Homemade Hamburger Helper Recipe

beef

onion

tomato paste

garlic powder

chili powder

elbow macaroni

beef broth

cheddar cheese

Salt & pepper (to taste)

Add the beef and onions to a soup pot. Cook over medium-high heat until the beef has browned (about 7-10 minutes), breaking the meat up with your spoon as you go along. If there's a lot of excess fat, spoon most of it out.

Stir in the tomato paste, garlic powder, and chili powder.

Add in the beef broth and increase the heat to high. Once it starts boiling, add in the macaroni.

Reduce the heat so it's not furiously boiling (a rapid simmer is good). I ended up cooking mine over medium heat. Let it cook uncovered until the pasta is tender and most of the liquid has been absorbed (about 13-15 minutes). I stir it every couple of minutes.

While it's cooking, grate the cheese (this saves prep time at the start of the recipe).

Take the pot off the heat and stir in the cheese. Season with salt & pepper as needed. I let it sit for a couple minutes prior to serving (soaks up the sauce and flavors more), but you can serve it right away.

Taking your favorite old school comfort food from bad to healthy. This vegan hamburger helper is made from all whole foods but you wouldn't know it!

Vegan Hamburger Helper Cheeseburger Macaroni

macaroni pasta (, gluten free

Ultimate Cheese Sauce (, adjust this amount to make it as cheesy you prefer it)

chickpeas

¼ cup sweet or yellow onion (, finely chopped)

broth oil

veggie broth (, low sodium if needed)

tomatoes

paprika

oregano

sea salt

Chop soaked chickpeas in a food processor until you get a nice crumble.

Saute onion with broth or oil until it gets translucent. Add the rest of the meaty crumble ingredients and mix well.

Cook over low heat for about 15-20 minutes or until the liquid has evaporated and the beans are cooked, stirring often. Watch closely because the beans can stick, especially if not using oil. If they begin to stick, lower heat and continue to mix.

Once done, add cheese sauce and mix well. You can add less or more cheese sauce to make it as cheesy as you prefer. I added 1 1/2 cups

Meanwhile, cook your favorite pasta according to package directions. Drain and rinse, then add to the hamburger cheese mix. Stir to incorporate, plate and serve fresh!

I’ve been using this recipe for years. Both of my children (9 and 19) begin to practically drool when I tell them I’m going to make this. The new Pavlov’s response!

Question – the nutrition facts listed, this is per serving?

I really enjoyed this recipe! I'll definitely make it again.

This was a hit! I didn’t have tomato paste in my pantry so I used 8oz of tomato sauce. I am saving this recipe!

Delicious recipe! I’d like to bring it to someone. May I make it the day before, place it in a casserole dish and they reheat it in the oven?

Turned out just great, thank you for sharing this great recipe, cheers, Mary

Homemade Hamburger Helper Cheeseburger Macaroni

This easy Homemade Cheeseburger Macaroni is a from-scratch Hamburger Helper that comes together in 45 minutes with ground beef, elbow macaroni, and a silky three-cheese sauce. It's a rich, hearty, crowd-pleasing family dinner that's just as good the next day. You may know it as Cheeseburger Macaroni, Hamburger Helper, or hamburger mac and cheese... whatever you call it, this homemade version is over-the-top delicious!

Homemade Cheeseburger Macaroni (Better Than Hamburger Helper!)

This Cheeseburger Macaroni is the ultimate comfort food dish! It's made with ground chuck, tender pasta, shredded American and cheddar cheese, and classic burger toppings. It's like classic Hamburger Helper but with that made-from-scratch flavor. Ready in under an hour, this one-pot dish is a weeknight hero that tastes just like a cheeseburger!

Easy Cheeseburger Macaroni Without the Box

salt (divided)

baking soda

vegetable oil

elbow pasta

American Cheese (shredded)

cheddar cheese (shredded)

onion (diced, plus extra for topping)

dill pickles (chopped)

yellow mustard

Worcestershire sauce

Water

Add the hamburger to a medium bowl and add 1/2 teaspoon salt, pepper, baking soda and a tablespoon of water. Mix with your hands until combined and let sit for 15 minutes

In a large oven proof skillet with a lid, heat oil over medium high heat. When hot, add hamburger, breaking it apart. Cook until it is browned, about 6 minutes. Drain grease if needed.

To the skillet, add milk, and 1 ½ cups of water and uncooked pasta. Bring it to a simmer. Reduce heat to low and cover. Cook until pasta is al dente, about 5 minutes.

Add 1 ½ cups of American cheese, 1 ½ cups of cheddar cheese along with onions, pickles, ketchup, mustard, worcestershire and ½ teaspoon salt. Cook until the cheese has melted, about 2 minutes. Season to taste. Remove from heat and sprinkle the remaining cheese on top.

Place the oven rack 6 inches from the broiler and turn on the broiler function of your oven. Place the skillet under the broiler until the cheese starts to brown, about 1-2 minutes. Remove and let cool for about 5 minutes before serving. Sprinkle additional chopped onions on top.

Very good! I used ground turkey because a family member has alpha gal. It took about 10 minutes for my macaroni to reach al dente. I didn’t have American cheese, so used Velveeta instead. Didn’t add the 8 oz of shredded cheddar because it was already very cheesy. Thanks for a delicious and easy recipe! Looking forward to trying more.
