Caramel Cheesecake Cookies Recipe

unsalted butter, softened

brown sugar

sugar

eggs

tsp vanilla extract

all-purpose flour

tsp baking soda

salt

oz cream cheese (softened)

vanilla extract

caramel sauce

sea salt flakes

In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Spoon 24 small dollops onto a parchment-lined tray and freeze for 15–20 minutes.

Make the Filling:

In a large bowl, cream butter, brown sugar, and granulated sugar until fluffy. Beat in eggs and vanilla. Gradually mix in flour, baking soda, and salt.

Make the Dough:

Cover and refrigerate the dough for at least 30–45 minutes to firm up.

Chill the Dough:

Scoop dough, flatten each ball, and place a frozen cream cheese filling in the center. Wrap the dough around and seal well. Place on lined baking sheets.

Assemble the Cookies:

Bake: Preheat oven to 350°F (175°C). Bake for 10–12 minutes or until the edges are golden. Let cool on the tray for 5 minutes before transferring to a wire rack.

Bake:

Drizzle with caramel sauce or press a soft caramel into the center before baking for a gooey surprise. Sprinkle with sea salt if desired.

These Crumbl caramel cheesecake cookies are made with a graham cookie base, a smooth cream cheese frosting, then topped with salted caramel to finish it off.

Crumbl salted caramel cheesecake cookies

Butter (softened, salted or unsalted)

Sugar sugar

Imperial Sugar brown sugar

AP flour

graham crackers (finely crushed, about 7 sheets)

tsp salt

tsp baking powder

graham crackers (finely crushed, about 2 sheets)

butter

Imperial Sugar powdered sugar

caramel sauce (read notes)

sea salt

Preheat the oven to 350F then line a baking sheet with parchement paper and set it aside.

Cream the butter, granulated sugar, and brown sugar until combined. Add in the egg and the vanilla and mix again.

Add in the flour, graham cracker crumbs, salt, baking soda, and baking powder and mix just until the flour mixture disappears.

Using a large cookie scooper, scoop out 8 equally sized cookie dough balls, roll them between the palm of your hands then roll them in the 1/3 cup of the crushed graham crackers.

Place the cookie dough on the prepared baking sheet, gently flatten to about 1/2 inch in thickness and bake in the preheated oven for 10 minutes. Let the cookies cool down on the baking sheet for 10 minutes then transfer to a cooling rack.

In a stand mixer whip the softened cream cheese and butter together until smooth.

Add in the powdered sugar and the vanilla and mix on high speed again until light and flufy. This should take 2-3 minutes.

Fill a piping bag with a large round tip with the cream cheese frosting and frost each cookie. Top the cookies with 1/2-1 tsp of caramel and sprinkle with some extra sea salt and enjoy!

These cookies were amazing! They turned out so pretty and I loved them. Just like Crumbl’s.

I wanted to use 1 cup GF flour and 1/3 cup almond flour to add some fat and overcome some of the natural grittiness that comes with GF flour. Do you think this would work or should I stick with GF recipes. (I use King Arthur’s 1:1 GF flour but I do have xanthan gum should I need it). I never ever bake GF so this is my first attempt at this as one of my fave co workers is GF and never gets to enjoy the treats I bring in. Thank you, love every cookie recipe I’ve tried.

I love this recipe and so does everyone who tries it. But one of my co workers is gf. Can you substitute this recipe for gf 1:1 flour? Thank you, love many of the crumbl recipes you’ve posted.

This recipe is great.  Can I make the cookie dough, roll it in the 1/3 cup of graham crackers, and chill it before I bake them?.

I swapped out the graham crackers for some Biscoff cookies (sugar maniac) and, oh my god, these cookies are the best!

These cookies are incredible!  The cookie, frosting and homemade caramel sauce are all perfect.  I take them to family potlucks and recently took them to my kids’ high school for the teachers - one of the teachers told me as soon as someone ate the first one, they texted the rest and there was a mad dash to the teachers lounge.  Love all your crumbl copycat recipes!!!
