Crisp buttery cookies layered with raspberry jam and dipped in chocolate.  This is an impressive Christmas cookie that will be everyone&#39;s favorite on the tray.

Italian Butter Cookies

unsalted butter (softened)

sugar

vanilla extract

all-purpose flour

salt

raspberry jam

chocolate chips

shortening

Prep.  Prepare 2 baking sheets.  You do not need parchment or to grease the baking sheets, but parchment makes clean-up easier.

Beat wet ingredients and sugar. Cream the butter and sugar until light and fluffy.  This will take at least 3 minutes using a mixer on medium speed. Add the egg yolk and vanilla.  Beat 1 minute more.

Add dry ingredients. Combine the salt and flour in a separate mixing bowl.  Add to the butter mixture 1 cup at a time, mixing on low until just combined. The dough should be soft and smooth.

Add milk.  Add 1 tablespoon of milk and mix on low.  The dough should be very soft and pipeable.  If it still seems stiff, add another teaspoon of milk.  Keep adding, up to an additional tablespoon if necessary.

Pipe and chill.  Place the cookie dough into a piping bag fitted with the star tip.  Pipe 2-inch strips on the baking sheet.  You should be able to fit 12-15 cookies per baking sheet. Cover and chill for 1 hour.  Towards the end of the chilling time, preheat the oven to 350.

Bake and cool.  Bake the cookies for 15-18 minutes, until the bottoms and edges and golden brown.  Let them cool completely on a wire rack before filling and decorating.

Fill and dip.  Spread half of the cookies with a thin layer of raspberry jam and place a cook on top to form a sandwich.  Melt the chocolate chips in the microwave with the shortening and stir until smooth.  Dip the cookies into the chocolate and add sprinkles while the chocolate is still wet.   Let them cool until the chocolate hardens.

These cookies are absolutely amazing!  I made them for the first time last week.  The flavoring of the cookie is better than any of the cookies I've bought in the Italian bakery.  These have been my favorite cookies since I was a little girl, I never thought it would be this easy to make myself.  My husband would never pick this cookie if we bought them from the bakery.  He tried these, and couldn't stop eating them.  All my friends loved them!  Can't wait to make them again.  The only thing I would do this time is use a bigger star tip.  My tip was very narrow, so the cookies were.  I bought the new one and am ready to bake again.  Thank you so much for this amazing cookie recipe, I definitely will be adding it to my cookie favorites.

Cherry Amaretto Checkerboard Cookies

unsalted butter, softened (113 grams)

sugar (100 grams)

egg yolk (about 15 grams)

almond extract

Tablespoon amaretto

all-purpose flour (180 grams)

baking powder

Tablespoons freeze-dried cherries,

red food coloring (optional)

Cream together the butter and sugar until light and fluffy. This will take 1-2 minutes.

Beat in the egg yolk, almond extract, and amaretto.

Slowly fold in the remaining ingredients except for the cherry powder.*If you live in a less humid climate than I do, your dough may be more dry. If your dough is too crumbly, simply at 1-2 Tablespoons of water or milk until it is soft and pliable.

Divide the dough into two equal pieces and set one aside.

To one half of the dough mix in the cherry powder and red food coloring.

Form the dough into two equal size square logs, 2x2 inches tall. Make sure that your logs are as close in size as you can make them.

Chill the dough over night.

Cut each log into nine equal pieces. Start by cutting each log in thirds and then cut each third into thirds. Keep the pieces in order.

Now you will create two new logs from your original two logs. Lay one strip of cherry, one strip of amaretto, then another strip of cherry. Brush a little water between the pieces and gently press them together. Top the three strips with alternating colors, and repeat for the last layer, brushing water between the strips before gently pressing them together.

Repeat this with the alternating colors for the second log.

Return the dough to the refrigerator for 30 minutes and preheat an oven to 350°F.

Slice the cookies into 1/4 inch pieces.

Bake for 8-10 minutes. Enjoy!

Preheat oven to 350 degrees F.

Cream butter and powder sugar together.

Add egg and vanilla and slowly incorporate flour to mixture and mix well.

Fold into the dough the quartered cherries and nuts.

Continue folding the cherries in the dough so that the cherries are distributed evenly throughout.

Place a piece of parchment paper or waxed paper on the counter and place approximately 1/3rd of the dough on the paper.

Using your hands roll the dough into a log shape about 2 inches round.

Once you have your shape, then roll the log in the paper and secure the ends of the parchment or waxed paper and place in the refrigerator.

Continue 2 more times until all of the dough has been rolled and placed in the refrigerator.

Allow the dough to stay in the refrigerator for at least 3 hours.

Take out of the refrigerator and unroll the dough from the paper.

Cut the dough with a knife into 1/4 inch slices and place on a cookie sheet lined with parchment paper.

Bake for approximately 13-15 minutes or until the cookie is light golden in color. This recipe will yield approximately 4 dozen cookies.

I just made the cherry cookies yesterday.
I use red and green candied cherries in mine. They are so pretty.  I’m so glad that I have this recipe from my mom. It’s one of our family favorites. I thank her every time I make them.

I have cookie memories of my grandmother too. She wasn't a softie but I could always trust that she told the truth and loved me. These cookies are just gorgeous, and I'd say she definitely left you with some loving memories too.

Grandma's Ginger Christmas Cookies

Crisco shortening

molasses

water

baking soda

ginger

Preheat oven to 375 degrees

In a bowl cream together sugar and Crisco shortening

In a separate bowl mix together molasses and water, stirring to combine

Add molasses and water mixture to the creamed sugar and crisco

Next add the baking soda, salt and ginger to the mixture

Slowly add the flour into the mixture until the dough formed and all of the flour has been incorporated

Roll the dough on a floured surface until a 1/4 inch thickness has been achieved

Cut the dough with the open end of a glass or a cookie cutter of your choice

Place on a lightly greased cookie sheet. Instead of greasing the cookie sheet you may use a piece of parchment paper

Sprinkle with granulated sugar or with colored sugar

Bake for approximately 6-9 minutes
