Cheese Enchilada Recipe

Add oil to pot and heat on Medium. Pour in flour and whisk together and cook for 1-2 minutes.

Add chili powder, garlic powder, cumin, salt and oregano and mix until clumpy. Pour in chicken broth, whisking the entire time and until there are no more clumps. Heat for 15 minutes or until thickened.

After you have made your sauce, you will want to dip your corn tortillas in the sauce until they are soft and immediately put it into a greased 11x7 pan.

From there you will add cheese (I use the Mexican Blended Cheese), roll it up and push it to the end of the pan.

Continue doing this with your tortillas until your pan is full. From there you will pour the excess sauce over your tortillas. Sprinkle the top with more cheese. (You can also prepare this in advance and refrigerate until ready to cook).

Bake at 350 for 20-25 minutes.

Cheese Enchiladas

These Cheese Enchiladas {Enchiladas de Queso} are filled with a mixture of silky queso fresco and Sun-Maid Chili Spiced Golden Raisins, coated in a robust homemade enchilada sauce, and topped with more bubbly cheese. Vegetarian Mexican food at its tastiest!

Cheese Enchiladas w/ Sun-Maid Chili Spiced Golden Raisins

(about 1 1/2 cups) cherry tomatoes

white onion, sliced

garlic,

sunflower oil

kosher salt, divided

ancho chiles, stemmed, seeded, and rinsed

apple cider vinegar

(about 8 ounces) crumbled queso fresco

neutral-flavored oil like, sunflower, avocado

12-18 corn tortillas

(about 3 ounces) shredded aged white cheddar cheese

Roast the vegetables. 

Heat oven to 400°F. Combine cherry tomatoes, onion slices, and garlic on a baking sheet. Toss with the 2 tablespoons of sunflower oil, or other neutral-flavored oil  and the 1/2 teaspoon of kosher salt until evenly coated. Spread into an even layer and roast until soft and caramelized, about 30 minutes.

Soak the chiles. 

While the vegetables are roasting, bring a medium saucepan of water to a boil (at least 4 cups). Once it comes to a boil, remove it from the heat and add the dried ancho chiles—make sure you&#8217;ve already removed their stems and seeds. Submerge under the water and soak until soft, at least 15 minutes.

Blend all together. 

Transfer the roasted vegetables to a blender. Remove the soaked chiles with kitchen tongs and add them to the blender —save the soaking liquid. Add 3 cups of the soaking liquid, the apple cider vinegar, dried oregano, and the remaining 1 teaspoon of kosher salt. Blend on high until smooth. *See note about blending hot foods. Taste and add more salt if needed.

For the sauce: 

Heat oven. 

Heat your oven to 350°F and arrange the oven rack to the top third of your oven.

Mix filling. 

Combine crumbled queso fresco and Sun-Maid Chili Spiced Golden Raisins in a medium bowl.

Prep baking dish

 Spread 1 cup of enchilada sauce over the bottom of a 9&#215;13-inch baking dish. Pour the remaining enchilada sauce in a shallow pie plate or pan.

Fry tortillas. 

Heat the 1 cup of oil in a medium frying pan over medium-high heat. The oil is ready when bubbles quickly surround the tortilla when you dip an edge in the oil. If this doesn&#8217;t happen, it&#8217;s not hot enough. Give it another minute and try again.

When oil is hot enough add a tortilla and let fry until it is warm and flexible, about 15 seconds per side. Remove tortilla from the hot oil with kitchen tongs and let oil drip back into the pan. Lower the heat if the oil starts to get too hot or smoke.

Dip tortilla in sauce. 

Coat both sides of the fried tortilla in the sauce and place on a plate.

Fill and roll. 

Place 2 tablespoons of the filling on one edge of the tortilla and roll up like a cigar. Place seam side down in the prepared baking dish. Repeat with remaining tortillas and filling.

Cover with sauce and cheese. 

Pour any sauce that is left over in the pie plate over the top of the enchiladas then cover with the shredded cheddar cheese.

Cover with foil and bake

Grease one side of foil with baking spray or oil and place, greased-side-down over the enchiladas. Bake for 20 minutes, then remove and continue baking until the cheese is golden, melted, and bubbly, about another 5-10 minutes.

Serve. 

Serve with pickled red onions, avocado, and minced cilantro.

Preheat the oven to 350°F and spread ½ cup of the enchilada sauce on the bottom of a 9x13-inch baking dish.

If your tortillas are too stiff to roll without cracking, wrap them in a damp towel and warm them for a few seconds in the microwave.

In a small bowl, mix together ¾ cup of the cheddar cheese and ¾ cup of the Jack cheese.

Fill a tortilla with some of the cheese blend and some of the Oaxaca cheese, black beans, and spinach. Roll the tortilla closed and place it seam side down in the prepared baking dish. Repeat with the remaining tortillas. Pour the remaining 1 cup sauce on top of the enchiladas, leaving the edges of the tortillas bare, if desired. Top with the remaining ½ cup cheddar cheese and ½ cup Jack cheese.

Bake, uncovered, for 20 minutes, or until the cheese is melted and the edges of the tortillas are crisp. Remove from the oven and let cool slightly, then top with jalapeño slices, cilantro, avocado, and squeezes of lime and serve.

Preheat the oven to 375°F and have ready a greased 9x13&quot; baking dish.  Combine both the Monterey Jack and Cheddar cheese in a mixing bowl and set aside.

Add the butter to a large sauté pan over medium heat. As soon as the butter has melted, add sprinkle in the flour and whisk to combine. Add the beef broth in one big splash at a time, whisking well after each addition. Add the chili powder, cumin, salt, pepper, and paprika and whisk to combine.

Allow the mixture to come to a simmer, and reduce the heat as needed to maintain it. Simmer for about 5-7 minutes, stirring occasionally, until slightly thickened. Remove from the heat, ladle a scant cup of sauce across the bottom of the casserole dish, and set the remaining sauce aside.

Working in batches of 4, wrap the corn tortillas in a damp paper towel and place them on a microwave-safe plate. Microwave for about 30 to 45 seconds, or until very pliable and soft.

As the corn tortillas come out of the microwave, stuff them with about 2 tablespoons of cheese, roll tightly, and place seam-side down in the casserole dish in two rows of six. Pour the remaining sauce over the enchiladas and top with the remaining cheese.

Cover with aluminum foil and bake for 20 minutes. Uncover and bake for an additional 5 minutes. Allow to cool for about 10 minutes, then serve and enjoy!

Heat the oil or butter in a medium size skillet over medium heat.

Add in the flour and stir to mix. Will be a thick mixture. Allow this to cook for just 1-2 minutes.

Add in the spices. Stir to form a thick paste.

Stir in the broth and tomato paste. Stir until smooth. Bring the mixture to a simmer then reduce the heat to low. Stir occasionally. Cook about 5 minutes until sauce is slightly thickened.

Preheat oven to 350℉.

Heat the oil in a large skillet over medium heat. Add the tortillas one at a time carefully to the oil to cook. Cook for about 30 seconds on each side, just to soften the tortillas, don’t cook until crisp. Then remove from the oil and place on a plate, cover with a paper towel or a clean towel to retain the heat.

Pour a small amount of the enchilada sauce into a casserole dish, spread around so the bottom of the dish is covered in sauce.

One by one dip each tortilla into the enchilada sauce, or brush the enchilada sauce onto each tortilla, then sprinkle a small handful of monterey jack cheese onto a tortilla, sprinkle with diced onion if desired, roll it up and place in casserole dish with the seam side down. Continue until the casserole dish is full.

Pour the remaining sauce over the top of the enchiladas.

Bake in the oven at 350℉ degrees for about 10 minutes or until the cheese is completely melted. Sprinkle with additional cheese and bake for an additional 5 minutes.

Serve enchiladas topped with shredded lettuce, diced tomato, cilantro, and a drizzle of sour cream.
