Carrot Cake Smoothie

Cup Carrot

Dates, pitted

Tablespoon Coconut, unsweetened flakes

Cup Greek Yogurt, plain, non-fat

Cups Almond Milk, unsweetened

Teaspoon Cinnamon, ground

Teaspoon Nutmeg, ground

Add ingredients in the order listed and blend until smooth.

frozen medium ripe banana

light coconut milk,

plain greek yogurt

gluten free oats

pecan butter butter

In a large high-powered blender, add in all ingredients and blend on high for 1-2 minutes or until all ingredients are well combined. If necessary, add in more almond milk to thin the smoothie. Makes 1 smoothie for a full meal. If you&#039;d like this as a snack, this recipe will serve 2.

Vegan Carrot Cake Smoothie

almond milk

pineapple chunks (140 g)

frozen banana (120 g)

Add the milk to a high-speed blender then add the rest of the ingredients.

Start blending on low then slowly increase speed and blend until smooth and creamy. If needed, add up to 1/4 cup additional milk to get it to blend and then reach your desired consistency.

This is like supper and dessert in a glass all together and perfect for a hot summer day. Yumm, this is sooo good!  I added a touch of maple syrup and a dollop of vegan whip cream to make it pretty.

Healthy Carrot Cake Smoothie

(95 g) grated carrot; about 2 medium

banana

(60 g) frozen pineapple (or sub another 1/2 banana)

(25 g) walnuts

1/4-1/2” pice of ginger, peeled

1 1/2-2 cups* full-fat oat or coconut milk

Prep: 

Grate the carrot; if you&#8217;d like to save time in the morning, grate the carrot the night before and stick it in the fridge or freezer (for a slightly thicker smoothie) overnight.

Blend: 

add the carrot, banana, pineapple, walnuts or pecans, lemon juice, ginger, cinnamon, vanilla, milk, and optional spices or ice to the blender. Blend on high for at least 45 to 60 seconds, until the smoothie is creamy and all of the fruit has been blended.

Serve: 

pour into a glass or travel mug, then enjoy! This smoothie is best enjoyed immediately.

YUM! Not a fan of carrots or pineapple but this is so yummy! Good switch up from my go to berry/banana/spinach smoothies. I would definitely make this again!

Add banana, carrot, date (optional), cinnamon, vanilla, fresh ginger (or gound ginger), nutmeg, dairy-free milk (starting with the lesser amount), and protein powder (optional) to a high-speed blender and blend until creamy and smooth. Add more dairy-free milk as needed to thin / encourage blending.

Taste and adjust flavor as needed, adding more cinnamon for warmth, ginger for spice / kick, or date for sweetness.

Serve as is or garnish with shredded carrot, shredded coconut, or walnuts or hemp seeds (optional). Best when fresh. Will keep in the freezer up to 1 month (thaw before enjoying).
