Cheesy Scalloped Potatoes are an easy delicious side dish for all your dinner and holiday plans.  The recipe includes helpful hints and cheese substitutions.

Cheesy Scalloped Potatoes

lbs Russet Potatoes peeled and sliced in 1/8 inch rounds

lbs Yukon Gold Potatoes peeled and sliced in 1/8 inch rounds

onion

butter

garlic

all purpose flour

onion powder

smoked paprika

parsley

sea salt

black pepper

chicken broth

2% milk

sharp cheddar (reserve 1/2 cup for top)

freshly grated white cheddar (reserve 1/4 cup for top)

Preheat oven to 400 degrees.  Spray 9&#215;13 inch casserole with olive oil or nonstick cooking spray.

In large skillet over medium low melt butter. Add minced garlic and saute for 1 minute;  stirring constantly. Slowly whisk in flour; cook for 3 to 4 minutes whisking constantly.  Whisk in onion powder, paprika, dried parsley, salt and freshly ground black pepper.  Slowly whisk in chicken broth and milk; alternating between the two.  Whisk until smooth; simmer for 5 minutes. Turn heat to low and slowly whisk in 1/2 cups sharp cheddar and 3/4 cup white cheddar.  Simmer while you layer the potatoes.

Layer 1/2 of the potatoes and 1/2 of the onions in the casserole dish.  Pour 1/2 of the cheese sauce over the potatoes.  Layer the rest of the potatoes and onions and and pour the rest of the cheese sauce over. Top with the remaining reserved cheese. Cover with foil and bake for 30 minutes.  Uncover and bake for another 30 minutes or until it is nicely browned on the top and bubbly.

Cheesy Potato Casserole with Bacon, a perfect blend of ingredients for the ultimate comfort food. Creamy, dreamy and easy to make. Enjoy!

Potato Casserole

potatoes (cubed in 1/2 inch pieces)

bacon (sliced)

milk

heavy cream

cream cheese

salt & pepper (to taste)

nutmeg

white cheddar cheese (divided {such as Kerry Gold Dubliner})

Place the diced potato into a small pot. Pour in enough cold water to cover potatoes. Cover with lid and bring to boil. Reduce to simmer for 5 minutes or until they barely are fork-tender. Drain and set aside. Wipeout pot with a paper towel and set aside.

While potatoes simmer, render out bacon slices and brown. Remove to a paper towel and pour off excess grease. Saute onions in 1 tablespoon butter in the same pan until tender, 5-7 minutes. Remove from heat.

Place small pot you cooked potatoes in over medium heat. Melt in 2 tablespoons butter. Sprinkle in flour and whisk to create a paste. Cook 1 minute. Whisk in milk. Increase heat to medium-high and continue whisking until sauce thickens. Reduce heat and stir in cream, cream cheese, salt, pepper, nutmeg, and 1/2 cup grated cheese. Stir until cheeses melt and sauce is smooth.

Pour cooked potatoes, bacon, onions and sauce into a large bowl. Stir to coat. Pour entire contents of bowl into greased baking dish. Top with remaining 1/2 cup of cheese. Bake at 375 degrees for 20-30 minutes covered with foil. Place under broiler to brown the top if desired. Serve hot.

Small Curd 4% Cottage Cheese

Preheat oven to 350°F. Coat a 9&#215;13- inch baking dish with nonstick spray. Set aside.

Heat butter in a skillet over medium heat. Add the diced onions into the melted butter and season with 1/2 teaspoon kosher salt. Cook onions until they are soft and caramelized, stirring frequently. Remove from the heat. Set aside.

Bring a large pot of water to a boil and cook the lasagna noodles according to package directions. Drain.

While the noodles are cooking combine the cottage cheese, mashed potatoes, egg, pepper, onion powder, 1 cup of grated cheese, remaining 1 teaspoon kosher salt, and HALF of the onions. Stir to combine.

Place 3 noodles into the bottom of the prepared dish. Top with half of the cottage cheese mixture and spread to cover the noodles. Lay 3 more noodles on top of the filling and top that with the remaining filling mixture. Lay the last 3 noodles on top, sprinkle with the reserved onions and remaining 1/2 cup of cheese.

Cover pan with foil and bake for 30 minutes. Remove the foil and broil for 3 minutes.

Allow the casserole to cool for 15-20 minutes. Sprinkle with parsley and serve.

Cheesy Potatoes (also called Funeral Potatoes) are the ultimate comfort food! This easy hash brown casserole is loaded with cheesy potatoes, onion, garlic, sour cream and has a crunchy cornflake topping. The perfect side dish!

Cheesy Potatoes (Funeral Potatoes)

hash brown potatoes (or shredded hash brown potatoes, defrosted)

unsalted butter (melted)

salt

cheddar cheese (grated)

Monterey Jack cheese (grated)

unsalted butter

¼ all purpose flour

chicken broth (or stock)

Preheat oven.

Preheat the oven to 350F. Lightly grease or butter a 9x13 baking dish and set aside.

Combine shredded cheeses in a small bowl and toss to combine. Set aside.

Prepare potatoes.

Place defrosted potatoes in a very large bowl and toss with 4 tablespoons of melted butter and salt and pepper.

Stir in sour cream and 2 cups of the combined cheese. Set aside.

Make sauce.

Melt 4 tablespoons of butter in a large skillet over medium heat. Add onions and cook until translucent, about 4 to 5 minutes. Add garlic and continue cooking, stirring frequently for 1 minute.

Sprinkle with flour and continue cooking for another minute, stirring to combine.

Slowly whisk in chicken stock until completely combined and smooth. Slowly whisk in milk until smooth and combined. Bring the mixture to a simmer, season with salt and pepper, and continue cooking for three to four minutes until thickened. Remove from heat.

Add cream sauce to potatoes.

Pour cream sauce over the potato mixture and gently fold to combine. Transfer to prepared baking dish. Top with remaining cheese.

Prepare Cream Sauce

Prepare topping.

Combine 4 tablespoons of melted butter and cornflakes in a medium bowl tossing to combine.

Bake.

Spread the topping over the layer of cheese, making sure it&#039;s nice and even. Cover with foil and bake for 20 minutes. Remove foil and bake for another 15 to 20 minutes or until edges are bubbling and cornflakes are golden brown. Let rest for 10 minutes before serving.
