This delicious Halloumi Pasta is mixed with roasted tomatoes for a fresh and light pasta dish that still tastes super comforting.

Halloumi Pasta

250 g cherry/grape tomatoes

olive oil

140 g penne pasta

g halloumi (cubed)

tbsp cream cheese

lemon (juice only)

g basil (finely chopped)

Sea salt and black pepper

Put the tomatoes in a roasting tin with 1 tbsp of olive oil and season. Put in a preheated oven at 180C for 25 minutes, until the tomatoes start to blister.

Add the pasta to a pan of boiling water and simmer for 12 minutes.

Heat a frying pan and add the halloumi and dry fry for around 4 minutes, stirring.

Drain the pasta and put it back in the pan. Stir in the cream cheese, lemon juice, fresh basil and salt pepper.

Add the cooked tomatoes and halloumi to the pan and stir, then serve.

Just finished making this for dinner. Husband said it needed less chicken and more pasta. I think it would taste better as a cold salad for all the flavors to really marinate. I’d make it again🙌🏼

1-lb. dry penne pasta

Prepare the Instant Pot penne pasta by adding...

Prepare the Instant Pot penne pasta by adding 1-lb. of dry penne pasta and 2 teaspoons of kosher salt to the insert pot. Cover with 4 cups water and pressure cook on high pressure for 5 minutes. This ridiculously easy garlicky cheese pasta is the perfect quick and delicious weeknight meal and perfect for meatless Mondays.

Easy garlic cheese pasta

butter

garlic

flour

milk

cream (alternatively use all milk)

cheese

parsley (chopped)

salt & pepper

pasta (cooked (reserve 1 cup of the cooking water))

To make the sauce, melt the butter in a large, deep frying pan.

Add the garlic and fry until fragrant then add the flour. Whisk in the milk until a smooth sauce forms then add the cream (if using). Turn down the heat and allow to simmer for 5 minutes.

Turn the heat off then add the cheese, parsley, lemon and season to taste.

Add the cooked pasta and a little of the cooking water, stirring to coat the pasta. Add more pasta water if necessary.

Serve immediately.

I was looking for a pasta option to serve with steak and I didn't want to make my macaroni and cheese it is a bit too much work for a weeknight. I found this recipe online and used a bag of pre-shredded Italian mix of cheese and additional parmesan. Followed the recipe and it was delicious, with the cheeses I used tasted like an Alfredo sauce. A great quick option for a weeknight.

Ziti or penne pasta (1 pound).

Olive oil (1 tablespoon).

Italian sausage beef

Onion, finely chopped (1 small).

Garlic, minced (3 cloves).

Marinara sauce (2 24-ounce jars).

Cream cheese, softened (8 ounces).

Ricotta cheese, drained (15 ounces).

Sour cream (1/2 cup).

Mozzarella cheese, shredded (3 cups divided).

Parmesan cheese, grated (1 cup).

Prepare

Preheat oven to 375°F. Grease 9x13 baking dish. Cook pasta 2 minutes less than al dente.

Make Meat Sauce

Cook sausage and onion until meat is browned. Add garlic, then marinara. Simmer 10 minutes.

Make Cheese Mixture

Beat cream cheese, then blend in eggs, ricotta, sour cream, half the mozzarella, Parmesan, salt and pepper.

Combine

Mix 1 cup sauce into cheese mixture. Stir in pasta. Transfer to baking dish, top with remaining sauce and mozzarella.

Bake

Cover with greased foil, bake 20 minutes. Uncover, bake 20 more minutes until bubbly. Rest 10 minutes before serving.

Casa Lawrence and a Recipe for Spaghetti Cacio e Pepe (Spaghetti with Pecorino Cheese and Black Pepper)

Tbsp extra virgin olive oil

½ cups to 2 cups pecorino cheese (grated)

sea salt

Mix the cheese and ground pepper together and set aside. Loreto didn’t put a lot of pepper, maybe 1 ½ tsp as he said those who like more can add it to their plates afterwards.

Cook the pasta in boiling, salted water (use less water than usual, as one of the important parts of this dish is the starch, which is needed for the sauce to form correctly) until al dente.

Put the extra virgin olive oil and a small amount of the pasta water into a non-stick skillet, without turning on the burner. Add the grated cheese and pepper, and begin stirring the pasta, off the heat. Loreto says it’s very important not to use heat when stirring in the cheese and pepper or else you will end up with clumps of cheese on the pasta.

Continue to add water as necessary until a sauce begins to form on the pasta. Loreto says that sometimes the simplest dishes are the most difficult, and if this is not done correctly (for example, stirring in the cheese and pepper over heat), the sauce won’t turn out as it should. Serve immediately.
