowing 1/4 inch headspace. Remove air bubbles. Wipe rims for any spills. Seat the lids and hand-tighten the rings around them.

Laurie, try a batch substituting half of the oregano with Mexican oregano, it's amazing!

I have got to try this recipe next year. We didn't have a garden this year, but next year I WILL have a garden, even if it's in containers. I love home canned everything. No preservatives and I know what is in there.

Hello! I have several questions, I hope you can help! Can I minimize the amount of onion, and omit the sweet peppers and celery? I want to just add hot peppers (jalapeños). I could substitute lemon juice for the vinegar right? I would love to make this very soon!!

Looks great! I'm researching safe water bath canned salsa, and I was thinking of using green tomatoes and miscellaneous hot peppers as end of the season Salsa. Could I sub green for red safely, and no gels?
Of course, I would not change your great recipe at all because it's tried and tested.

Thank you for the quick reply. The salsa also compacted in the jars which makes it look like there is only 3/4. ok

I have been making (since yesterday) the spaghetti sauce that I found on your site. It smells so good in here. Wish I could bottle that and use it in my diffuser. Getting ready to put it in jars and get them into my brand new pressure canner.

I look forward to learning more and eating homemade this winter.

the easiest way to remove tomato skins freeze tomatoes rinse in warm water and the skins slides right off i only put one tomato at a time in water so they don't get too soft to peel

I did not use vinegar, but ingredients were good. Was it a typo to leave 1/4 inch headspace???? One of my jars literally blew its lid off inside my pressure canner, and now I will have to remove the lids and start all over. All other recipes I have seen say to leave 1/2 inch of space.

How to Can Salsa

Canning salsa is a great way to preserve tomatoes. This is a Mexican-style chunky salsa recipe for canning in a boiling water canner, that can be made mild or hot. Feel free to double the recipe when you have an abundance of tomatoes.

Best Salsa Recipe for Canning

diced, cored peeled tomatoes (about 11 medium)

green bell peppers (about 3)

jalapenos (about 3)

salt (I use kosher or sea salt)

apple cider vinegar

hot pepper sauce (optional

Prepare the water bath canner, jars, and lids...

Prepare the water bath canner, jars, and lids and keep them warm. I run mine through a hot dishwasher rinse as I prepare the salsa. As this is a high-acid recipe that is processed in a water canner, the jars don't need to be completely sterilized as they would with a low acid recipe. The heat from the water canner will destroy any bacteria.

Ensure all jars have a vacuum seal by removing the rings and pressing down on the lids. They should be concave and not move at all. If the center of a lid bounces back there is not a vacuum seal and the jar of salsa will need to be refrigerated immediately.

Made It As Written

I'm not a fan of the vinegar base, but it was tasty. The vinegar was too much for the tomatoes, even with the tomato paste added into it. To me, it needed more salt in the end, and there are some spices missing - maybe some Mexican Oregano would kick it in the right direction. The heat level is extremely mild. There is zero heat - maybe a little tingle, but definitely no heat to it at all, and that would appeal to a lot of people.

Fantastic

A wonderful recipe love how it uses measurements as in cups versus weights. Just a wonderful recipe.

This simple corn salsa recipe is an easy way to preserve corn in a water bath canner, and it has the perfect balance of sweetness from the corn, balanced by heat from the peppers and tart zing lime juice.

Corn Salsa Recipe for Canning

corn kernels (from about 2 ears fresh)

onion (finely chopped)

jalapeno peppers

lime juice (about 3 to 4 limes)

cilantro (chopped)

Prepare all vegetables by washing and chopping. Seed the peppers for a milder salsa, or leave the seeds in for more heat. Peeling and seeding the tomatoes is optional, but recommended. Strip the corn from the cobs. (Frozen corn kernels can also be used, just defrost first.)

Prepare a water bath canner (if canning), along with rings, lids, and jars.

Place all ingredients in a stock pot or dutch oven and bring them to a boil. Simmer gently for 5 minutes, stirring occasionally to ensure all ingredients are evenly distributed and heated.

Ladle into prepared canning jars, leaving 1/2 inch headspace. Seal with 2 part canning lids.

Process in a water bath canner for 15 minutes (adjusting for altitude, see notes). After 15 minutes, turn off the heat but leave the jars in the canner for an additional 5 minutes. (This helps prevent siphoning from thermal shock.)

Remove the jars from the canner with a jar lifter and allow them to cool on a towel on the counter for 12-24 hours. Check seals and store any unsealed jars in the refrigerator for immediate use.

This was an easy and delicious corn salsa recipe. I am not generally a big salsa eater but I did put a hurting on a half pint jar of this with corn chips the day I made it. I used cherry tomatoes and my yield was slightly under 3 pints, by maybe 2 tbsp of tomatoes. I was so bummed! But pivoted the last jar into half a pint and ate the rest. I’ve gifted a jar of this with rave reviews too.

Hey Ashley, would it be possible to add black beans to this recipe if I pressure canned it?

Could I add a little cumin and garlic to this recipe?
