Added crushed up bacon to mine.

Came out amazing.  The only 2 things I did different was just before serving I did a light coat of browned butter.  I didn’t do mozzarella cheese, rather shredded Parmesan.

May  I ask whether I need to peel the potatoes?

Made these last night.  Had my husband cook them in the Camp Chef smoker and that just added an extra level of flavor.  We did have to hold the slots open to get the cheese between since they did not fan out on their own

I made it with bacon in the slits of the potatoes for a family dinner and they loved it 
if it’s for the kids, try cutting the potatoes into chunks for easier handling plus u you won’t get a half eaten potato

do you know if the temperature is in C or F?

Great side dish, I recommend making sure that the potatoes separate so you can get the cheese down in between the potatoes. First time I didn't, they were still awesome, second time I made them they were better, I used little golden potatoes. Really a great dish

If You've Never Made These Hasselback Garlic Butter Potatoes, You're Seriously Missing Out

Loaded hasselback potatoes are brushed with garlic butter, stuffed with cheese, and topped with sll the fixings!

Loaded Cheesy Hasselback Potatoes

potatoes

½ cup (1 stick) unsalted butter

garlic

paprika (sweet, hot, or smoked, your choice)

parsley

salt and black pepper

cheddar, gruyere or other hard melting cheese

bacon

Sour cream

chives

preheat the oven and prepare the baking pan

Preheat the oven to 425°F. Line a rimmed baking sheet or a 9x13-inch pan with parchment paper or aluminum foil.

make the seasoned butter

In a small saucepan or skillet melt the butter with the garlic over medium heat, stirring until the garlic is golden but not browned, about 1 minute. Remove from the heat, and stir in the paprika, parsley, and salt and pepper.

slice the potatoes partway through

Place two chopsticks, or the handles of wooden mixing spoons alongside the long sides of each potato, one by one, and use a large sharp knife to slice the potatoes crosswise into 1/4-inch slices, stopping once the knife reaches the wooden rods.

spread the butter iun between the potato slices

Place the sliced potatoes on the prepared baking sheet or pan and use a brush to spread the butter mixture in between all of the slices (careful not to split the potatoes through the bottom). There should be only about 1 tablespoon of the butter mixture left.

bake the potatoes

Bake for about 1 hour, until the potatoes are tender and nicely browned along the edges of the slices. Remove the potatoes from the oven, but keep the oven on. Slide one slice of the cheese into the space between every two slices of potato. Repeat for all of the potatoes. Brush the top of the potatoes with the remaining garlic butter. Bake for about 5 more minutes until the cheese is just starting to become melty.

serve hot with the toppings

Remove the hasselback potatoes from the oven and serve hot with the bacon, sour cream and chives.

These Cheesy Hasselback Potatoes are simple to make and an absolutely fun way to serve baked potatoes!

Cheesy Hasselback Potatoes

russet potatoes (all roughly the same size)

olive oil

unsalted butter (melted)

tsp fine sea salt

tsp black pepper

garlic powder

tbsp Parmesan cheese (freshly finely shredded)

oz block of sharp cheddar (thinly sliced)

Pre-heat the oven to 425 degrees F.

Slice the potatoes by placing them (one at a time) in between 2 wooden spoons of kitchen utensils (see video for reference). This will allow you to more accurately slice the potatoes without slicing too far down to the bottom. Make very thin slices into the potato going all the way across. You want the slices to be roughly 1/4 inch thick each. Having a very sharp knife will make this easier.

Place the potatoes, cut side up, on a rimmed baking sheet. Drizzle with olive oil and sprinkle with a little salt. Bake for 50 minutes.

Meanwhile, in a small bowl, mix together the melted butter, salt, pepper, and garlic powder.

After 50 minutes, remove the potatoes from the oven and evenly distribute the slices of cheddar cheese into the cuts of the potatoes. I added a slice of cheese in roughly every 3rd-4th cut. Brush the tops of the potatoes with the butter mixture. Sprinkle with the parmesan cheese.
