These easy bites are perfect for literally any occasion. We love their little pretzel handles, but feel free to leave them out! ﻿ If preparing them the night before, refrigerate until 1 hour before serving, then remove from fridge and let come to room temperature. 

Cheese Ball Bites

bacon

(8-oz.) blocks cream cheese, softened

c. shredded cheddar

garlic powder

paprika

Kosher salt

black pepper

pecans

pretzels sticks

I have made these twice. Everyone loved them. Make sure to add the pretzels just before serving. Otherwise they get soggy   I used 12oz cream cheese

I have made this in a large cheeseball version but with 2 packages of cream cheese,  allot more garlic (fresh), and half a package of ranch dip mix mixed in. Sooooo good and never any leftovers. Depending on how many people are going to be at your event I would recommend doubling the recipes because it goes like wildfire.

Mine turned out exactly like the picture.  They were just awful.  The entire platter of them - minus some random bites - went into the garbage at end of night.  Pretty disappointing.

Tasty but the recipe leaves 1/2 of an 8oz block of cream cheese unused. Use two 8 oz blocks and l increase the shredded cheddar to 2 cups (white sharp preferred as the paprika adds enough color). I also mixed in finely chopped green onion and dried cranberries into the cheese mix before rolling into balls to add extra flavor to the cheese. Chopped dried cranberries are too gooey to add to the rolling mixture. Even before the increase in cheese, the recipe makes way more that 18 balls. Unless you are serving a football team, roll them into 1” size balls, plenty for 3-4 crackers each.  Enjoy!

Mini Cheese Ball Bites are the perfect party appetizer that's easier to eat and more practical then a large cheese ball!&nbsp;

Mini Cheese Ball Bites

Tablespoons salted butter (, room temperature)

cream cheese (, room temperature)

lemon juice

Worcestershire sauce

hot sauce

cheddar cheese

cranberries

crushed nuts ((almonds, pecans

onion

pretzel sticks

In a medium bowl add the butter, cream cheese, lemon juice, Worcestershire sauce, hot sauce, and ground pepper. Beat with an electric mixer until well combined and smooth. Stir in cheddar cheese.

Use a spoon to divide the mixture into 12-15 tablespoon-size portions. Dip your clean hands in a little bit of water and smooth each portion into a small ball. Refrigerate for at least 30 minutes (or as long as you want to in advance). Before serving, roll the balls in cranberries, nuts, parsley or green onion. Place a pretzel stick in each. Serve immediately.

cream cheese (softened)

white sharp cheddar cheese (freshly shredded)

tbsp salted sweet cream butter (softened)

horseradish sauce

tsp worcestershire sauce

green onion (finely chopped)

cranberries (chopped)

½ cup sliced almonds (chopped)

pecans (finely chopped)

bacon (cooked, finely chopped)

Using a stand mixer, or a medium size mixing bowl and a handheld mixer on medium-high, beat the cream cheese and butter for 1 minute.

Add the cheddar cheese, horseradish sauce and the worcestershire sauce. Continue mixing on medium speed until well combined.

Tightly cover the bowl and chill in the refrigerator for 1 hour.

Line a baking sheet with parchment paper. Set it aside.

Using a 1 tablespoon cookie scoop, scoop out the cheese mixture. Roll it into a ball and set it on the prepared baking sheet.

Once all of the cheese mixture has been scooped and balled, roll the cheese balls in the different toppings until the cheese balls are completely coated. Return the coated cheese balls to the baking sheet.

Just before serving, stick the pretzel sticks into the center of the cheese ball.

Mini Cheese Balls are studded with dried cranberries and blue cheese, rolled in toasted pecans, and skewered with pretzel sticks for a fun and easy party appetizer!

Mini Cheese Balls

cream cheese (at room temperature)

(about 3 ounces) blue cheese crumbles

cranberries (finely chopped)

pecan halves

dried cranberry

pretzel stick

In a medium bowl, beat together cream cheese, blue cheese, and dried cranberries until smooth. Dampen hands to prevent sticking and form cream cheese mixture into approximately 24 tablespoon-sized balls. Cover and refrigerate for at least two hours or until firm.

In the meantime, toast the pecans by spreading out on a sheet pan and baking in a preheated 350°F oven until lightly toasted and fragrant, for 7 to 10 minutes. Allow pecans to cool and finely chop them.

Roll the chilled cheese balls in the chopped pecans, pressing in the nuts so that they adhere. Keep the cheese balls refrigerated until ready to serve. Just before serving, skewer each cheese ball with a pretzel stick.

The perfect littles bites for any party and always the first to go! YUM!
