Comforting and simple, this carrot potato soup is a must-make for soup season. It&#039;s economical, easy to throw together with a few basic ingredients, freezes perfectly, and it’s so delicious.

Carrot potato soup

butter oil

onion, diced (any colour is fine)

garlic

celery stick, chopped

lb (450 grams) carrots, peeled and diced*

lb (450 grams) potatoes, peeled and diced*

tsp Italian herbs

¼ tsp dried thyme

parsley (optional)

⅛ tsp black pepper,

½ tsp fine salt,

½ cups (600 milliliters) low-sodium vegetable broth

2-3 Tbsp fresh parsley, chopped

Melt the butter in a large pot over medium heat. Add onion, a pinch of salt and pepper, and sauté for 5 minutes, stirring occasionally, until soft and translucent. Add the garlic, and cook for an extra minute until fragrant.

Add carrots, potatoes, celery, herbs, salt and pepper to the pot. Give a good stir and cook for about 2-3 minutes to enhance their flavor.

Stir in the broth, bring to the boil, reduce the heat to a simmer, cover with a lid and cook for 20 minutes. Stir occasionally.

Turn the heat off, and let it cool slightly.

Transfer approximately 1 cup of the soup to a stand blender and whizz just until smooth. Be careful because it&#39;s still hot, and make sure you don&#39;t over blend. This way you get a creamier soup, but you can use a hand blender instead, or you can skip this step if you wish.

Return the blended soup to the soup, toss well to combine and taste to adjust the seasoning to your taste. It depends on the broth you used, you might need to adjust the salt. Stir in the parsley.

Serve with freshly ground black pepper, extra parsley, and crusty bread.

chicken drumsticks (or 1/2 lb pork spare ribs)

potato

chicken bouillon powder

tsp sesame oil

Peel and slice the ends off the onion. Cut into 1-1.5 inch sized pieces.

Chop the corn on the cob into 4 pieces.

Slice the tomato into wedges.

Peel the carrot and slice into 1-1.5 inch sized chunks. I like to slice diagonally, then rotate the carrot halfway and slice diagonally again for pieces with large surface area.

Prepare the potato last, since it will oxidize if exposed to air too long. Peel the potato and slice into 1.5-2 inch sized chunks. Since these will disintegrate the most in the soup, making them larger will help them stay in tact.

Prepare the ingredients

Bring a pot of water to boil. Drop in the chicken drumsticks, and blanch for 1-2 minutes. If using pork ribs, blanch for a few extra minutes to get rid of all the gunk.

Pour out the blanching water, and give the chicken and the pot a quick rinse.

Blanch the chicken drumsticks (or pork ribs)

Add the chicken back into the pot with all the vegetables, and 6 cups of water.

Bring it all to a boil, and skim off any scum on the surface.

Reduce to a very gentle simmer (low to medium-low heat), then cover and let simmer for at least 45 minutes. I like to let it simmer for 90 minutes to extract more flavor from the meat and veggies.

Season with salt, white pepper, chicken bouillon powder, and sesame oil. Garnish with scallions and enjoy!

adore it! i didnt have any corn and was still delicious, I used chicken thighs instead and fried them off in a pan before adding the water and simmering. 

i had mine with a soy marinated egg and vermicelli noodles- with some coriander its my new budget-friendly comfort food :)
