Instant Pot Mashed Cauliflower is a delicious low-calorie and low-carb side that will substitute perfectly wherever you usually serve potatoes. They&#x27;re so good, you might just prefer them over their starchy counterparts!

Instant Pot Mashed Cauliflower

chicken broth (or vegetable broth, no sodium added)

garlic (smashed)

Parmesan cheese (freshly grated)

Add the chicken broth and garlic to your Instant Pot. Place the trivet inside the Instant Pot and the cauliflower on top of the trivet. Place the lid on the instant pot and set the valve to seal.

Cook for 15 minutes on the Steam setting. When the timer goes off, turn the instant pot off. Quick release the pressure from the pot.

Carefully transfer the cauliflower to your food processor, break it up in pieces as necessary. Do not add the liquid. Let the cauliflower rest for 10 minutes so it cools off a bit.

Add the Parmesan cheese, yogurt, salt and pepper to the food processor and pulse until smooth or until you&#x27;ve achieved the desired consistency.

Creamy Mashed Cauliflower

kg / 2lb cauliflower florets ((Note 1))

garlic (, peeled, whole)

tbsp (30 grams) unsalted butter

(25 grams) parmesan cheese (, shredded)

(55 grams) sour cream (, optional)

- 3 tbsp cooking water

Salt and pepper (,

Melted butter, parsley, pepper

Cut the larger florets in half or quarter so they're all about the same size.

Add cauliflower and garlic into a large pot of boiling water and cook for 10 minutes until very soft.

Scoop out a mug of cooking water.

Drain well, then transfer to food processor.

Add remaining ingredients, starting with no water, blitz until smooth. (Use handheld blender stick if you don&#x27;t have food processor) 

Use reserved cooking water to adjust consistency to taste and help puree smooth.

Adjust salt and pepper to taste

Transfer to serving bowl, drizzle with melted butter and garnish with parsley if desired.

Serve as a side with anything that you'd usually serve with mashed potato!

Cauliflower Mash Keto Recipe - Creamy &amp; Buttery - Very EASY!

Cauliflower (approx. 1.4lb)

Bring a large pot of water to the boil.

Cut the cauliflower into evenly sized florets.

Gently add the cauliflower to the boiling water and cook for 5-8 minutes, until the cauliflower is tender.

Drain the cauliflower really well and return it to the warm pot.

Add the butter, salt and pepper.

Blend the cauliflower with a stick blender until there are no lumps.

Allow the mash to sit and rest for 3 minutes and then blend a second time. This rest and blend step makes the cauliflower extra smooth and creamy.

Serve and enjoy.

Take snowy white cauliflower puree, top it with crisp beans, then bathe the lot in blissful brown butter sauce.

Opt in for this low-carb but full flavour mash, made with cauliflower, herbs and lots of garlic right in the slow cooker or instant pot for dinner time success.

Slow Cooker (or Instant Pot) Garlicky Herbed Cauliflower Mash

garlic (peeled)

herbs

vegetable broth

Salt (to taste)

Peel the leaves from the cauliflower and cut into medium florets.

Place the florets into the slow cooker with the whole garlic cloves, vegetable broth, and enough water to just cover the cauliflower.

Cook on high for 3 hours, or low for 6 hours.

Once finished, drain really well so that the cauliflower is almost dry. Add in the parmesan and butter and mash/blend to desired consistency (see notes below on different methods of mashing). Season to taste and add in the fresh herbs.

Place the cauliflower mash back into the slow cooker, and set to ‘keep warm’ until ready to serve.

Cooking In the Slow Cooker

Set the instant pot to sauté, once hot add in some olive oil and sauté the garlic for about a minute. Turn off sauté mode.

Add in the vegetable broth and stir to combine.

Add in a steaming basket and pop the cauliflower florets into the basket, spacing them out as much as possible.

Set the pot to high pressure and cook for 3 minutes. Once cooking is complete, quick release and remove the lid from the pot. Allow the cauliflower to sit for a moment for the excess liquid to drain off.

Add the cooked cauliflower and the drained garlic to a pot or a food processor (see notes below for mashing options).

Add in the butter and parmesan cheese and either mash or blend until the desired consistency is reached.

Add in the fresh herbs and salt and pepper to taste, stir and serve.

Cooking In The Instant Pot

With fewer carbs and a lower calorie content than mashed potatoes, this creamy 3-ingredient Mashed Cauliflower is the keto side dish of your dreams! It's super easy to make with only butter and fresh garlic.

3 Ingredient Mashed Cauliflower

Cut cauliflower into florets. Place florets and whole garlic cloves in a medium saucepan and add about 1&#8243; of water until the florets are halfway covered. Season with salt. Cover.

Heat to medium-high heat and steam cauliflower for 10-15 minutes, or until fork-tender.

Drain liquid and let cauliflower rest in a colander for 5 minutes.

In the meantime, use the same pan you just cooked cauliflower in and add butter. Melt over medium-low heat.

Next, add cauliflower to a blender or food processor. Pulse until smooth or at your desired consistency. Then pour back into the pan with butter. Stir to incorporate the butter. Season with salt and pepper to taste and serve.

Creamy Garlic Mashed Cauliflower

Bring a large cooking pot of salted water to boil. Add the cauliflower florets and turn the heat down to medium. Cook covered for 15 minutes until cauliflower is soft and tender. When the cauliflower is ready, remove from heat and drain.

While the cauliflower is cooking, melt butter in a frying pan over medium heat. Sauté the garlic for about 2 minutes until fragrant and soft. Remove from heat and set aside.

In a food processor, add the cooked cauliflower, sautéed garlic with the butter it was cooked in, milk, Parmesan cheese, salt and pepper. Puree on high until smooth, about 1 minute.

Serve hot and sprinkle some fresh herbs (such as parsley, chives or rosemary) and freshly cracked black pepper on top.

I love this recipe. I cook my cauliflower in the microwave for better control and it keeps more of the vitamins plus the more stem you can cut off of the flower the drier it is that's why I don't buy the rice, a cheese grater makes the best rice.

Outstanding ... great substitute for mashed potatoes.  We served it with grilled skirt steak, chimichurri sauce and grilled tomatoes.  5 STAR!!!

Creamy Garlic Mashed CAULIFLOWER Recipe

This cheesy cauliflower mash is a flavourful side dish, and a lower carb option than regular mash. Serves 3-4 people. Vegetarian, gluten free and low histamine recipe.

Cheesy cauliflower mash

tbsp extra virgin olive oil (divided)

onion

garlic (finely

tbsp cream cheese

black pepper (optional)

tbsp parsley

Bring a large pan of water to a boil and add the cauliflower florets. Bring back to the boil, then reduce the heat to a light simmer. Cook for 10-12 minutes or until the florets are fork tender. Place a colander over a bowl, and add the cauliflower to drain excess liquid.

Fry the onion and garlic in a little olive oil until softened, about 5 minutes.

Add the cauliflower to a food processor and blend until smooth. You may need to scrape the sides down a few times. Then add the onion and garlic, and blend for another 10 seconds or so. Next add the milk, cream cheese, half the parsley, salt and pepper (if using). Blend again.

Spoon the cauliflower mash into your serving bowl, and drizzle with olive oil. Sprinkle the remaining parsley and grind of pepper, if using.

This is the BEST mashed cauliflower recipe! So creamy and delicious!

Mashed Cauliflower

avocado oil

Add the oil to a deep 12 inch skillet and heat over medium heat. Add the garlic and cook 1 minute.

Add the cauliflower rice and stir to combine.

Add the chicken broth and bring to a boil. Reduce to a simmer and cover the pot. Let cook for 10 minutes.

Remove the lid and stir. Continue cooking until nearly all of the liquid has evaporated, about 10 more minutes, stirring as needed.

Use an immersion blender to puree the cauliflower. Alternately, transfer the mixture to a blender or use a potato masher. Using a potato masher will result in a less smooth texture. 

Add the butter, salt, and pepper and stir to melt the butter. Serve hot.

I usually steam my cauliflower, pour the water off, then add the cauliflower back to hot pan.  I use an immersion blender too, adding in minced garlic or garlic powder, salt, pepper, and sometimes I throw in some parm. cheese.  Never thought about cooking the cauliflower in chicken broth-thanks for the recipe!

Garlic mashed cauliflower is a favorite in our house! It's simple to make and I think that my method is the absolute best for creating creamy, flavorful cauliflower mashed 'potatoes.' Low carb, healthy, and a hit with my kids too!

These creamy Cauliflower Mashed Potatoes are super fluffy and tasty - make them as a lighter low carb alternative to the traditional recipe!

Cauliflower Mashed Potatoes

Parmesan cheese

butter (plus more for serving)

cream cheese

garlic powder

chives (chopped for serving, optional)

Steam the cauliflower until fork tender, about 10-12 minutes. Allow the cauliflower to cool enough to handle and then use a paper towel to dab it dry as much as possible.

Place the warm cauliflower in a large bowl along with the parmesan cheese, butter, cream cheese, garlic powder and salt. Use an immersion blender to blend until smooth and creamy, about 30-60 seconds. You can also mash them with a fork for a more chunky consistency.

Serve warm with fresh chives, and melted butter, if desired.

Delicious! Didn’t think I’d like it, but I loved it.

First time I made these they were good…Followed the recipe verbatim. Second time, I don’t know what I did different, but they were off the charts YUMMY!!!  When I try a new recipe I don’t print it off (old school…over 55 here…lol) until I’ve tried it and like it.  This one is getting printed!!!

Tried this mashed cauliflower recipe for the first time this evening.  It was a hit!  I didn’t even tell my husband that it was cauliflower until after his first few bites.  He could have sworn it was mashed potatoes!  We’ll definitely make this again!

Spicy Shrimp with Cauliflower Mash and Garlic Kale

broth

shredded cheese, like sharp cheddar or havarti

bacon fat (or olive oil)

garlic salt, chili powder, cayenne, and/or black pepper

Cauliflower Mash

Heat the olive oil in a large soup pot. Add the cauliflower and garlic. Saute for a minute or two, until the garlic is fragrant. Add the milk and 2 cups broth. Simmer for 10 minutes or until soft. Add the white beans and mash roughly with the back of a large wooden spoon. It will be soupy &#8211; that&#8217;s okay. Stir in the cornmeal and things will start to thicken a bit. Adjust the consistency by adding in the last cup of broth as needed. Stir in the cheese and season to taste.

Kale

Heat the bacon fat in a nonstick skillet over medium low heat. Add the greens and garlic and saute until softened. For the kalettes, I added a little water at the end to sort of steam them to finish them off. Remove kale and wipe out pan with a paper towel.

Shrimp

In the same skillet, add the oil over medium heat. Pat the shrimp dry. Add to the pan and sprinkle with seasonings to taste. Cook for just a few minutes and then add a quick splash of water or broth to the pan (about 2 tablespoons) to pull the browned bits and spices into something of a saucy-coating for the shrimp. It&#8217;s delicious.

Serve the shrimp and kale over a big pile of cauliflower mash! SO yummy.

I love the kalettes. I didn't know they existed but now I have a mission to find them PRONTO.
