Low FODMAP Chex Mix Snack

unsalted butter

Garlic-Infused Oil,

Worcestershire sauce

cayenne, (optional)

(90 g) Rice Chex

gluten-free pretzels

Position rack in middle of oven. Preheat oven to 250°F/121°C. Have a rimmed half-sheet pan handy.

Melt the butter and oil together in a large microwave safe bowl. Whisk in Worcestershire sauce, salt and cayenne, if using. Fold in cereal, nuts and pretzels until evenly coated. It will be a light coating. Scrape Chex Mix out onto rimmed sheet pan.

Bake for about 30 to 45 minutes or until lightly golden, turning once during baking. Cool pan on rack. Chex Mix is ready to eat or can be stored in an airtight container for up to 1 week at cool room temperature.

Muddy Buddies aka Puppy Chow

(55 g) semisweet chocolate, (finely chopped, preferably

(67 g) creamy peanut butter

(60 ml) maple syrup

(120 g) Rice Chex

(23 g) confectioners’ sugar

natural cocoa powder

Line a rimmed half-sheet pan with aluminum foil and lightly coat with nonstick spray; set aside.

Melt the chocolate in a large microwave safe bowl in the microwave. Whisk in peanut butter, maple syrup and salt until all combined. Fold in the cereal until evenly coated, then scrape out onto prepared pan in an even layer. Allow to sit at cool room temperature for several minutes just until the chocolate coating feels tacky to the touch. Place mixture in large zip-top bag, add confectioners’ sugar and cocoa to bag and shake, shake, shake! Pour out onto pan to cool completely. Muddy Buddies are ready to eat or pack into airtight container and store at cool room temperature for up to 3 days.
