Simple Celery Soup

olive oil,

onion, diced

garlic cloves, rough chopped

broth

water

bay leaf (optional, remove before blending)

salt

pepper

dill (small stems ok)

parsley (small stems ok)

Heat the oil in a big pot over medium high heat,  and add the onion, stirring occasionally, letting the onions get golden, about 5 minutes.

While the onions are cooking, rough chop the garlic, celery and potatoes.  When the onions are golden add the garlic and stir 1-2 minutes, until fragrant. Add the celery, potatoes, broth, water, bay leaf, salt, pepper, and cayenne. The liquid should just cover the veggies. Cover, bring to a rolling boil, turn heat down and simmer gently until potatoes are tender, about 10 minutes.

Turn heat off, remove bay leaf and add the fresh herbs and just wilt them (don&#8217;t cook herbs or you lose the vibrant color!)

Using an immersion blender blend until very silky smooth &#8211; OR if using a regular blender, let cool before blending in smaller batches. ( If blending warm soup, fill blender no more than halfway full, cover tightly with a lid and kitchen towel, holding it down firmly, when you start the motor (on the lowest setting, working up gradually) to prevent a blender &#8220;explosion&#8221;).

Blend well, a full minute, until herbs are fully blended, creating a vibrant colored soup. For extra &#8220;green&#8221; color, add a handful of raw spinach if you like, or more fresh parsley. Place it back in the same pot over low heat. Stir in your choice of sour cream, or any of the other options.

***Gently heat, careful to not over simmer, or you may lose the lovely vibrant color.

To make the crispy celery leaves, heat a generous amount of olive oil in a small skillet over medium heat. Wait until the oil is hot. Fry a &#8220;tester&#8221; celery leaf for 10-20 seconds on each side. Set on a paper towel. If it is crisp, continue on. Adding a few at a time, not overly crowding.  If not crisp, fry them a little longer. You want about 3-5 leaves per serving bowl. In the same oil, you could fry the nigella seeds until you just begin to hear popping. Turn heat off.  Arrange the crispy celery leaves in a crescent shape. Spoon a little of the nigella seeds along with a little oil in the same shape. Sprinkle with hemp seeds if you like.

I'm not a huge fan of celery, but loved this soup!  Nice and light.  I did add about 1/2 t cayenne, which gave it a little kick.  Also added 1/2 c greek yogurt.  Will be making this again!

This was easy and delicious! I made a double batch and enjoyed it as an entree w warm crusty bread. Left out the cream and didn’t miss it one bit. And I love cream!

Add the parsley to the pot (if using)  then blend the soup either with an immersion blender or in small batches in your blender. Season to to taste with salt and pepper. Serve with a dollop of sour cream and some fresh dill over top.

Creamy Celery Soup

Place butter, onion and celery in a large pot. Cook over medium heat until tender without browning, about 5-7 minutes.

Add potatoes to pot with broth. Cover and simmer until potatoes are tender, about 20 minutes.

Using a hand blender, blend soup until very smooth. Add cream, lemon juice, and seasoning to taste. Simmer 2-3 minutes.

Optional: For a smoother soup, strain through cheesecloth to remove any stringy celery bits if desired.

Stir in herbs and garnish with a drizzle of cream if desired.

Good basic recipe. Added a couple carrots. Found the soup was quite bland. Added some additional ingredients. 3 cloves of garlic, 2 bay leaves while simmering, spices to taste, cumin, dill weed, thyme, ginger, 2 tsp. Organic sugar. 
This is a soup you can modify and make it your own.

Yum! This has quickly become one of my favorite soups. I add in bay leaves to add more flavor and I make my own dough dumplings to toss in. The family loves it!

I didn't have broth so used water and added onion powder and cloves. I also didn't have heavy cream so used yogurt (next time I'll blend with this though because the yogurt clumped). Even still, it came out really great. Thank you for this!

Absolutely delicious!  My husband brought home lots of celery and wanted me to make cream of celery soup.  I thought that this recipe looked both simple and delicious and I was right!  I put croutons on mine and he had crackers with his.  Smooth and yummy!

I came across a beautiful stalk of celery so i knew i had to make something special. And this recipe hit it on the mark!! I did add a few carrots and when the veggies were soft , used a hand potatoe masher. We loved it!!

This was delicious--I get lovely fresh celery from my CSA and like to make it the star. I happened to have a bunch of leftover whey from making ricotta, so I used that in place of the broth (which meant I didn't need the lemon later, because there's vinegar in the whey). Also I did a fussy thing because I never remember which potatoes might get gluey when blendered, and anyway I only have the potatoes I have, so I boiled the potato separately, put it through a ricer into a bowl, then separately threw the celery mixture in my vitamix and pressed it through a strainer into the riced potatoes bowl. Company-worthy texture and taste!

I made this soup today even though it's hot outside! It made for a great lunch. I added garlic per someone's suggestion. I chopped the onions, celery, and garlic in a small chopper after cooking, and also cut the potatoes into small pieces.
